-Our first recipe

-is for a chocolate log.

-It looks great.

-Yes, it looks incredible.

-That's a tree.

-It differs from the norm.

-This is a thick Swiss roll!

-It's two Swiss rolls in one.

-Where do we begin?

-We start with the cake itself.

-I've whisked three eggs

-for 20 minutes...

-..with some caster sugar.

-It has thickened.

-It's got to the ribbon stage.

-This is how you add air

-to the mixture...

-..that will help the cake to rise.

-I'm adding 100g of plain flour.

-You don't need self-raising flour...

-..because of all the whisking

-that you did earlier.

-There's also some milk.

-Carefully fold these ingredients

-together.

-You don't want to beat out the air.

-You should use a metal spoon.

-A metal spoon cuts

-through the mixture.

-A wooden or plastic spoon...

-..would beat out the air.

-You need to do a figure of eight

-with the spoon.

-You need to do this very slowly.

-We're almost ready.

-I'd be happy to eat that!

-This can be poured into the pan.

-You can see some flour

-in the mixture.

-I'll mix it again.

-We've got spatulas these days...

-..so it stops people licking

-the bowls!

-There isn't a lot for you, Owain.

-This is slightly larger

-than a typical Swiss roll tin.

-It's been lined with

-greaseproof paper.

-It goes into the oven at 160 degrees

-Celsius or gas mark 4.

-This is a fat-less sponge.

-You need to eat it quickly.

-It bakes in about 12 to 15 minutes.

-It should last for

-about two to three days.

-The filling is made up of unsalted

-butter and icing sugar.

-I've also got some vanilla essence.

-This will form a whipped

-buttercream.

-I don't want it to be too heavy.

-I add less icing sugar than butter.

-Here's some I made earlier.

-It looks just like cream.

-After the cake has been baked...

-..it's removed from the oven...

-..and placed on the damp baking tray

-lined with greaseproof paper.

-It will be rolled up.

-Unroll it when it has cooled.

-I've filled it

-with the buttercream...

-..and can roll it.

-Don't worry if you get any cracks.

-You need to be artistic now...

-..and roll the next piece

-of the sponge.

-It doesn't need to look perfect.

-No tree is perfect.

-This is thick

-because there are two Swiss rolls...

-..wrapped around each other.

-I've got some warm double cream...

-..and add 100g of dark chocolate.

-One of you can stir it.

-The chocolate should melt.

-I've made some ganache ready.

-It needs an hour to set.

-This is used to coat the log.

-The next stage involves more melted

-chocolate.

-Pour it over some greaseproof paper.

-This is dark chocolate.

-Spread it out thinly...

-..in the shape of a rectangle.

-It's quite sticky.

-Spread this out

-over the whole paper.

-This should be left to cool.

-Roll the greaseproof paper

-around the chocolate.

-Here's one I did earlier.

-Unroll it.

-As you unroll it...

-..you can see that

-you've got some strips.

-It means you don't have to make

-individual pearls.

-This adds to the log to make it look

-like a bark.

-This is a technical challenge!

-I wasn't sure

-if it was going to work.

-You need to work quite quickly.

-I've used different types

-of chocolate for this.

-It's great for adults.

-You can also decorate it...

-..with some mushrooms
