-I've had a very successful day

-All that's left to do is wrap them!

-Hana spent a fortune.

-Our next stop is the kitchen where

-there's a very Christmassy menu.

-Let's remove the cider from the hob

-so we don't cook out the alcohol!

-We'll start with the cranberries.

-A pot of cranberry sauce

-is only about 1...

-..but you can taste the difference

-when you make it yourself.

-I've looked inside a pot

-of coarse cranberry jam...

-..and you get

-about four bits of fruit.

-The remainder of it is jelly.

-Today, I'm using a whole pack

-of cranberries which is about 300g.

-That's more than enough.

-Add a splash of water.

-You don't need to cover them.

-This stops them

-from sticking to the pan.

-You can control the ingredients

-and reduce the sugar content.

-Yes, exactly.

-I've got some fresh cranberries that

-you can try if you really want...

-..but they are incredibly bitter.

-They are horrible, to be honest.

-These will wrinkle if they are

-over-ripe so buy them at their best.

-Place them in a pan over a high heat

-until they start to boil.

-Reduce the heat when the cranberries

-start to pop.

-We might hear them popping

-in a moment.

-They are incredibly sour.

-I'll try not to break the hat.

-We like the Santa hats.

-You need about a cup of sugar.

-Taste it at the end

-to see if you need any more.

-Next, we're going to add the zest

-of an orange.

-The alcohol is added at the end...

-..because we don't want

-to cook off the alcohol.

-Add the alcohol now to cook it off

-but retain the flavour.

-That is starting

-to come to the boil.

-Let's move to the stuffing.

-Leftover bread is very useful

-at this time of year.

-Freeze whole pieces of bread

-if you're short on time.

-Alternatively, blitz it

-in a food processor...

-..and start storing it

-in the freezer.

-You can add more to the bag as you

-have more pieces of leftover bread.

-It doesn't matter

-what bread you store.

-This loaf is from the weekend and is

-flavoured with tomatoes and basil.

-They all add extra flavour.

-The stuffing is made

-with some breadcrumbs.

-It can taste better

-if you use a selection of breads.

-Yes, that's right.

-Add some finely chopped onions.

-Chop them by hand as it turns

-to pulp in a food processor.

-Let me grab this

-to stir it together.

-Next, we're going to add some thyme.

-Did I remember the thyme?

-Yes, I've got some fresh thyme.

-You can either use fresh or dried

-thyme from a pot in the cupboard.

-Fresh thyme

-often looks as if it's dried!

-Yes, it does.

-Can you hear those?

-Yes, they have started popping.

-Remove the leaves of the thyme...

-..and I like to add

-some fresh parsley too.

-This fresh parsley

-is chopped quite finely.

-Dried parsley isn't as good as the

-fresh one but dried thyme is fine.

-Herbs can behave differently

-when fresh or dried.

-This is a Christmas stuffing...

-..so I'm adding

-some almonds, apricots and leeks.

-Add the ingredients

-you enjoy eating.

-There's also

-some chopped spring onions.

-I bought the chestnuts ready-baked.

-Do you like them?

-Yes, and I love chestnut stuffing.

-They taste delicious as they are.

-I only have chestnut stuffing

-at Christmas and I love it.

-Crumble the chestnuts

-into the stuffing.

-Buying ready-baked is much easier...

-..than boiling the nuts

-and removing the shell.

-You don't get a lot

-for your labour either!

-They can explode in a microwave so

-it's best to buy them ready-baked.

-Season this

-with plenty of salt and pepper.

-You will notice that it's quite dry.

-If you plan to use it

-to stuff the turkey...

-..and feel it's too crumbly...

-..it's very easy

-to simply add a beaten egg.

-I know it's unusual...

-..but it results

-in a stickier consistency.

-You won't achieve that...

-..without adding the egg

-or even a drop of double cream.

-It just helps to bind the mixture.

-Let's move on quickly

-to our sausages and bacon.

-The cranberry sauce

-is boiling nicely.

-We're making

-the pigs in blankets next.

-You need quality sausages

-and I'm using Cumberland sausages.

-Remove the skin from the sausages

-and coat the meat in flour.

-Let's move the bowl

-and grab a bit of the stuffing.

-with a twist!

-Place the stuffing in the middle

-of the sausage meat.

-Wrap the meat around it.

-Next, take your bacon

-to form a parcel.

-The first piece

-goes around the middle...

-..and another slice

-around the other way.

-Let me show you some

-that I made earlier.

-than the traditional type.

-have been baking in the oven.

-They have been cooked in this tin.

-He was bald, covered in tattoos

-..but he told me how the Wales Air

-Ambulance saved his son's life.

-He wouldn't be alive if it wasn't

-for the Wales Air Ambulance.

-I only met him on the walk and

-it felt like I'd always known him.

-I walked many miles in his company

-and we even shared a pair of pants!

-The summit of Snowdon

-has its own micro-climate.

-We reached Bwlch Glas,

-waved to the train...

-..and aimed for the summit...

-..to mark another milestone

-in Elfed's challenge.

-enriches the life of its owner.

-who have saved lives.

-some very enviable wardrobes!

-Two dogs saved the lives

-As a vet, it was great

-to see the different breeds.

-That was a good story.

-of its role at work and in the home.

-Her story's incredible as she's been

-around the world and even to Milan!

-we've come to an agreement.

-One dog has come out on top.

-This dog made the biggest difference

-to the life of her owner...

-of her owner's family.

-I think we all agree.

-It was a close-fought competition

-but Olga really stood out to us...

-said that since having Olga...

-..they feel as if they have

-a father and grandfather again.

-thinks their dog is fantastic...

-has seen her effects on her owner.

-Olga has inspired him

-to leave the house and meet people.

-She helps him around the house.

-Olga is a trained dog but she also

-helps him each day to live his life.

-They have a fantastic relationship.

-She's faithful and intelligent

-and is our Gelert!

-We've seen footage of Olga and the

-difference a dog makes to a family.

-That was the aim

-finding a cute dog...

-..but a dog

-that affects your life...

-..and helps you realize

-that life is worth living again.

-and her owner, Derek.

-I've suffered with my health

-all my life...

-..as at the age of two,

-I was struck down with tuberculosis.

-Having Olga

-means that I can go out more.

-She helps me at home

-and when I go outside.

-Olga's my queen!

-When it's time to go out, she goes

-and gets her coat from the garage.

-She also opens the door

-and closes it behind her.

-If I get a phone call...

-..I ask her to find the phone

-and she gets it for me.

-Unfortunately, she gets confused

-with the remote for the Sky box...

-..and I can't really answer that!

-Olga's a retriever and

-it's in her nature to help people.

-She does a lot for Dad

-and has totally changed his life.

-She sleeps next to him at night.

-When he wakes up in the morning...

-..she'll bark at him

-to make sure he gets out of bed!

-The biggest change is that Dad

-now has the confidence to go out.

-It's great to see him chatting

-as he did 20 years ago.

-She not only gets me out but does

-things normal dogs wouldn't do...

-..but she isn't a normal dog.

-It's taken a good 18 months

-to train her...

-..and another four months...

-..to train her to suit

-my own personal needs.

-That's the real difference for me.

-Having Olga has changed our lives.

-I've got a father and my children

-have a grandfather again.

-being a heroic dog in Wales...
