The first thing we need to do for our Crumble Top Tarts,

We need to put that to the side, and we're going to use our dredger,

which has got some flour in it, to sprinkle it all over our mats.

I've come to a factory in Tiptree in Essex,

to find out how lemon curd is made, so let's go and have a look.

The first thing you have to do is scrape the skin off the lemon,

And it's called zesting.

And this zest is going to add lots of flavour to the lemon curd.

The next step is juicing, on this colourful little juicing machine.

This is the next ingredient and we need to slice it up.

The butter, the lemon juice and the lemon zest

all get added into this big machine, which is like a giant kettle.

And then everything gets heated up and cooked.

And now's here the fun part. We're going to fill up

Very carefully, bring it over to your bowl of melted butter

So next, we need to measure out two tablespoonfuls
