-Earlier, I poked around the college

-to see how it was coming together.

-Coleg Llandrillo Menai is a busy

-place and we start in the kitchen.

-Why has the Caernarfon Food Festival

-joined with Coleg Menai?

-They contacted us to ask if

-we could supply their gala dinner.

-We agreed as it's an excellent

-opportunity for our students.

-Have you cooked so much food before?

-No, I haven't cooked for this many

-but it'll be a great experience.

-Tell us about the special delivery

-of parsnips and honey.

-It has a very unique flavour.

-Can I try it?

-Yes, of course.

-You can taste the parsnip

-and the sweetness of the honey.

-I think it's incredible.

-Yes, it's lovely.

-It's tough to hold an interview so

-tell us about the food you prepared.

-I've made fudge to be served with

-the shortbread to eat on arrival.

-A special tutor is putting everyone

-through their paces today.

-It's the winner of Chefs on Trial

-and a former student, Matt Guy.

-We've got 110 covers tonight

-and I'm cooking with 12 young chefs.

-Is it difficult

-to make so much food?

-It's tough if you haven't done it

-before but it's a learning curve.

-I wouldn't have slept if I was

-a student doing today's service.

-It's an amazing experience

-for these students.

-What's it like to share a kitchen

-with Matt Guy?

-It's great, very helpful and checks

-that we know what we're doing.

-Both kitchens were busy...

-..as the hospitality students

-finished setting the tables.

-Everything needs to be straight and

-an inch from the edge of the table.

-Everything needs to be polished

-and shining or people will complain.

-What have you had to do today?

-We've had to choose the glasses

-and polish them one-by-one.

-They have to be taken

-into the main hall for the guests.

-The students worked hard to get it

-ready for when the guests arrive.

-Are you looking forward to it?

-Yes, I can't wait.

-The students have been very busy.

-I was delighted with the award.

-It's best that the audience

-Ray loved his home town

-of Mynyddygarreg...

-..but it's great that it went down

-well across Britain.

-You were very nervous

-this time last year.

-A year ago to this day was the first

-time I was performing the show.

-I was very nervous about it.

-You couldn't do a show about

-anyone other than Grav.

-Ray was an icon.

-That's right.

-He was a true icon.

-People smile when they think

-of Ray Gravell.

-I worked with him.

-He made me feel very special,

-but he was the legend.

-You've toured in Wales and

-across the country.

-Yes, we went to the

-Edinburgh Fringe Festival.

-Many people had met him

-and knew of him.

-Others came to the show but didn't

-know about Ray Gravell...

-..but they thoroughly enjoyed it.

-How did you portray him?

-It was quite a responsibility.

-I spoke to Phil Bennett,

-Roy Bergiers, Alun Wyn Bevan...

-..and many other people

-who knew Ray.

-I had to bulk up

-so that I looked more like Ray.

-There's another tour for the show.

-It starts next week.

-Yes, but the preparations

-started a while ago.

-It's a one-man show.

-I feel that I've got to put my all

-into the show.

-The Six Nations is upon us.

-What would Grav think of the team?

-I think he'd be happy with some

-of the members of the team.

-Thank you.

-The marathon season is almost here.

-Many people are training to raise

-money for numerous worthy causes.
