-the 2016 Winter Fair is open.

-Enjoy yourselves at the show.

-fierce competition with the pigs.

-We take a look at the

-art of leading the animal.

-The young butcher competition.

-A big day for the butcher,

-And the best horses, cattle

-and sheep in the country.

-First thing this morning,

-the cattle ring was very lively.

-The heifers filled the ring.

-It doesn't matter

-how good the animal is...

-..there's a skill

-to exhibiting them.

-Ifan, they tell me that when

-it comes to heifers and steers...

-..and leading in the ring,

-you're the man.

-I'd like to think

-I know what I'm doing.

-Our family have been exhibiting

-animals for generations.

-It's not something new.

-Who do we have here?

-This is Downtown Funk,

-a Limousin cross steer.

-What do you do

-as the person who leads?

-What do you have to do?

-It's a skill to show off

-an animal in a ring.

-You have to keep the head up

-and the back straight.

-to get them to stand properly.

-We also use them to tickle the

-belly. That keeps them quiet.

-and enjoy himself then.

-Black Cattle as a family for years.

-My dad breeds the Gerddi Herd,

-I breed a herd at Gerddi Bluog...

-..and my husband's family

-owns the Rhydygarnedd herd.

-Let's concentrate on this section.

-I'm pretty sure there's a superb

-class of heifers in front of us.

-Yes, the seven heifers in the ring

-are all worth seeing.

-The first animal we see

-is from Cwmtirmynach, Bala.

-The judge is from Donegal, Ireland.

-The judge is whistling away.

-He seems happy in the job.

-The judge from Donegal

-has made his mind up.

-The crowd are applauding their

-agreement with that decision.

-The first prize

-of this year's fair...

-..has gone to

-Cwmtirmynach, Meirionnydd.

-The British Blue

-are in the ring right now.

-This breed is so numerous the class

-is divided into two sections.

-I'm joined by Richard Tudor

-from Llysun, Llanerfyl.

-The standard in this section

-is incredibly high.

-It's a feast for the eyes

-of any butcher.

-The blue heifer

-is the first one drawn out.

-She's first out!

-She stands very naturally.

-She's a very pretty colour.

-She's very smart.

-She has the X-factor.

-The blue heifer from Abergavenny

-looks to have won it.

-There it is then.

-There are just as many women

-here exhibiting as men.

-Tedwina wins it.

-Here is the Championship for heifers

-sired by a British Blue Bull.

-They are pretty.

-It is a nice animal but

-the black one is a good animal too.

-They are quite young.

-What's the task ahead for them?

-They've been given

-four pieces of meat.

-It's all Welsh meat.

-They've got beef, a part

-of the hind leg, the top rump.

-They've got a lamb shoulder.

-There's pork belly

-and a whole chicken.

-We can see Joseph Gibbs there

-on the far side.

-He's a butcher from Cardiff.

-He's next to Sam Hughes.

-He's 22 years old

-and from Caerphilly.

-The closest to us is Dewi Davies,

-the youngest at 19 years old.

-He's a butcher from Pembrokeshire.

-This is Dewi's second year.

-are on their first year.

-Fair play to the three

-for being successful at this level.

-They've done very well

-to reach this level.

-What will the adjudicators

-be looking for?

-What will give the winning candidate

-If I was adjudicating...

-..I'd be looking at how much

-waste is left over.

-I wouldn't just look

-at what's on display.

-I'd like to see what's left out.

-Because there's no profit

-in what's in the rubbish.

-I kind of fell into it really.

-We're hoping to be showing

-We're hoping to come out on top

-is a special end to the year.

-We're so busy and I love it

-because of the Christmas feel.

-And following the competitions...

-..the highlight for many people

-is the auction.

-The Winter Fair is different to

-auctions you see in a usual market.

-This is more of an event.

-As it's part

-of the Christmas festival...

-..the seasonal feel

-adds to the atmosphere as a whole.

-for us now is McCartneys.

-McCartneys have sold with us now

-for seven years.

-It's quite a thing to take on.

-Registering the animals,

-weighing them...

-..and checking the information

-is correct for Tuesday's auction.

-There's a lot of backstage work

-going on behind the curtains.

-There's a lot of money

-changing hands...

-..over 200,000 in all,

-when you consider the cattle...

-..the lambs, the Butchers' Weight,

-the poultry and the pigs.

-They work very professionally.

-Over the years, high prices

-have been reached at the fair.

-The cattle record was for a bullock

-by the name of Jonesey in 2007.

-He sold for 12,500.

-At 12,500...

-..gone to the gentleman - well done!

-It was a wonderful feeling.

-It was a brilliant atmosphere.

-You don't get

-that sort of atmosphere very often.

-It was one of the best feelings

-I've ever had.

-In the sheep section,

-very good figures have been reached.

-In 2008, a pair of lambs

-went for 3,400 each.

-He is a real master of his art.

-That's why he's moved them around.
