-How are things at home?

-They're well, thank you. It was

-raining heavily when I left.

-You own a butcher's shop.

-You have a big interest

-I bought the champion last year.

-This is the Pairs Championship.

-We can see some fantastic pigs

-They are real Butchers' Pigs.

-They're a small, handy size.

-What kind of weight

-would they be after slaughter?

-I think they'd be around 50kgs.

-They'd be perfect for your shop.

-crossed with Welsh pigs.

-They look like smart pigs.

-I would say they're bacon

-or cutter pigs. They're heavier.

-but they're a wonderful pair.

-for a record 400 each last year.

-Wales is famous for producing lamb

-and beef of the highest standard.

-Meat Promotion Wales launched

-of the pork industry in Wales.

-Welsh lamb and beef are protected...

-..by the European Union's Protected

-Geographical Indication...

-..which means that

-under these rules...

-..some foods and drinks

-are protected by law.

-However, Welsh pork

-does not share the same status.

-Rob Rattray from Aberystwyth...

-..has been appointed as a Pork

-Ambassador by Meat Promotion Wales.

-I've been in the industry

-for 35 years.

-I worked at another butcher's shop

-in Aberystwyth...

-..during my first summer

-out of school.

-I was supposed to go back to school

-but I enjoyed learning butchery...

-..so I stayed in the trade

-and I've been doing it ever since.

-Some Welsh butchers

-are ambassadors for porc.wales.

-We do our best to promote Welsh pork

-and to keep the Welsh breed going.

-I buy my lamb,

-beef and pigs locally.

-I get the pigs

-from Brynley in Talsarn.

-He takes them to the abattoir

-in Tregaron and then back to us.

-We've had pigs here since 1959

-when my father started to keep them.

-We kept eighty sows at one time.

-they were all pure-bred Welsh pigs.

-We have Lucky Girl,

-Daffodil, Model and Nina...

-..those four strains.

-We stick with them

-because we're pleased with them.

-A good pig to eat will be of good

-length for good eyes on the chops.

-Also it should have good hams

-for ham.

-Then you can have some bacon

-and some sausage meat too.

-You can eat a pig

-four times a day...

-..for breakfast, lunch,

-tea and supper.

-It's important that Welsh folk use

-their local butchers to buy pork.

-They can tell you its provenance

-and that it's a Welsh Pig breed.

-It's a very special pig

-with lovely meat.

-It has a nice cover

-of white meat and fat.

-It has been used for centuries...

-..to feed households

-with home-grown bacon.

-It's crucial that we keep

-the Welsh Pig breed going.

-The Winter Fair is important

-for Welsh farmers ...

-..so they can show off

-their best stock.

-A great shop window for them.

-Welsh Butchers can also buy

-the best stock for our customers...

-..so they can have

-a happy Christmas.

-Last year, a Sport Horse

-took the Supreme Championship...

-..with the Part-Bred horse

-taking the reserve prize.

-There was pressure on the Welsh

-horses to come out on top this year.

-I'm lucky enough to have

-excellent guests with me.

-Geraint Davies of Rhyd-ddu Stud...

-..and Wyn Morris who has

-been competing this year.

-The four Welsh Sections

-are in the Horse Ring now.

-and some of the reserves too.

-The judge has been the president

-of the Welsh Cob Society.

-Mrs Redvers is a familiar name

-in these circles.

-She doesn't like the horses

-and ponies to be too fat.

-That'll be one of her tests here.

-South Caernarfon Creameries.

-It's a dairy co-operative.

-It was established in 1938.

-We have 124 farmers

-providing milk for us.

-Tell us about these cheeses.

-There is a mature cheese,

-matured for 12 months.

-Also a classical cheese with leeks.

-And a special cheese

-which is matured for 19 months.

-It is put underground at

-Llechwedd Caverns for three months.

-The dampness and temperature

-give real depth to the cheese.

-It has a strong aftertaste.

-I can't explain why that is.

-The unique dampness makes it so.

-Len from Cardigan Bay Fish.

-I understand this is your debut

-at the Winter Fair.

-Yes, our first time.

-A bit of a shock as it's very busy.

-We have a haddock chowder

-made by Mandy.

-That's selling well. It's her secret

-It's made from honey.

-It's proved so popular,

-we've made a Celebration Mead.

-It's a sparkling mead.

-Now for a bit of sloe gin.

-There's a bit more.

-This is strong, you say.

-Yes, 25 per cent.

-Sloe gin is our most popular

-product.

-Ooh, that's nice.

-You can tell it's strong.

-It can put hairs on your chest.

-It's lovely.

-Christmas has arrived

-Rob Rattray, the butcher from

-Aberystwyth, was this year's judge.

-Derfel, it's been quite a Fair.

-Over 800 lambs

-competed on Monday morning.

-This is the best shop window

-for the best produce we could have.

-Rob Rattray of Aberystwyth is well

-known for breeding Beltex sheep.

-What are the Beltex sheep like here?

-It's very hard to tell from here

-without getting a good feel.

-The standard is incredible.

-He's pulled some out now.

-They're closer together.

-It seems to be the Butcher's Weight

-section and the Continental breeds.

-That's common.

-I think I'll go for
