It takes about three hours to prepare, so no time to waste. | 0:37:24 | 0:37:29 | |

First up, the bread mixture is prepared. | 0:37:42 | 0:37:47 | |
You simply add the olive oil into the flour... | 0:37:47 | 0:37:50 | |

Make a little well in the middle and start pouring in | 0:37:54 | 0:37:58 | |

Once it's turned out, it's time to add the guilty pleasures. | 0:38:36 | 0:38:41 | |

And smear lard and butter and fruit and spices on it, roll it up and then roll it out again. | 0:38:44 | 0:38:50 | |
Spices were only introduced for cooking from the 17th century onwards | 0:38:50 | 0:38:54 | |
and they really help give this cake its distinctive flavour. | 0:38:54 | 0:38:58 | |
-You fold that over once. -Yep. -And then you pick it all up and fold it over again. | 0:38:58 | 0:39:03 | |
You turn it round once and then you roll. | 0:39:03 | 0:39:06 | |
So it literally is layers that you're creating. | 0:39:06 | 0:39:08 | |

So it's absorbed most of the lard that would have been running out of it when it was hot. | 0:39:24 | 0:39:29 | |
