-I'm Joe Roberts, a butcher in Bala.

-I've been butchering here

-all my life.

-My father and his father

-were butchers.

-My son and daughter

-are in the business with me.

-They took the reins some years back.

-I just work in the shop.

-All I do is serve -

-the best part of the job.

-We have good trade in the shop.

-Local people.

-We're very glad of their support

-over the years.

-My son and daughter have built up

-the catering side of the business.

-That's a big part

-of the business now.

-Most of our meat

-comes from local farms around Bala.

-Unfortunately, not enough lambs come

-to Bala so we buy them in Ruthin.

-We buy as many cattle as we can

-locally.

-When that isn't possible,

-we buy the rest in Ruthin.

-I've been invited to judge

-the carcasses at the Winter Fair.

-It's a big honour for me.

-I'm delighted to do it.

-I'll be judging what I like

-as a local butcher.

-When I go to the market,

-I always buy the best.

-I'll be doing the same

-at the Winter Fair.

-I'll pick what I think is the best.

-My wife is coming too. She's going

-to be spending some money.

-It's a fantastic day out.

-There were 156 carcasses...

-Supreme Single Carcass Champion...

-..at the 2016 Winter Fair.

-with this kind of thing every day...

-would be crowned Supreme Champion...

-I take a look at all of them.

-Then I draw up a shortlist of six.

-The hard work then starts...

-to choose the best one...

-Then I choose my top six.

-This is the one I gave first place.

-has everything I'm looking for...

-..in its legs, back and shoulders.

-There's just enough fat.

-It's important to have a little.

-is going back to Carmarthenshire.

-You awarded the prize to a Welshman!

-I'm sure you're proud of that.

-This year, the Fair is paying

-tribute to a very special man...

-..a former Winter Fair Chairman,

-Emyr Lewis, Bacheiddion farm.

-The late Emyr Lewis' contribution

-to the Winter Fair...

-..and to the Royal Welsh

-was priceless.

-I have very fond memories of him.

-The cheeky smile

-and his witty sense of humour.

-He was a very likeable man.

-He was a great huntsman

-and a true country character.

-He was an active supporter

-of his community, his county...

-..and, believe it or not,

-Cardiff City football club.

-As far as the Winter Fair

-is concerned...

-..he was on the committee

-when it started in 1990.

-Ten years ago, he had the honour

-of being Chairman...

-..of the executive committee

-which organizes the Fair.

-He was a kind man

-who always had a smile on his face.

-He was mischievous too.

-He liked pulling your leg.

-It was a huge loss

-to us as a Society...

-..when Emyr left us so suddenly.

-I'm sure

-he's looking down on us today...

-..and saying about the Fair,

-"A job well done."

-During the next two days,

-take a minute to think...

-in his company.

-from near Newcastle Emlyn.

-We come here as a family every year.

-My wife, Brenda, and my youngest son

-My role as a mother is to ensure

-they all have clean clothes.

-White overalls for everyone.

-Also, food for everyone. It's a big

-occasion when we all eat together.

-I bring my kitchen with me!

-I will be stewarding at the Winter

-Fair for the three days.

-We are weighing all the animals

-at the moment.

-There's also paperwork, certificates

-and numbers for the collars.

-We prepared well at home.

-We washed and brushed

-and practised every weekend.

-You expect to see trades people

-and you hope there will be buyers...

-on Tuesday afternoon.

-During the competition tomorrow...

-will bring tears to your eyes.

-As Welsh people,

-we should be very proud.

-We've been doing it for many years.
