using good-quality Welsh milk, we're producing Teifi cheese. | 0:36:28 | 0:36:31 | |
Using raw milk, local ingredients and traditional methods, | 0:36:33 | 0:36:36 | |
the farm produces three types of unpasteurised artisanal cheese | 0:36:36 | 0:36:41 | |
strongly influenced by Dutch Gouda. | 0:36:41 | 0:36:44 | |
But cheese isn't the only string in their bow - | 0:36:44 | 0:36:47 | |
two years ago, they diversified into alcohol, specifically gin. | 0:36:47 | 0:36:52 | |

It is, it's the only way, really, to survive in south-west Wales, | 0:36:56 | 0:36:58 | |

The distillery was opened in 2012 and the man in charge of the drinks | 0:37:02 | 0:37:07 | |

I don't remember quite how it works, which probably meant that I tried too much gin afterwards. | 0:37:17 | 0:37:21 | |
But you start off with raw ethanol, isn't it? That's the thing? | 0:37:21 | 0:37:24 | |
Pretty much. First of all, we have to produce a base spirit which is technically ethanol, | 0:37:24 | 0:37:28 | |
