Now, to make our lemon and lime cheesecake,

we need two of these lovely, yummy, oaty digestive biscuits.

-Have you got your biscuits?

-ALL: Yeah!

Can you make two googly eyes, like this?

Can you make them spin around and go, "Whee!"

-Who's ready to do some crushing?

-ALL: Me!

Pick up your greaseproof paper bag.

Now...we're going to drop our two biscuits into it.

Let's count them, shall we? One.

Two. Give them a shake.

Shake them up. Shake them down. Shake them all around. Ha ha!

Hold them really tight at the top.

OK. Now, put your bowl to the side.

We're going to lay our biscuits down.

We're going to take our rolling pin.

We're all going to count three, two, one.

And start bashing our biscuits.

Three...two...one.

Go!

Bash your biscuits up!

Well done. That's brilliant.

Now, everyone.

Hold up your bags, our biscuits have now been crushed to bits.

Look at mine. Mine's flat!

Then we're going to crumble them into our bowl.

Whee!

Has anyone still got some big chunks? I have.

We can crush them up with the end of our rolling pin.

Any other little chunks.

Can you see your golden melted butter on your table?

-ALL: Yes.

-We're going to pour the melted butter

into our biscuits.

This is going to be like a glue to make the biscuits sticky and yummy.

-I'm gonna mix it!

-I'm gonna mix it.

-Oh! Let's mix it. Are you ready?

-Yes!

OK. Let's go round and round like a roundabout.

-Can everyone go whizz?

-Da-la-da-la-da-la!

Ha ha! You're winning.

-GIGGLING

-It looks like golden sand.

-Well done, everyone! Brilliant.

-It's going goldy colour.

Now we've mixed all our golden sand,

we're going to put it into two little cups.

So, take your cups.

Why don't you make a face on your mat?

I've got two eyes, and I've got a big mouth.

-Two eyes, a nose and a mouth.

Now...we need to get our spoon

and we're going to put our lovely biscuity mixture into the two cups.

That's it, like that.

Try and get the same amount in each one.

Then, we're going to pat our biscuity mixture down

with our fingers. So, pat it down.

That's it. Do one and then the other.

Make sure it's nice and hard.

Lemons grow on trees in hot countries.

A lot of lemon trees together in one place

is called a lemon grove.

When the lemons are ready to be picked,

they change colour from green to yellow.

When this happens, they're picked,

so they can be sent to the shops to be sold.

Here is a lovely juicy lemon.

Some of you have got lemons on your tables.

We're going to roll them around to get the juice squishy inside.

Give them a good roll up and down, side to side, round and round.

You can give them a really good squish as well.

Can you do squishy fingers at home? Like this.

Keep squishing. Give a really good squish.

Some of you have got one of these.

It looks a bit like a lemon, but it's a lime.

But it is from the same family, like the lemon's brother or sister.

We need to roll these too. Roll your limes, everyone.

-Give it a good roll on your mat.

You can catch it like a ball like this.

-Squeeze, squeeze, squash, squeeze.

-Oh!

Now, once you've done that,

and the juices inside are nice and squashy,

we need to cut our lemon and limes in half.

This is what you should get an adult to do.

I've already cut some lemons and limes for you.

-So, do you want one?

-Yes, please.

-I'll give you one of each.

If you smell them, they smell delicious.

Let me smell. Oh!

Now, I want you to show me your squishy hands,

We're going to squish our lemon and lime

into our bowl, ready?

Ooh! Look at those juices.

Now, you need to press really hard, everyone.

Easy.

Don't forget to take those sneaky pips out cos we don't want those.

No, taste disgusting.

Keep squeezing.

OK, now, we need to clean up our messy hands. Let's wipe them.

I've finished now.

Now we'll put icing sugar into our bowl.

Let's give it a good pat so we get it all out.

Patta-patta-patta-patta patta-patta-patta. Ooh, that's nice.

Next we need to add some of this,

it's a special type of cheese called mascarpone cheese.

It's a bit wobbly, like white jelly.

We'll put that into our juicy bowl.

Take the whole bowl and patter it into there.

We're going to give it a really good mix.

Ready? One, two, three. Go!

You can go round and round, up and down.

Try and get all the juices into the cheese.

This is easy.

-Is it easy-peasey, lemon-squeezy?

-Yes.

-Eurgh! I can't mix it!

-That's it! Keep mixing!

It's time to add finishing touches to our lemon and lime cheesecake.

So take your two spoons,

and we'll do the two spoon game.

So pick up a little bit of cheese,

and we're going to put it onto our biscuity base.

And you can do one for each,

and then do another one. Let's pretend the biscuit is treasure

and we've to hide it from pirates. Make sure it's all covered up

with your spoons. That's it, hide it all away.

Quickly, you have to hide it before the pirates come. Quickly!

-Get all of it in!

-When you are happy,

you can cover them up and put them in the fridge. Come on.

Go!
