Episode 14 Junior Bake Off

Hello and welcome to the second day of the finals.

Our four bakers are being put through their paces today as they

face the toughest challenges James Martin and Mary Berry

can throw at them.

As you know, only one can win.

This is Junior Bake Off.

'From 40 of the country's best young bakers,

'four have made it to the final.'

Congratulations, Emma.

Ruby.

Harry.

Zainab.

'But, to prove they are worthy of the title...'

I'm really happy with how it's going.

..they face a series of tough baking challengers.

Flour, butter, sugar and baking powder.

-ZAINAB:

-That's really good.

'And judges Mary and James...'

-Best of luck.

-Thank you.

'..are turning up the heat.'

They've reached a very high level already,

but it's going to get harder and harder.

'We're looking for somebody who's technically great.'

If you make a mistake from now on, you're not going to win.

'But who has got what it takes...'

It has to be really precise.

'..to become Junior Bake Off champion?'

Last time, our bakers thrived in a professional kitchen...

..where Zainab and Emma's shortbread won them the challenge.

Today is the second day of our gruelling three-day final

and there's added pressure, as they face two challenges -

The Knowledge Test and baking for the UK's biggest dance group,

Diversity.

Look at this!

Let's dig in, boys.

The four bakers who've bagged a place in the finals are...

'Known for her consistency and high standards, she's even

'surprised herself with her determination to get to the finals.'

Yeah.

When Aaron called my name, I felt absolutely amazed that

I got through to the final and I never thought I would do it.

'Praised for her restaurant quality pastries,

'she's been almost flawless in every challenge.'

I would pay for that in a restaurant.

The judges are going to be looking for great flair,

great passion and great flavours

in the Junior Bake Off champion.

I'd like to think I've got all those.

'A maverick in the kitchen, he's focused on flavours

'and created some mouthwatering bakes.'

That is a really, really good cake.

What the other bakers should watch out for is my flavours, cos I've had

really good comments in the other rounds and that's how I've got here.

Known for being a perfectionist,

she's impressed with her decorating skills.

On the whole, really, really good cake.

I think I can win, because of my attention to detail,

but I also think I need to try my hardest,

cos all the finalists are really good.

'The first challenge the bakers face is very different to anything

'they've ever been asked to do before.'

Hello, bakers.

Now, the first challenge of the day is called the Knowledge Test.

One by one, Mary and James are going to ask you a series

of questions and tasks and put your baking talent on the spot.

Good luck.

'They'll be asked to showcase their style

'and skill by piping a butterfly and the words Bake Off.'

The artistry comes in decorating a cake with chocolate

may sound easy, but it's not.

Then they must try

and identify the extra baking powder in Mary's Victoria sponge.

This will be difficult for them,

because they'll be under pressure.

Before finally identifying the spices in the jars

through smell alone.

They'll need to spot cinnamon, cardamom and nutmeg.

We're looking for the very best junior baker

and we're going to get one.

First to face James and Mary is Emma.

She proved she can deliver in a professional kitchen,

but can she pipe under pressure?

-Happy with that?

-Yeah.

The extra baking powder gives Mary's cake a sharp taste,

but will Emma spot it?

I think there's too much butter in it

and it hasn't got enough baking powder in.

Despite mistaking too much baking powder for too little,

she still has one more chance to impress,

if she can identify the spices.

Is it...

..cinnamon?

What about that one?

Is it cloves?

Is that one nutmeg?

-Well done.

-Well done.

-With the spices, two out of three. That was a good effort.

-Absolutely.

It's a shame about the cake.

It's the common mistake, when you start at one side,

you actually run out of space on a cake.

You should count the number of letters

-and do the middle.

-Onto the plate.

But a fantastic butterfly, there.

How did it all go?

I think it went OK,

but I think I did a bit bad on the piping.

Oh, piping.

Is that one of your weaker points, do you reckon, your piping?

Yeah, I think it is, definitely.

'Next up, Zainab.'

Off you go.

-Happy with that?

-Yeah.

Well done.

Will Zainab spot there's too much baking powder in Mary's cake?

When you've mixed the eggs and the sugar, you haven't quite

mixed it enough, so you haven't got that fluffy texture to the cake.

Zainab's missed the baking powder.

But does she know her spices?

Is that...

..cardamom?

OK.

Those are...

My mum always puts them in curry.

I can't remember the name.

That's cinnamon.

Whilst she's named two of the three spices,

she hasn't managed to match the names to the correct jars.

-Thank you very much.

-Thank you.

It's very, very difficult, this.

She got, sadly, them all wrong.

The cake, she hadn't any idea, really, about it, had she?

I think, really, with piping, she showed she's got the skill.

You can see, it's slightly thick,

but it says "Bake Off".

The butterfly is a butterfly.

I thought a really good effort.

I thought that was really difficult,

cos you don't want to criticise Mary's baking.

I think my weakness is the smelling,

but I think I've done all right.

Next is Harry.

-Happy with that?

-Yeah.

-Well done.

-Well done.

Will Harry gain a lead

by tasting the extra baking powder?

I think it's got too much baking powder in it.

Result!

But, can he name all three spices?

That's cinnamon.

Is it cardamom?

Right.

And what about this one?

Ooh, that's nutmeg.

-Harry, thank you very much.

-Thank you.

Three out of three with the spices. Brilliant job.

He should be very proud.

-The cake?

-He came back and said too much baking powder.

The butterfly requires a little bit of work,

but he's got the words absolutely right.

And again, no drips. That's the key to this.

I've never piped a butterfly before.

What did it look like?

It looked a bit like an overweight butterfly,

with really small wings!

'Last to face the judges is Ruby.'

Happy with that? Well done.

Can Ruby catch up with Harry and taste the extra baking powder?

-Too much baking powder.

-Right.

She's got it. But is she as confident with her spices?

Cinnamon?

Nutmeg?

To equal Harry, she needs to get this right.

Cumin?

-Thanks, Ruby. Thank you very much.

-Thank you.

-Well done.

I thought her sense of smell was pretty good. Two out of three.

-She did well.

-And the cake?

You could see, she just clicked in at the end,

which was dead lucky for her.

You can see that she's really confident at decorating her stuff.

-I think she did really well.

-I think really, really good effort.

How nerve-racking was that, being the last one?

It was pretty tense, being the last one,

cos I had to wait for such a long time.

So, Harry impressed with the cake and spices,

while Zainab's piping was almost perfection,

but, it's still all too bake for.

'The tension on day two of the finals is higher than ever,

'as the bakers face another surprise challenge.'

Right, finalists, pay attention.

This is your second challenge of the day.

In teams, you guys are going to be baking

for the UK's most popular dance crew -

Diversity. Yeah?

They're currently rehearsing for their next big tour, right,

and they want you guys to bake a selection of bakes that they

can have when they finish rehearsals. James?

Now, these guys are obviously working really hard,

so nutrition is really important to them.

So think about that in your bakes.

And think about making a bake that's easy to transport.

So make the bakes quite light, cos Mary's going to be

joining them and they're going to be throwing her around.

Now, guys, you're working in teams.

Harry, Zainab, you're together.

The Reds, Ruby and Emma, you're together.

As always, health and safety.

-Have you washed your hands?

-CONTESTANTS:

-Yes.

Well done. It's a hard challenge.

On your marks, get set, bake!

'Each team must choose two recipes from

'a basic selection which they can adapt.'

I think we should make either quiche or cheesy corn muffins.

-EMMA:

-I think we should make

one sweet and one savoury. Definitely.

While they deliberate,

Diversity are in their studio

rehearsing for their Limitless tour.

And, later this afternoon, they're expecting to be fed

and Mary and James are expecting perfection.

With a dance group like Diversity,

they're going to be slightly nervous, I think.

When you're cooking for somebody you recognise,

and then you meet them, as well, the pressure really mounts.

They've got to be consistent, they've got to get their timing right,

they've got to have a wonderful finish.

Their confidence has got to be there.

I think it's quite fussy...

Red team, Ruby and Emma, are quick to put their heads together.

-EMMA:

-Maybe I could do individual,

-little fruit tarts, if that makes sense?

-RUBY:

-Yeah.

-EMMA:

-Are you happy with that?

-RUBY:

-Yeah.

'Emma has chosen to make free-form fruit tarts with

'shortcrust pastry cases filled with summer fruits of her choice,

'while Ruby is taking on a savoury option

'of cheesy corn muffins and chorizo.'

Why would Diversity go, "Boom, I love that"?

What is it that you're giving to them

there that you think's going to set you in front in this challenge?

-RUBY:

-We're putting spicy chorizo in.

-Like it.

And you've gone for the tarts.

-EMMA:

-I've picked it because...

You're thinking there's fruit in there and it's healthy.

-Yeah, it's healthy and it's got fruit in it.

-OK.

A little secret. They actually asked me to dance today.

But I said, I can't, I'm busy cos I've got to present this.

-See you in a bit.

-OK.

'The Green team, Zainab and Harry, are also keen to play

'to their strengths and pack some punch with flavours.'

-HARRY:

-Do you know what chorizo is?

It's like a really spicy sausage that's really nice.

'Like Ruby, Harry's baking savoury cheesy corn muffins,

'but with chorizo and bacon.

'And Zainab is tackling granola fruit muffins topped with

'cream cheese frosting and fondant icing.'

Why have you gone with these?

It's something that Zainab can decorate

-really nicely with some piping.

-Beautiful.

And cheesy corn muffins,

I've done savoury muffins before

and I'm quite confident with these.

Is that a team decision or did anyone persuade the other?

-BOTH:

-A team decision.

-Good luck.

-BOTH:

-I hope you work well as a team.

You look like you're getting on all right, so, well done.

-Thank you.

'Up against the clock, the teams will need to keep the pressure on

'if they're to complete their bakes.'

There's quite a lot of pressure at the moment,

so it's very nerve-racking.

'These Bake Off finalists know their way around a kitchen,

'so, if you fancy baking, ask an adult to help.'

'On the Green team, Harry is taking charge of the savoury snacks.'

I'm a bit nervous, because I've not made this recipe,

but I've made savoury muffins before,

so I'm quite confident about it.

The trick is to get your flavours right.

'Harry has chosen chorizo and bacon to liven up his muffins

'and he knows exactly how they should be added.'

-HARRY:

-Don't mix it too hard, cos you don't want to knock the air out.

'Rival Ruby is also making savoury muffins,

'but she's hoping to make her bakes sing.'

-RUBY:

-I'm going to cut music notes out of chorizo,

because we're doing it for Diversity

and they dance to music.

Now, you're cooking for Diversity.

Explain to me how you feel about baking for them.

They've got a lot of street credibility.

It's pretty cool, baking for Diversity.

They're pretty famous. They're pretty cool.

Back on the Green team, Zainab is tackling the fruit muffins.

I'm doing granola fruit muffins,

because I really think I'll be really good in the decorating

and fruit's really healthy for Diversity.

My extra flavouring is raspberries and, instead of the blueberries,

I'm going to use some banana,

because it's like an oatmeal cereal,

and normally when I have my cereal, I have it with bananas.

So I think it will go really well.

-EMMA:

-I'm just dividing the pastry into equal parts now.

'Emma is the only baker not making muffins.'

I've never worked to this recipe before,

so I really want to make it quite precise.

'And the trickiest element is perfecting the shortcrust pastry.'

Really quite hard to roll out and get it on the baking tray,

cos it's so thin, the pastry.

And I don't want to make it too thin, otherwise,

when I add the fruit, it will just leak out.

I'm trying to rush, but I don't want to rush and get it wrong.

We are going to see Diversity.

You can't go and see them without doing a couple of moves, can you?

Can you do...

-No.

-..anything?

How about this one? You know when you touch and go like that

and then you go...go the other way?

HARRY LAUGHS

Go on, try, go on.

THEY LAUGH

What was that?

-It was more like a jellyfish.

-A jelly...!

OK, bakers, you've got half an hour left to finish these bakes.

Half an hour.

# It's taking me higher

# Higher off the ground... #

-ZAINAB:

-Just let me.

-HARRY:

-No, look. This is how you do it.

-ZAINAB:

-No, no. Don't use your fingers.

Just get a spoon and take it off.

-HARRY:

-It's the way forward.

Look! Clumsy.

-RUBY:

-Emma, I'm just doing a single note like that.

-EMMA:

-Yeah, that's much better. Yeah.

'Determined to create the perfect tart shells,

'Emma is running the risk of falling behind.'

Look at that!

AARON LAUGHS

What are you doing?

-There we go.

-Oh, look at that!

With the pastry finally ready,

it's all go to prepare the fruit filling.

Shall I do the blueberries?

Yeah, do the... Just chop them in half. You don't really need them.

Look at this. Working as a team there, look at that.

You're doing a bit of work for her, she's doing a bit of work for you.

OK. Ten minutes in the fridge.

And at the rehearsal studio,

Diversity are nearly at the end of their training session,

and they'll be hungry.

But will there be anything to eat?

I think Zainab has to be happy,

because it's my first ever go at these

and they've turned out really good.

-Well, they look good enough to eat.

-They look great, don't they?

I think they're going to give them real energy.

That's what it's all about.

Rival Ruby isn't quite so positive.

Some of them haven't risen so much, like these two.

These two have risen quite a lot.

The musical not decorations didn't turn out how

I really wanted them to.

Bakers, 15 minutes left.

15 minutes, guys.

Emma's cutting it fine with her fruit tarts.

They still need to be cooked and cooled.

-RUBY:

-Put them in the oven.

-That's perfect.

-Let's go.

Tell me, what's this?

Em, this is cream cheese frosting,

but I'm going to add some icing sugar in

cos I think it'll be too runny to...

Why have we got it this colour?

-Because Diversity normally wear black.

-Oh.

So we thought we should make some black piping as well.

Then we're going to make little decorations

like hats and tops.

Wow.

I'm going to help, cos I have nothing to do.

I'm just doing the decorations, it's fine.

I don't need any.

Looks like Zainab has everything under control.

HE LAUGHS

OK, bakers, five minutes left. Diversity are waiting.

Let's do this.

I don't think they're fully cooked yet.

Looks like Zainab does need a little help.

-HARRY:

-I'm doing white, blue on black.

Guys, one minute. Get your piping bags ready.

-ZAINAB:

-Put it in.

Finish off your decorations, Diversity are waiting.

Harry, do you want to help me plate these up?

Wait, let me just put them in this box.

That's broken, that's broken.

This is going to have to do. It's not that badly broken.

ZAINAB: Wait, wait, wait. OK, don't worry. Just put it in.

Bakers, that's it, finished. We've got to go.

Diversity are waiting.

Lids on the boxes. Harry, wash your hands.

Let's do this.

Diversity are hungry.

Boom. One at a time, Harold.

Our bakers are finally on the road

and the reality of the challenge is sinking in.

I think we're really confident as a team

because we chose some really good bakes

and they both turned out really good.

So I think our team will just have the edge on the reds.

This challenge has probably been the hardest out of all of them

because we are baking for Diversity.

They're probably expecting a really high standard.

-EMMA:

-We've all done really well to get this far.

I mean, if we think about it, we're the top four bakers in Britain.

With Diversity waiting, the teams plate up.

Harry and Zainab will go first.

They've baked cheesy corn muffins, with cooked bacon,

chorizo and a dusting of Parmesan cheese.

And raspberry, banana and granola muffins

topped with cream cheese frosting and fondant icing.

Look at this!

Let's dig in, boys.

-Harry, is that a bit of chorizo I see in there?

-Yeah.

Nice.

But it's not Diversity our bakers must impress.

Judges James and Mary will make the final decision.

Do you want to taste this one first?

Often when you do anything like this it can be quite heavy.

-It is actually quite light.

-Mm.

-There's certainly plenty of flavour in it.

-Plenty of flavour.

It's tasty. The seasoning's right.

I like the corn with it.

Shall we try this?

It's not quite perfect piping,

but it's a nice representation all the way around with the black centre.

It's good to have the icing with it,

cos it basically stops it from being too dry.

-But a good effort, I think.

-Yeah, very good.

with their cheesy corn muffins topped with a chorizo note.

And freeform summer fruit tarts with strawberry, blueberry and apple.

-Hello, Ruby and Emma.

-They look lovely.

-I'm going to try this one.

-It's actually very, very nice. Very nice.

You're going to have to tell me how to make this, Emma.

This is good.

-This is nice.

-Very nice.

But what do James and Mary think?

These two, they really enjoyed working together

and they said it was fun having a second opinion.

I'll break this one open.

The texture is really quite dense.

Mm. I think that's been...

..to me, personally, overworked.

It's quite dry. I don't think there's enough chorizo in there.

What about that tart?

-That's really good.

-Mm.

The pastry looks fantastic. Beautiful and thin.

-Good effort, I think.

-Yeah, very good.

Whilst our judges deliberate,

the bakers' hard work is rewarded with an exclusive performance

of a never-seen-before routine from Diversity's upcoming tour.

CHEERING

With the dancing and deliberations over,

it's time for the all-important result.

Which team has completed the challenge the best?

Bakers, well done.

Another challenge in the finals completed, and you fed Diversity.

How about that? Their food's banging, isn't it? It's nice.

Wicked. But as you know,

Mary and James have to make the ultimate decision

on what team done the best.

It is a team.

We've been looking at the way that you've approached this task,

a difficult one as well today.

But how well you've worked together as a team.

Also how the food tastes, so well done.

The team we think did the best with the challenge is...

..Ruby and Emma.

It feels amazing to win this challenge.

Yeah, cos I think it will really boost our chances of becoming

Junior Bake Off Champion.

I am a bit disappointed, but I also think that I've come this far

and I've tried my hardest.

I'm very disappointed

because I've been on the losing side both times,

but with my Showstoppers I definitely think

I can bring it back.

At the end of the second day of finals

Ruby and Emma shone catering for Diversity.

But Harry was the only one faultless in the knowledge test.

Oh, that's nutmeg.

And with Zainab on the winning team on the first day of the finals,

there's still everything to bake for in the Grand Final.

Next time our four bakers go head-to-head

for the very last time...

It still doesn't feel real.

..creating their most spectacular bakes to date.

-RUBY:

-I think I'm in control.

Using the skills they've learned,

they must make a selection of bakes for a Mad Hatter's tea party...

It's their last chance. The pressure certainly is on.

Our standards are very high.

I'm expecting great bakes, great tastes and nothing less.
