-You're preparing the star

-of the show, the turkey.

-Yes, that's right.

-The turkey takes the main stage

-on Christmas Day.

-Many people opt

-to cook a turkey crown.

-I start with heating some olive oil

-in a saucepan.

-I'm going to fry some white onions.

-Red onions will affect the flavour

-and colour of the stuffing.

-We don't want a lot of colour.

-There'll be fruit in this stuffing

-too.

-There's sage, rosemary

-and parsley in the blend.

-There's sage, rosemary

-You want to use herbs

-with a lot of flavour.

-The sage and rosemary

-are packed with flavour.

-The rosemary has been in the freezer

-with me and is a little moist.

-I've used white bread

-to make the breadcrumbs.

-You can use brown bread for it.

-some dried cranberries.

-Allow the onions to cool

-before adding them to the stuffing.

-I've got two caramelized onions

-that have now cooled.

-Add some sausage meat

-to add some fat to the mixture.

-You don't want to over complicate

-the stuffing with too much flavour.

-In the blender,

-I will add one tangerine.

-They are in season at the moment.

-You can also use an orange.

-Add the zest of the orange too.

-The zest and juices will add

-more flavour to the stuffing.

-You can make the stuffing

-about three days beforehand.

-Freeze it if you want too.

-I've also got some mixed spice.

-Add two tablespoons

-of cranberry sauce.

-This is a turkey crown.

-We are running out of time now!

-I've created a pocket

-in the turkey.

-I've removed the giblets.

-You want to create

-a round cracker shape.

-There's a lovely colour

-on the stuffing.

-Wrap some meat around the stuffing.

-Cover with slices of bacon.

-You want to create a pattern

-with the bacon.

-Cook at 200C or gas mark 6

-for 24 minutes for each pound.

-Some three hours later

-remove the foil.

-The bacon will be crisp.

-You can also make some gravy.

-Serve with vegetables too.

-for the Save The Children charity.

-This is the fifth year for this day.

-It raises awareness of the charity's

-work in Wales and worldwide.

-In Wales, we work

-in impoverished areas.

-We also work with families

-that need our help.

-We work in countries

-where there's a lot of violence...

-..and children are at risk.

-Christmas is a season for children.

-Many of us think of children

-at this time of year.

-This is a chance to give something

-back and have fun in the process.

-We've got photographs of animals

-in Christmas jumpers.

-Last year, we saw sheep,

-dogs and cats taking part.

-There are also beaches taking part.

-who have been working with us.

-The cakes are by Tesco, Aldi

-This is a pudding that contains

-all the things for Christmas.

-I've got 300g of chocolate

-with 70% cocoa.

-You want to melt this

-in a bain marie.

-This is a great alternative

-to a Christmas pudding.

-Line a bowl with clingfilm.

-We start with the mascarpone cheese.

-There's also about 100ml

-of whipped cream.

-Fold the cream into the mascarpone.

-The mascarpone helps

-to thicken the cream.

-These are all at room temperature.

-Next, we want to add the chocolate.

-Carefully add the chocolate into

-the cream and mascarpone.

-The stuffing was delicious too.

-I've also got some pistachio nuts.

-These add some texture

-in the chocolate mousse.

-You want a marble effect

-in the mousse.

-Let's turn to the cakes.

-There's strong coffee in the bowl.

-Brandy is always great

-at Christmas.

-Add two tablespoons of brandy...

-You could add rum or both.

-Soak the biscuits

-into the liquid mixture.
