I've just been getting everything ready to go on a journey

Welcome to my outdoor kitchen.

Who wants to know what we're going to cook today?

ALL: Me!

Today's recipe is delicious.

It's falafel footballs.

ALL: Mmmm!

They look good, don't they?

But before we get started on the cooking,

we've got to do something really, really important.

-What do you think it is?

-ALL: Wash our hands!

That's right, we've got to wash our hands. Let's go.

Let's get started.

Now, falafels are delicious

and they're made from squashed beans, herbs and spices.

And we're going to be using red kidney beans

and they come from the same family as broad beans,

but there's loads of different types of beans, aren't there?

There's runner beans.

Can you pretend to be a runner bean like this?

Who can be a runner bean? Woo! Run, run, run, run!

Broad beans.

And how about a string bean, like this?

And of course, there's jelly beans.

We're going to use red kidney beans

and we're going to squash them up,

but before we do, we're going to add some of this to our bag.

-Does anyone know what it is?

-Runner bean.

A runner bean?! It's not running away.

It's garlic and garlic has a really strong smell.

Let's smell it.

-This smells lovely.

-It smells delicious, doesn't it?

So let's put the garlic into our bag of red kidney beans.

And next, it's time to do some squashing.

So let's warm up first and you can do that with us. We go like this...

squash, squash, squash, squash,

squash, squash. That's it.

We're going to use our rolling the pins to do squashing.

Everyone hold your rolling pin in front of you,

-like a pair of bicycle handlebars.

-Ha, ha!

That's it, Kesime's got it.

Mine looks really funny.

Next we need to empty all these squashed beans

and the garlic into this bowl.

So open it up, be very careful and pour it in.

It's coming out, look.

-It's funny.

-I got mine.

And then we can recycle our bags.

Great, that's it and how about yours, Alfie?

I'll put these in the recycle bin, there we go.

Next, we need to add spring onions.

Who can be the springiest onion? Ready?

One, two, three!

Boing, boing, boing, boing, boing...

I am springed out.

Let's add the spring onions to the bowl.

-There we go, sprinkle, sprinkle.

-There!

I wonder what we're going to need next in our falafel footballs?

Well, let us see if you can guess what it could be...

We've got some chocolate,

some courgettes, and fresh coriander.

What would you choose for our falafel footballs?

I know, I'll give you some clues and you can guess what it might be.

Here's the first clue - the special ingredient is green.

Chocolate's brown so we can definitely take that away, can't we?

OK, here's the second clue -

the special ingredient is green and it's a herb.

Courgettes are a vegetable, aren't they?

So we can take that away as well.

Which leaves us with fresh coriander.

We're going to need some fresh coriander for our falafel footballs.

Coriander is something that you can easily grow

and you don't need a garden to do it. I'll show you how.

You need to start with some coriander seeds, like these.

And next, we need to plant them.

I've got a little yoghurt pot here that I've drawn a little picture on

and I'm going to plant the seeds deep down in the soil, like this.

That keeps them nice and warm.

Like you and I, all plants need lots of water to keep them

really healthy, so I'm going to give my seeds a little drink.

If we keep them somewhere warm, after a couple of weeks,

little green shoots will start to come through, like these ones here.

The leaves are so tiny. Look at them.

If we look after these green shoots,

the coriander is going to grow really big, like this one here!

Look how big the leaves are. It looks fantastic.

I think we're going to use some of this in our falafel footballs.

Growing coriander is great fun and look,

here's the coriander that I grew and it's all washed

and it's ready to eat.

Let's get back to making our football falafels.

Has everyone got some coriander in their cup?

ALL: Yes!

-That smells really, really, really strong.

-It does smell really strong.

Gosh, this is going to taste delicious in our falafel.

We're going to snip up our coriander using our scissors.

But remember, be safe with scissors.

Everybody knows that you point them down towards your..?

-ALL: Toes!

-Your toes, that's it.

-So come on everyone.

-ALL: Let's get snipping!

So we hold the handle of the cup, snip, snip, snip.

That's it.

Once you've chopped up all of your coriander,

we need to add it to our bean mash.

Next, we need to add some of this.

It's called cumin and it's made from seeds

which have been ground up.

Can you do that?

-Ground up!

-That's it.

So we're going to add some cumin to our falafels.

put it into the bowl. Oh, Look at that big mountain.

Then use your finger to tap it down, like this.

Pat, pat, pat, like a teeny-weeny little sandcastle.

Then put it into your bowl.

Then we're going to add some plain flour from this little pot here.

Let's sprinkle it in, everyone. Ready?

Sprinkle, sprinkle, sprinkle, sprinkle.

Ooh, it looks like snow!

And next, it's time for my favourite part.

Are you ready to get messy?

ALL: Yes!

One, two, three!

Squish, squash, everything together.

Squish!

Eeee!

We need to squash everything into one big, football.

There we go.

We're going to put a line down the middle of our mixture

and split it into two halves.

That's it. Then take each half out and put it on the mat

and we pick this bit up and we put it on the mat.

Then we're going to halve both of these.

There's two...

..three, four.

Careful, because they might break up so try and keep them together,

you've got to squeeze them. Four falafel footballs.

All we need to do now is make them into a football shape.

So we have to start by rolling them like a football.

-Hey, Lewis is doing a great job!

-Squeeze it and roll it.

-Got it, Lewis!

Roly-poly, roly-poly.

And once it's rolled, you put it on the tray.

-I've done it.

-Everyone give your hands a wipe.

The last thing we need to do is take this brush, dip it in the oil

and paint our falafel footballs.

Kesime, what do you think this will to do to our falafel footballs?

It's going to make it nice and shiny.

You bet it's going to make them shiny.

They look brilliant, everyone. Put your brushes down and that is it.

Now it's time to put them in the oven to cook.

Remember, ovens are hot, so don't go near.
