We have seen a real increase in the amount of traffic

During the pressing process the pears are layered

and squeezed between special nylon cloths called cheeses.

Presses were once operated by hand

but now work with hydraulic equipment.

How much liquid would you get out of one of these presses?

We get somewhere between 80 and 100 litres per pressing.

Once we've pressed it, it goes into these tanks

We might add a little bit of sulphur dioxide just to help stop

spoiling organisms. And then once it's finished fermenting,

we transfer it into a clean tank or vat

so they'll be fantastic as a dessert.

The alcoholic strength of the perry varies somewhere between 5% and 8%,

depending on sugar levels in the fruit.

Unlike cider apples, perry pears often contain sorbitol, a sugar
