Let's get started.

The first thing we need to do to make our buns

is weigh some flour.

They weigh as much as the flour we need.

We need to add the flour to the other side

until the two sides balance.

Shall we pretend to be some scales?

And you put the weights on that side.

Woo! And then you put the flour on the other side. Woo!

And then you keep adding more or less

until the two sides weigh the same! Like that!

It's OK because you've all got a very important job.

Charlotte, you're going to take the flour out of this jar

using that big spoon and put it on to the scales.

Everyone else, you're going to tell us

if we need more or less flour. And you can join in at home.

Now we need to add some ingredients to our flour.

The first thing we need to add is some caster sugar

and some lovely mixed spice.

You only need a tiny amount of yeast to make lots and lots of it.

The tiny bit of yeast is put in to a liquid

which contains all the goodness it needs to help it grow.

The liquid is kept warm which makes the yeast feed very quickly

on all the good things inside it.

The yeast continues to eat more and more

and it grows bigger and bigger and bigger!

When it has grown very big, some of the water is removed

to make it in to a thick paste.

And then it is mixed some more.

Finally, it is cut into blocks and packed up, ready for the shops.

It looks like butter cheese.

That was so interesting.

Come on. Let's get back to the cooking.

We're going to use yeast in our fruit and fudge buns.

Now the yeast you just saw, was wet yeast.

We're going to use dried yeast in our recipe,

which has had all the water taken out of it.

I'm going to tell you all a secret. Would you like to hear a secret?

What does it do?

I'll tell you. It makes the fruit and fudge buns...grow

when they go in the oven.

We're going to add one level teaspoon of yeast to our mixture.

Use your finger to tap it down like this.

-Sprinkle it in.

-Yes.

Sprinkle, sprinkle...

And then. Guess what we have to do next?

-ALL: Mix it!

-Mixing it up...

-Now we've got all the dried ingredients mixed up,

we need a wet ingredient that will stick it all together.

Our wet ingredient is some warm milk.

Remember. You need to get a grown-up to help you warm the milk up.

We only need some and not all of our milk. That's really important.

Let's pour a little bit in. Ready...

..and stop.

Give it a mix. The warm milk will wake the yeast up.

Can you pretend to pour some milk too? Like this.

Pour-r-r-r-r-r!

If it's a bit dry just put some more milk in.

Soon, you'll have a dough that we'll turn into the fruit and fudge buns.

Now we have to turn the dough out onto the mat.

-It's not going to get stuck to our fingers?

-Chloe's got monster fingers!

Turn your dough onto the mat and sprinkle some flour

to stop it from sticking.

Now we're going to do some kneading.

Kneading helps the dough rise properly

so that our fruit and fudge buns will be nice and round.

To do kneading, we have to play the butterfly game.

You stretch two big butterfly wings out like that,

fold them into the middle and push down with your knuckles like this.

You can turn it over and do it again.

Pull, fold and push.

Now we need to make it into a ball like this.

Put it in the middle of your mat.

It's easy!

Now we're going to split the big ball into two equal-sized balls.

Then we need to split these two balls into three.

When you've got six lumps, you can put them in your muffin tin.

Now we have to let the magic ingredient, the yeast,

do its work and make the buns grow.

We're going to cover the buns in a tea towel

and leave them somewhere warm for about 45 minutes.

That's it! You've made it!

You put your ingredients together for your fruit and fudge buns

all by yourself.
