received new orders which meant they have to stay at sea. Fortunately, | :02:30. | :02:37. | |
they are going to be the heroes in the Philippines, helping people | :02:38. | :02:43. | |
affected by the typhoon. HMS Illustrious is the pride of the | :02:44. | :02:50. | |
Royal Navy. It may not be what it was built for but she is the perfect | :02:51. | :02:55. | |
offshore platform for delivering aid to remote regions. Welcome to HMS | :02:56. | :03:06. | |
illustrious. I am going to show you how we are delivering humanitarian | :03:07. | :03:14. | |
aid to the Philippines. Follow me. I am currently helping coordinate | :03:15. | :03:19. | |
humanitarian aid going out to the Philippines. I have only been here | :03:20. | :03:24. | |
eight months so it is overwhelming to be given such responsibility but | :03:25. | :03:29. | |
I take pride to be able to do it. In the hangar, it is 500 tonnes of | :03:30. | :03:34. | |
emergency supplies. Everything they could manage to buy in a frantic | :03:35. | :03:41. | |
shopping spree in Singapore. We have got the food prepared ready to go. | :03:42. | :03:44. | |
We have got shelters in these bikes. We have also got ten sardines. -- | :03:45. | :03:52. | |
sardines. We are going to try and focus as | :03:53. | :04:07. | |
much -- on getting as much of the aid as we have onshore. We have been | :04:08. | :04:18. | |
looking to see where it is needed and this morning, some teams went to | :04:19. | :04:22. | |
the ground to stay there. For the next few days we will be taking aid | :04:23. | :04:31. | |
ashore. We have the capability to project to some more isolated and | :04:32. | :04:35. | |
remote islands, to provide much-needed assistance. The | :04:36. | :04:39. | |
assistants can include things such as ASIC clearance, provision of food | :04:40. | :04:43. | |
aid, water aid, but also basic infrastructure repair. The | :04:44. | :04:52. | |
helicopters have been flying sorties. The RAF is also in the | :04:53. | :04:56. | |
region, putting its Hercules transport planes to good use. I am | :04:57. | :05:07. | |
Craig Paterson. In our time, we have seen a lot of progress throughout | :05:08. | :05:11. | |
the region. We have got out a lot of aid rations, water, food, tents, | :05:12. | :05:17. | |
accommodation, as well as moving local people away from areas that | :05:18. | :05:21. | |
have been damaged for they can no longer live. It makes us really | :05:22. | :05:29. | |
proud that we are able to contribute as we are. We have got back from a | :05:30. | :05:35. | |
day flying three sorties, delivering aid to outlying airstrips. We have | :05:36. | :05:41. | |
seen progress. There is more aid getting out on the ground. We can | :05:42. | :05:45. | |
see it stored up at airports, ready to be distributed. It has been a | :05:46. | :05:50. | |
rewarding attachment. Each of the 950 personnel on board had a | :05:51. | :05:53. | |
difficult phone call to make when the ship's orders changed suddenly. | :05:54. | :06:00. | |
Obviously, disappointed to not go home for Christmas but we understand | :06:01. | :06:03. | |
it has to be done and everyone at home is proud of us. | :06:04. | :06:07. | |
A lot of the money given has been raised by the British public. If you | :06:08. | :06:11. | |
are one of those people, send us a picture of what you have done. On | :06:12. | :06:15. | |
Monday we want to show some of those. We will have another report, | :06:16. | :06:19. | |

wrong, you're looking nervous? It is a fantastic operation. ?50 million | :06:31. | :06:34. | |
worth of aid. In the last few weeks, you have got not only the | :06:35. | :06:37. | |
service people but the British charities involved and still, they | :06:38. | :06:43. | |
are finding people in isolated areas who need help. A total of about | :06:44. | :06:50. | |
800,000 people have been helped as a result of the British aid effort. | :06:51. | :06:56. | |
You have insight on what it is like to be on-board illustrious, you | :06:57. | :07:04. | |
spent time with the crew? They are a terrific bunch of people but they | :07:05. | :07:07. | |
know at any moment they may be sent away. They were sent to the | :07:08. | :07:13. | |
Mediterranean when I was with them. Although they are disappointed not | :07:14. | :07:16. | |
to be coming back for Christmas it is what they expected. At any point | :07:17. | :07:20. | |
at short notice, they have to go and be sent anywhere in the world. What | :07:21. | :07:26. | |
is in the aid packages? They have given me so much detail. Ten tonnes | :07:27. | :07:35. | |
of high-energy biscuits. Nearly 20,000 shelters. 6000 jerry cans. | :07:36. | :07:40. | |
All of the medicines and blankets and tools and equipment needed. It | :07:41. | :07:44. | |
is not just immediate aid. They are trying to give people stuff they | :07:45. | :07:48. | |
need to rebuild their lives. The whole thing is a long operation. | :07:49. | :07:54. | |
Although most of the immediate aid is over, the work will go on for | :07:55. | :08:01. | |
years to rebuild. It is not on the news so much any more, but it is | :08:02. | :08:04. | |
obviously still a disaster out there. Explain why things go off the | :08:05. | :08:10. | |

Today, I have come to Jersey to find out about black butter. This | :09:44. | :09:47. | |
particular butter does not conference Jersey cows. Black butter | :09:48. | :09:53. | |
is made with apples. The apple butter tradition goes back to the | :09:54. | :09:57. | |
Middle Ages. Monks in the low countries boiled down their surplus | :09:58. | :10:00. | |
apples into a smooth paste before they went off. That tradition | :10:01. | :10:07. | |
continued in Jersey. One third of Jersey used to be covered in | :10:08. | :10:12. | |
orchards. With the surplus apples they made black butter to preserve | :10:13. | :10:20. | |
the wastage. So, no milk at all? It is called black butter because of | :10:21. | :10:24. | |
the consistency and the way you can spread it, but no milk. How is it | :10:25. | :10:29. | |
made? Jana might we started off in the morning at about 5:30am. -- we | :10:30. | :10:37. | |
start off in the morning. We boil it in a copper pot. We add peas and | :10:38. | :10:48. | |
cord apples. -- peeled apples. Then we start reducing it for hours. It | :10:49. | :10:54. | |
has to be constantly stirred for 30 hours. And guess who has been roped | :10:55. | :11:00. | |
in! A group of local volunteers have been peeling apples all morning. | :11:01. | :11:05. | |
Most of them are here for the atmosphere but the event also raises | :11:06. | :11:08. | |
money for the National trust. Time for me to join the Army of | :11:09. | :11:19. | |
stirrers. So it has to be constant? Yes, it would burn if it was not | :11:20. | :11:26. | |
moving constantly. So, no sneaky breaks? There has to be some adhere | :11:27. | :11:32. | |
all the time. It is a proper work-out. As it gets thicker it will | :11:33. | :11:40. | |
get harder. The heat breaks down the apples and caramelises the sugars, | :11:41. | :11:45. | |
turning them into a thick marsh. Volunteers take turns to spend 20 | :11:46. | :11:49. | |
minutes stirring. It is clear this is a massive community effort with | :11:50. | :11:54. | |
everyone getting involved. Next door, 100 peelers are at work. They | :11:55. | :12:03. | |
are all different shapes and sizes but they are firm. I enjoyed | :12:04. | :12:07. | |
everyone getting together and celebrating. It is a Jersey pastime. | :12:08. | :12:14. | |
It is the same from year to year. It is good fun. It is thirsty work, | :12:15. | :12:19. | |
though, so as night draws in, cider is served and food is brought out. A | :12:20. | :12:27. | |
local band keeps spirits up and into the night. -- deep into the night. | :12:28. | :12:37. | |
The party carries on over the starring part. -- pot. It is five | :12:38. | :12:51. | |
o'clock in the morning. Some of these guys have been tending to the | :12:52. | :12:57. | |
pot for 24 hours. The last of the apples are going in. As the sun | :12:58. | :13:01. | |
comes up there is a final push to get through to midday. As it comes | :13:02. | :13:05. | |
off the heat, spices are added, and it is time to get it into jars as | :13:06. | :13:09. | |
quickly as possible before it thickens up. Put a little bit in and | :13:10. | :13:24. | |
then hang it. It is like a really rich apple sauce but with | :13:25. | :13:29. | |
Christmassy spices. I like it. 386 jars altogether. Just one more than | :13:30. | :13:35. | |
last year. Within 20 minutes of coming off the heat, it is on sale | :13:36. | :13:41. | |
in the local market for ?6 ajar. The proceeds go to the National trust. I | :13:42. | :13:48. | |
saw them making it and thought we have to get some, and it is still | :13:49. | :13:55. | |
warm. Instead of putting butter on pancakes, I put black butter and it | :13:56. | :13:59. | |
is really nice. It is lovely on toast. It is nicer than marmalade. | :14:00. | :14:09. | |
This is it, the fruit of 30 hours of Jersey labour. It is selling fast. I | :14:10. | :14:11. | |
