-What are you making today?

-Today's first dish

-is a lamb tikka masala.

-This is a tikka masala.

-Friday is a curry night.

-People often serve chicken...

-..in the tikka masala.

-You can make it with any meat.

-I'm going to use lamb today.

-You can use any part of the lamb.

-You could use the shoulder

-or any other part.

-I've fried 500g of the lamb

-in some oil.

-The masala is a sauce.

-A lot of people get the sauce

-from a jar.

-I want to show you that it's easy

-to make your own sauce.

-Chop two large onions and

-two cloves of garlic.

-There's also some fresh grated

-ginger.

-These are the basic ingredients for

-most curry sauces.

-Would the sauce of other curries

-start in the same way?

-They all start off in this way.

-Allow the onions to brown.

-I'm going to do this much quicker.

-We're using chilli

-- a mild chilli powder...

-..and some garam masala.

-Stand back because this could hit

-the back of your throat.

-There's also some ground coriander.

-These spices need a few minutes

-to fry with the onions and garlic.

-Next, we add the tomatoes...

-..and two tablespoons

-of tomato puree.

-There's a small tin of tomatoes.

-The smaller tin is more expensive

-than the larger tin...

-..so you can use half a tin!

-There's also some vegetable stock

-and some coconut.

-You can grate the coconut

-into the pan.

-You can buy creamed coconut.

-This isn't very liquidy!

-It's quite dry.

-This has to be blended

-after it's been cooked.

-It looks very authentic.

-You don't have to blend it.

-However, I want to recreate

-the dish you get...

-..at an Indian restaurant.

-People tend to think of a masala

-as being creamy.

-I'm going to serve it

-with some rice.

-Does it matter what rice you use?

-I think it's best to serve it with

-basmati or pilau rice.

-You can try this now.

-I made a turkey

-curry over Christmas.

-It was delicious.

-There's large pieces of meat

-in this curry.

-This is an unusual recipe for lamb.

-It's an easy recipe to make.

-You don't have to spend

-a lot of money on meat.

-This is much healthier.

-Sprinkle some coriander on top.
