-Last November, it was 20 degrees

-warmer than it should have been.

-There are suggestions to pump water

-It's Valentine's Day tomorrow so

-we're feeling the romance today...

-..as Catrin rustles up

-a tasty dish for us.

-What have you got for us, Catrin?

-Today's dish is chicken with

-mozzarella, prosciutto and sage.

-I'm also going to make some chutney.

-Let's start with the chutney.

-This is an easy dish to make

-tomorrow night...

-..to spoil the loved ones

-in your lives.

-Wales has Valentine's Day and

-St Dwynwen's Day.

-We celebrate romance all the time!

-The chutney is made from plums

-and shallots.

-Fry some finely chopped shallots

-in olive oil.

-They need to soften.

-You need about 400g of plums.

-Remove the stone and

-cut them into quarters.

-This can be made in 20 minutes.

-It's great to serve with cheese.

-The plums go into the pan

-with the shallots.

-Next, we add some sugar.

-You need 200g of dark brown sugar.

-You should taste the dish...

-..and you might need

-to add more sugar.

-There's 100ml of white wine vinegar,

-some water and cinnamon.

-This is left to simmer.

-It cooks quickly.

-It should keep for a year.

-Making chutney is very popular.

-Chutney is very popular.

-You can make it or

-give it as a gift.

-I'm using chicken breast.

-Butterfly the breast.

-It's flatter and cooks quicker.

-I've got a lot of filling for it.

-We're going to fry the chicken

-in a touch of oil.

-It'll cook in about ten minutes.

-Check its cooked properly.

-We don't want to make

-your loved ones ill!

-Do you turn the chicken

-over more than once?

-You should turn it over a few times.

-It isn't like cooking a steak...

-..which is only turned once.

-You don't want a raw chicken!

-Season it with salt and pepper.

-The chicken is spitting.

-Turn down the heat a little.

-This will be served with the chutney

-and some mozzarella.

-The chutney reduces and thickens.

-It's a lovely flavour.

-Make sure the chicken

-is cooked properly.

-The chicken goes onto a baking tray.

-Next, we can fill it.

-I've got some sage leaves.

-These go on the breast.

-Next, we have the chutney.

-We need a spoonful of the chutney.

-I added more sugar to my chutney...

-..because the plums were very sour.

-Next, the mozzarella and prosciutto.

-This goes under the grill.

-You can also bake it.

-to clear your flower beds...

-..do some weeding and prepare

-the soil for planting in the spring.

-I've got more work than usual

-as this corner has been neglected...

-..thanks to three consecutive

-wet winters.

-As a result, this border

-has been overrun with brambles.

-The brambles died over the winter

-so are easier to clear away.

-Cut back and collect the branches

-in a heap to be burned...

-..before attempting the tough task

-of removing the roots.

-These are very stubborn

-so dig deep to get rid of them.

-Yes, this one was

-incredibly stubborn...

-..and there's more to clear but I'll

-turn my attention to another task...

-..which is the pruning

-of this Wiegela shrub.

-It was almost choked by the brambles

-so fought for light and grew up...

-..as opposed to growing outwards.

-The Wiegela generally flowers in May

-and June on branches of a year old.

-It's more common to prune them in

-the summer after they have flowered.

-There was very little new growth

-on this shrub last year...

-..so it needs severe pruning and

-it's best to do this in the winter.

-If you have a similar shrub...

-..prune one in every three

-of the old branches back the root.

-They are usually about

-an inch and a half thick.

-Do the same next winter and

-complete it the following winter.

-It opens up the shrub and the

-older branches don't really flower.

-This shrub is more complicated

-due to its awful shape.

-You can prune every branch

-to just a foot above ground level...

-..but the shrub will not flower

-again until next year...

-..so I'm going to make

-a few compromises.

-I need to remove

-this horizontal branch...

-..but this year, I'll only cut it

-back to where there's a new stem.

-I need to remove

-this thick, old branch too...

-..but once again, I'll only cut it

-back to where there's a new stem.

-These few bits of pruning

-have helped the shape of the shrub.

-It encourages new growth

-from the base...

-..whilst the year-old branches

-will also flower this year.

-I'll shorten the taller branches in

-the summer after they have flowered.

-Let's get back to the boring task of

-who have performed in the past.

-Steffan Evans and Beth Jones have

-performed in the past.

-The other day, I called the

-Next Directory to order a shirt.

-Stacey from Essex was on the line.

-She chose the shirt, colour, size

-and even knew my bank details.

-It was like having a girlfriend.

-She asked for confirmation of

-my name and address for the postage.

-I said, "My name is Cennydd Jones."

-"Right then, Kenneth," she said.

-"No, no, no, Stacey.

-It's not Kenneth. It's Cennydd"

-"Oh, how do you spell that then?"

-You will have to come on Friday to

-find out the punchline.

-I always have a problem with the

-phonetic alphabet on the phone.

-I make up my own words.

-I've always had an interest

-in comedy.

-I used to record other comedians

-and would learn their jokes.

-I asked my Welsh teacher

-if there was a comedy piece...

-..that I could perform

-for the Eisteddfod.

-She told me there wasn't one

-and I wrote my own.

-I listen to what people say.

-If something happens to me...

-..I like to stretch the truth a bit.

-This is the shirt I bought

-over the phone with Stacey.

-I've developed my performing skills

-at local events and YFC Eisteddfods.

-Through the YFC and other movements,

-young people get to perform.

-Both of the movements

-have competitions.

-If I wanted to go into the comedy

-field now...

-..I would be very jealous

-at an older age.

-There is no way we can fail.

-All of the famous comedians

-have had bad nights.

-If I did it on the spot...

-..and it was bad...

-..people in South Wales

-would know the day later...

-..even if it was performed

-in Caernarfon.

-I have some "safe bet" jokes.

-I have a lot of new sets.

-I hope people find it funny.

-Mmm, that's delicious.

-It's time to move on to the dessert.

-It's raspberry and pecan

-chocolate brownies.

-Everyone is going to love this.

-It's white chocolate,

-raspberry and pecan.

-I love that chicken.

-You can have a drink too.

-A brownie differs from a cake.

-It's softer than a cake...

-..because of the chocolate.

-There's 70% of cocoa

-to the chocolate...

-..that I'm using in this recipe.

-You don't want milk chocolate

-for this recipe.

-Melt the chocolate over a pan

-of water.

-Let's get mixing.

-I've got 120g

-of soft unsalted butter...

-..and 225g of caster sugar.

-You want to cream this.

-This is similar to the way

-you prepare a cake.

-This needs to be a pale colour.

-We'll add four eggs

-to this gradually.

-I'm using the whole eggs.

-The yolks are very yellow.

-This is going to be baked

-in an 18cm by 24cm tin.

-You can remove the base...

-..so it makes it easier when you

-take it out of the pan.

-The timing of the cooking

-You don't want it to be too dry.

-I've added all the egg.

-The chocolate

-needs to be left to cool...

-..before adding it to the eggs

-and butter mixture.

-This needs to be whisked again.

-It makes a large batch.

-It should last for four days.

-Next, we add more chocolate

-flavouring...

-..with 65g of cocoa.

-There's also 65g of plain flour.

-You don't want it to rise.

-Oops!

-I didn't mean to do that.

-wearing the mixture!

-It might have hit the camera!

-Next, we add the pieces

-of white chocolate.

-You need about 100g

-of white chocolate.

-There's 65g of pecans.

-Can you leave the pecans out

-if you have an allergy?

-You can add any nuts.

-You don't have to add nuts.

-Half of the mixture

-..before you add a layer

-of raspberries.

-I've defrosted some raspberries.

-Raspberries are very tasty.
