The Birthday Matilda and the Ramsay Bunch

-But I've taken over the kitchen in THIS house.

We're back in the UK, in Cornwall,

and the whole Ramsay bunch loves messing about at the seaside.

-No eating seaweed.

-There's so many fantastic things to do here.

I'm cooking like crazy. This is fun! And writing my summer food blog.

And whether it rains or shines, everyone has a great time.

But there are some days here that are really special.

It's a big day today. It's Mum's birthday.

She's still asleep upstairs.

We've got to be quiet cos we're going to surprise her

with a breakfast in bed treat. But the big question is...

Holly, Jack and Megan are getting dressed,

while I cook up one of Mum's favourite breakfasts.

'Perfect fluffy pancakes for a birthday breakfast.

-'First, crack two eggs into 300ml of milk.'

-Hey, Tills.

-Ssh!

-Jack don't wake up Mum.

-Why not?

-Cos it's a surprise breakfast.

-What are you making, Tills?

-Pancakes.

-I LOVE pancakes.

-With bacon, some fruit and maple syrup.

-Bacon!

I might ask you to make the bacon for me.

I don't like the fruit part but I like the bacon and the pancake bit.

'Pour in melted butter and whisk. Then, in a separate bowl,

'add flour, baking powder...'

-And my sugar.

-Morning, all.

Ssh, you're going to wake up Mum.

-'With the gang all here, I'm putting them to work.'

-What's in there?

-So, this is the dry mix.

-Here you go.

-Thanks, Meg.

That's the dry mix and that's the wet mix

and you gradually add that in.

What does this have to look like when we're done?

-Silky with as little lumps as possible.

-Shall I do all the bacon?

Yes, please, Meg. Jack will probably eat it.

'We're having fried bacon

'and super-healthy blueberries with our pancakes.'

-Shall I get some tea ready?

-Yes, please, Jack.

-I'll have one, please.

-'Tea's Mum's morning favourite.'

Who's ready to make some pancakes?

These are like the American pancakes, the thick ones.

-I need a spatula.

-Anyone know where anything is in this house?

-Guys, stay quiet. Mum's trying to sleep.

-Sorry.

-Sorry, Mummy's girl.

Ooh, I'm not the Mummy's girl.

Usually, the first pancake is the one that goes wrong,

-but this one's actually quite good.

-Oh, check you!

'The thing I love most about making pancakes is tossing them.'

Can we have a competition, who can flip the most?

'Unless you're an expert flipper,

'make sure you have a grown-up around. Competition on.'

-Yes, Holls!

-Really, really high!

'Whoa, Megan nailed it!

'Now, I'm going to make Mum's pancake really fun.

'First a couple of eyes and a mouth.'

'Stick on the blueberry eyes with maple syrup.'

Why are we walking about your birthday when it's Mum's birthday?

This is the best way to start my birthday.

Now I've eaten all those pancakes, we'd better do a long bike ride.

Mum loves the great outdoors, fresh air and exercise,

and with the whole family.

So, we're hitting the country lanes, Rumpole included.

Are you OK, Rumpy?

As it starts to rain, Mum and Dad head home

but the intrepid Ramsay bunch are on a mission -

Operation Birthday Present.

-OK, here we go.

-We're making Mum the perfect seaside pressie.

I think Mum will really like it cos we haven't done her

something like this before and it's quite unique.

-It's from the heart, literally from the heart.

-And it's homemade.

It's going to be a framed photograph with a special message.

First off, the guys are writing...

Concentrate on building Mum's message.

The gang are taking care of the present

and I'm in charge of the food.

Eating together is one of the things that makes the Ramsay bunch happy.

The steak is good!

'So after tea and pancakes in bed for breakfast,

-'I'm cooking a special birthday lunch.'

-It's my birthday!

'This is one of Mum's favourite dishes -

'yummy chicken and prawn noodle salad.'

Wow, that looks beautiful.

And I'm making a birthday cake, of course,

and mine's got a hidden surprise or two.

Oh, cool!

The team have done a great job on the message.

We've got three seconds.

'There's no way we're letting the rainy weather dampen our spirits.

'I love cooking for big occasions.'

I'm making a surprise birthday cake for Mum.

The outside is super healthy and delicious

but hidden inside is a secret stash of her favourite sweets.

Jack!

'I'm getting Jack to be my assistant because this is an important cake.'

I'm going to start by creaming the butter and sugar together.

-All in?

-All in.

-All in.

'Whizz up the castor sugar and butter,

'add six eggs and self-raising flour,

'a dash of vanilla extract,

'baking powder and lots of citrusy lime zest.

'Next, the really surprising ingredient.'

Could you start grating some courgette into that bowl?

'Yeah, I'm making the cake with courgettes,

'which might seem a bit weird because it's a vegetable,

'but trust me, it's delicious.'

-You're a perfectionist, aren't you, Tills?

-Yeah.

-Just like Dad.

'My cooking's a bit better though!

'Add the grated courgette and mix.

'Done.'

-Oh, smell that.

-Mmm.

-That piece there.

-Every time!

-Every single time, you fall for the same trick!

I still haven't got you back, you know that.

'This is going to be a high-rise super-special cake,

'with four layers.'

'Fill the cake tins.'

-We're a good team, Jack.

'And bake in a hot oven for 30 to 35 minutes.'

All the Ramsays are into keeping fit, except Rumpole,

who prefers eating fit. AS RUMPOLE: Where are my sausages?

Mum and Dad love extreme sports and walks by the sea

and new boy Bruno can't wait to get some more beach action.

-No, no, it's like a Baby-gro.

-Happy birthday, Mum.

-Let's go, Munchkin.

Phew, Mum's out the way.

'When the sponges are cooked, remove and cool.

'Then start building the cake.

'First, on a whole sponge,

'spread on some yummy yoghurt and cream cheese icing.

'Then, put two of the other sponges together.'

This is where the surprise comes in.

'And cut out a secret compartment in the middle of them

'to hide the surprise.'

Keep swirling that round.

'Uh-oh, Mum and dad are back!'

-Um, not allowed.

-Out!

-Out!

-No, no...

'Phew, it's just Dad.'

Let me show you something.

'Great, I'm getting another assistant. This will be good.'

If your filling's level, your cake will be level.

You have to look at it like that and you can see, look.

'Time for the second layer with the hole in, and the third.

'Fill up the secret compartment with some surprise sweets.

'Now seal it with the final sponge and get a dad to work.'

So, where did you learn this, Dad?

-I first started decorating cakes in Paris.

-Right.

And it was just birthday cakes for the restaurant.

'Starting to look impressive.'

I have to admit, Dad, it is fun doing this all together.

'The Ramsay team are coming up trumps.

'Icing done, we're sending Dad off

'to keep Mum out of the kitchen whilst we decorate.

'We're doing a heart and a letter T because Mum's called Tana.'

Do you know what's nice? It looks homemade, that's the thing.

Perfect. I'm going to get some pictures for my blog.

'These are sometimes called pinata cakes

'because of how the sweets fall out.'

And then I'm going to put that in the fridge to let it set.

Jack heads off to get birthday candles and balloons.

Megan and Holly get crafty.

Holls, shall we get some, maybe, shells,

and pretty things to put on the frame

cos Mum loves that kind of stuff.

They're going to frame the selfie, seaside style. Ramsay team, go!

I think Mum's going to love that.

-Shall we put the shells this way or that way?

-Probably that way.

-Oh, wow. Wow, it looks really cool.

-It's such a funny photo.

Mum loves exercising and being really fit and healthy.

This year, she did a triathlon race

where she had to swim 1.8km,

cycle 90km

and run 21km.

It took her over six hours. That's a serious race!

CHEERING

Naturally, Mum's into really healthy food

and this is one of her favourite dishes -

noodle salad with chicken, prawns and a yummy dressing.

She's going to love this for her birthday.

First, the dressing.

'Add sesame oil, rice vinegar...' This gives it a bit of sharpness.

'..soy sauce then chilli sauce to make it spicy.'

Mum doesn't like boring food.

'Honey, grated fresh ginger and whisk.

Dressing done.

'Add carrot shavings to cooked rice noodles.'

The carrots give it a really nice flavour.

'Then pop in your favourite chopped herbs and vegetables,

'along with cooked chicken and prawns.'

It's going to be a really bright and colourful salad.

'To get it all yummy, pour in the delicious dressing.'

Then mix the salad round.

Whoo. All the best bits hide at the bottom.

Now to add a bit of crunchiness on the top.

'Sprinkle on chopped peanuts and sesame seeds.'

Wow, that looks beautiful. Just going to take a selfie with it.

All the pieces are coming together for Mum's birthday lunch -

decorations, present and food.

My favourite things are always homemade.

Fingers crossed she's going to love them.

I think we made Mum's birthday pretty special.

Later tonight, the oldies are going out by themselves

and I bet they'll be all soppy and romantic. Urgh!

So, before Dad gets ready, I'm grabbing him for our foodie chat.

What a way of waking Mummy up - breakfast in bed.

I loved that. She was very happy as well.

The blueberries and the syrup - delicious.

And then the lunch - wow, that salad with the glass noodles.

-And the cake.

-I love the idea of cutting the cake out

-and filling it with fruit next time, maybe?

I think we did that for the birthday cos it's like a treat day.

What's it like working with Jack in the kitchen?

He's quite fun and he says I'm controlling but it's because

-I'm the one that invites him into MY kitchen.

Yeah, I definitely think that the best way to spend your birthday

is with family and friends.

But the interesting thing for me, with three daughters,

if you go to the end of the grass,

you know there's a little church over there,
