Hi, this is my life. I love cooking. | 0:00:02 | 0:00:05
They smell amazing. My dad's a chef. | 0:00:05 | 0:00:08
SHE SHOUTS | 0:00:08 | 0:00:10
But I think I'm already better than him. | 0:00:10 | 0:00:12
My name is Matilda Ramsay, | 0:00:14 | 0:00:15
but people usually call me Tilly. | 0:00:15 | 0:00:18
Meet my embarrassing family. | 0:00:18 | 0:00:20
Mum. She wears the trousers | 0:00:22 | 0:00:24
and is the only one Dad's afraid of. | 0:00:24 | 0:00:26
I'm loving the hair. | 0:00:26 | 0:00:29
Big sister, Megan. She's all grown up | 0:00:29 | 0:00:31
now and crazy to get on with life. | 0:00:31 | 0:00:35
Jack. He's so good at sport, | 0:00:35 | 0:00:38
he's going to be playing for Britain soon. | 0:00:38 | 0:00:41
This is Holly. | 0:00:41 | 0:00:42
She is determined to be the greatest | 0:00:42 | 0:00:44
fashion designer of her generation. | 0:00:44 | 0:00:47
Dad. | 0:00:47 | 0:00:48 | |
Even though he's hard on the outside, | 0:00:48 | 0:00:50
he's soft and mushy on the inside. | 0:00:50 | 0:00:53
-And he's quite a good cook, too. -Excuse me, how about very? | 0:00:53 | 0:00:58
Matilda, Matilda! | 0:00:58 | 0:01:01
When you're the youngest, you have to fight to get noticed. | 0:01:01 | 0:01:05
So that's why I love to cook up a storm. | 0:01:05 | 0:01:07
This is my world. | 0:01:07 | 0:01:10
Tilly, give me a kiss, please. A nice one. | 0:01:10 | 0:01:14
I'm writing my name on the suitcase because then I know I'm the best. | 0:01:17 | 0:01:21
This summer we're going to Los Angeles and I've decided to | 0:01:21 | 0:01:24
write a blog about America, my crazy family and my cooking. | 0:01:24 | 0:01:30
Today, I'll be doing a fantastic welcome to America meal. | 0:01:30 | 0:01:33
I love the summer, | 0:01:35 | 0:01:37
as it's when we get to spend most time together as a family. | 0:01:37 | 0:01:40
My new wet suit. | 0:01:40 | 0:01:42
Which explains why my brother, sisters and me | 0:01:42 | 0:01:45
can't wait for school to finish. | 0:01:45 | 0:01:47
Sadly, Mum's a bit of a sergeant major when it comes to packing. | 0:01:48 | 0:01:53
Please don't pack everything, we just need stuff for summer. | 0:01:53 | 0:01:56
What have you done here? What on earth is going is going on? | 0:01:56 | 0:01:59
My dad's a famous chef. Most people think he's really scary. | 0:02:00 | 0:02:04
Check out the shades, baby. | 0:02:04 | 0:02:08
But he's a nonstop joker at home. | 0:02:08 | 0:02:10
Boom! | 0:02:10 | 0:02:11 | |
The trouble is, Dad works away from home a lot. | 0:02:11 | 0:02:14
Matilda, I'm shy, put it down. | 0:02:14 | 0:02:17
So it's going to be great spending the summer with the whole | 0:02:17 | 0:02:21
Ramsay family. | 0:02:21 | 0:02:22
I can't wait to get to Los Angeles, cos it's glitzy, glamorous, | 0:02:22 | 0:02:25
has loads of brilliant beaches, great sport and amazing food. | 0:02:25 | 0:02:31
The big question when you arrive on holidays is always... | 0:02:31 | 0:02:35
-Happy, excited? -Yes. -Come on. | 0:02:44 | 0:02:50
He's just an insane child. | 0:02:50 | 0:02:53
Oh! | 0:02:58 | 0:03:00 | |
-Megan! What's the number for emergencies in America? -911. | 0:03:07 | 0:03:13
Let's call it now. | 0:03:13 | 0:03:15
Please don't try this at home. | 0:03:25 | 0:03:26
Right, done. | 0:03:28 | 0:03:30
It's our first day in America. | 0:03:34 | 0:03:37
So we're hitting the Hollywood Hills to get over our jet lag | 0:03:39 | 0:03:42
and see the famous sign. | 0:03:42 | 0:03:44
-Tilly, what do you think? -I love it. | 0:03:44 | 0:03:46
Right, let's go, selfie. Jump in. | 0:03:46 | 0:03:50
Everyone in our family is mad about doing selfies. I love them. | 0:03:50 | 0:03:54
BOO! | 0:03:54 | 0:03:56 | |
He's so weird and annoying. Everything a dad should be. | 0:03:58 | 0:04:03
-They're always this daft. -1, 2, 3. | 0:04:03 | 0:04:07
He always tries to get into every photograph. | 0:04:09 | 0:04:12
Oh. I got it. | 0:04:12 | 0:04:14
Guys, seriously, watch out for the snakes. | 0:04:14 | 0:04:16
I really want to see one, they're so cool. | 0:04:16 | 0:04:19
Jack absolutely loves snakes so he's always on the lookout for them. | 0:04:19 | 0:04:23
The hot spring and summer months in LA are rattlesnake season. | 0:04:23 | 0:04:27
It's when they come out into the open, | 0:04:27 | 0:04:29
so you have to watch out because rattlesnakes are really poisonous. | 0:04:29 | 0:04:33
No snakes this morning for Jack. | 0:04:33 | 0:04:35
Madam, would you mind taking a picture please? | 0:04:35 | 0:04:37
-Of course Dad always tries to scare us. -Snake! -Dad, shut up. -Typical. | 0:04:37 | 0:04:43
This is normal. Megan is the only sane person in this family. | 0:04:43 | 0:04:48
Yes, I am. | 0:04:48 | 0:04:49
After working up an appetite, I'm heading back to hit the stove | 0:04:49 | 0:04:53
and cook up a special celebration meal for everyone. | 0:04:53 | 0:04:56
Every time we come to Los Angeles, the first meal | 0:04:56 | 0:04:59
we have is my American burgers, smoky LA fries and amazing whoopies. | 0:04:59 | 0:05:04
It's a Ramsay tradition and I love traditions like this. | 0:05:04 | 0:05:08
This is my beef mince and I'm going to start | 0:05:10 | 0:05:14
by adding in garlic powder, but you can use fresh garlic as well. | 0:05:14 | 0:05:18
Real burgers are very easy to make. | 0:05:18 | 0:05:20
Salt, pepper, Worcestershire sauce, | 0:05:20 | 0:05:24
they're just a bit of a mixing job, really. | 0:05:24 | 0:05:26
This is the fun bit. | 0:05:26 | 0:05:28
I always like getting my hands dirty. | 0:05:28 | 0:05:30
It feels really strange, | 0:05:30 | 0:05:31
it feels a bit like putty. | 0:05:31 | 0:05:33
If you're taking over the kitchen, | 0:05:33 | 0:05:34
don't forget, your grown-ups like you to ask them first. | 0:05:34 | 0:05:37
The biggest fan of burgers in our family is Jack. | 0:05:37 | 0:05:40
He is a bit of a carnivore. | 0:05:40 | 0:05:42
This is where the great secret comes in. | 0:05:42 | 0:05:45
You get a lump of it and you roll it into a ball, | 0:05:45 | 0:05:48
you grab a block of cheese and you just make a hole in the middle. | 0:05:48 | 0:05:53
You hide it in and just put the burger over the top, so nobody knows | 0:05:53 | 0:05:57
until they cut into their burger and they're like, "Oh, wow, some cheese." | 0:05:57 | 0:06:00
It's clever, isn't it? | 0:06:00 | 0:06:02
I like having recipes with a twist to them | 0:06:02 | 0:06:05
cos it's different to everyday, it's more fun. | 0:06:05 | 0:06:09
Then just pop in the oven for about 20 minutes and remember, | 0:06:09 | 0:06:13
you always have to clean your hands after making stuff with raw meat. | 0:06:13 | 0:06:17
Whilst I cook dinner, | 0:06:19 | 0:06:21
Jack, Megan and Holly can't resist hitting the sights. | 0:06:21 | 0:06:25
Los Angeles is a massive city. | 0:06:25 | 0:06:27
It's the second biggest in America and has some amazing places to see. | 0:06:27 | 0:06:32
The guys are visiting the world famous Hollywood Walk of Fame. | 0:06:35 | 0:06:38
Welcome to Hollywood, you have arrived. Any language? | 0:06:38 | 0:06:42
HE SPEAKS CHINESE | 0:06:42 | 0:06:46
HE SPEAKS JAPANESE | 0:06:46 | 0:06:48
HE SPEAKS FRENCH | 0:06:48 | 0:06:50
'If you work in the entertainment industry and you make it big, | 0:06:50 | 0:06:53
'you get a star.' | 0:06:53 | 0:06:55
-It's Snow White, Jack's favourite film. -My favourite film. | 0:06:55 | 0:06:59
'There are more than 2,500 stars on the Walk of Fame. | 0:06:59 | 0:07:03
'It's nearly one and a half miles long and it's growing all the time.' | 0:07:03 | 0:07:08
Oh, Penelope Cruz. | 0:07:08 | 0:07:09
'About 20 new stars are added every year.' | 0:07:09 | 0:07:13
It's a really iconic place. | 0:07:13 | 0:07:15
There is just so many famous names everywhere. | 0:07:15 | 0:07:18
It's on that street as well, it's crazy. | 0:07:18 | 0:07:21
'It's not just for famous people either. | 0:07:21 | 0:07:23
'If you do great work behind the scenes, you get a star too. | 0:07:23 | 0:07:27
'Fictional characters, like Mickey Mouse, also have stars.' | 0:07:27 | 0:07:30
Donald Duck. | 0:07:30 | 0:07:32
-Winnie the Pooh. -I love these ones. | 0:07:32 | 0:07:35
Now it's time to get the burgers out, and they smell amazing. | 0:07:38 | 0:07:41
You have to get some tomato. Then you put some pickle on. | 0:07:46 | 0:07:51
Then, this is my favourite part, the frilly lettuce cos it really | 0:07:51 | 0:07:55
makes the burger look like it's wearing a dress or a skirt. | 0:07:55 | 0:07:58
We all love delicious sauces on our burgers. | 0:07:59 | 0:08:01
This is a mayonnaise and pesto. Everyone loves ketchup though. | 0:08:01 | 0:08:05
I'm just taking some pictures, | 0:08:08 | 0:08:09
for my blog, of my American burgers. | 0:08:09 | 0:08:12
I like to send them back | 0:08:12 | 0:08:14
to my friends in Britain cos then | 0:08:14 | 0:08:15
they can see what I'm up to. | 0:08:15 | 0:08:17
It's just a good way to keep everyone involved. | 0:08:17 | 0:08:20
The Walk of Fame is full of stars on the pavement, | 0:08:29 | 0:08:32
and real-life characters too. | 0:08:32 | 0:08:34
WOOKIEE ROARS | 0:08:34 | 0:08:38
It's definitely a great way to start off your trip. | 0:08:40 | 0:08:43
You get in the mood of LA and Hollywood and everything. | 0:08:43 | 0:08:46
I'm honoured to receive this award. | 0:08:46 | 0:08:48
On behalf of everyone, thank you so much. Here's to another 50 seasons. | 0:08:48 | 0:08:52
I think we need a few Ramsays on the walk of fame, you know? | 0:08:52 | 0:08:55
-Obviously Jack Ramsay. -'Not just Jack.' | 0:08:55 | 0:08:58
'Megan, Holly and I should get a star too. | 0:08:58 | 0:09:01
As the guys head home, I'm doing what I love best - | 0:09:03 | 0:09:06
working my magic in the kitchen. | 0:09:06 | 0:09:08
These are my smoky LA fries. | 0:09:08 | 0:09:10
You've got to have them with your burgers. | 0:09:13 | 0:09:15
You have to peel and chop the | 0:09:17 | 0:09:20
potatoes then put them onto your tray. | 0:09:20 | 0:09:22
I really like fries. | 0:09:22 | 0:09:23
But not only potato fries, I like sweet potato fries as well. | 0:09:23 | 0:09:27
And they're much easier than people think. | 0:09:27 | 0:09:29
Sprinkle some oil over them, enough that would coat them all. | 0:09:29 | 0:09:33
A pinch of salt and pepper. | 0:09:33 | 0:09:35
This is the secret ingredient to make them nice and smoky - | 0:09:37 | 0:09:40
smoked paprika It gives them more of a flavour and a colour. | 0:09:40 | 0:09:43
You want them to be evenly coated. Then just wash your hands. | 0:09:43 | 0:09:48
Put them in the oven for about 40 to 50 minutes, | 0:09:51 | 0:09:54
but it really depends on the thickness. | 0:09:54 | 0:09:57
I can tell they're going to be amazing | 0:09:59 | 0:10:01
and they're going to smell good, too. | 0:10:01 | 0:10:03
Back from the walk of fame, Megan and Holly are hanging out. | 0:10:04 | 0:10:08
And Jack is doing me a favour - loading pictures for my blog. | 0:10:08 | 0:10:11
And I'm carrying on cooking. | 0:10:13 | 0:10:15
I really do like having my food served well. | 0:10:18 | 0:10:22
I try to make it look clever, rather than posh. | 0:10:22 | 0:10:25
Now I'm just going to take some photos for my blog. | 0:10:25 | 0:10:28
I always want my food to be the best | 0:10:28 | 0:10:30
because, like everyone in my family, I'm pretty competitive. | 0:10:30 | 0:10:34
Especially with Dad about who's the top chef. | 0:10:34 | 0:10:37
My dad's food is OK, it's not as good as mine. | 0:10:37 | 0:10:39
Tilly is better at all the messy, fun food. | 0:10:39 | 0:10:42
My food is a bit more fun, a bit more easy going. | 0:10:42 | 0:10:45
My dad's food is very posh and perfect. | 0:10:45 | 0:10:49
One last thing to do for our | 0:10:49 | 0:10:50
celebration meal, our favourite treat. | 0:10:50 | 0:10:53
My brother, Jack, is a bit of a practical joker, | 0:10:54 | 0:10:57
so he loves whoopee cushions. | 0:10:57 | 0:10:59
But my favourite things are whoopie pies. | 0:11:01 | 0:11:04
These are my Ramsay whoopies. | 0:11:04 | 0:11:07
First, I'm going to start by putting my butter in. | 0:11:07 | 0:11:10
I'm beginning by making a really easy cookie dough. | 0:11:10 | 0:11:13
Mix butter and brown sugar and cream them together. | 0:11:13 | 0:11:17
Then, add vanilla extract, an egg and melted chocolate. | 0:11:17 | 0:11:22
I really like chocolate, probably not as much as my brothers | 0:11:22 | 0:11:26
and sisters though. | 0:11:26 | 0:11:27
It's really sticky and hard and it's in my eyes. | 0:11:27 | 0:11:29
Next, tip in cocoa powder, flour, baking powder and chocolate chips. | 0:11:33 | 0:11:39
These are always my favourite cos I love milk chocolate | 0:11:39 | 0:11:42
and white chocolate. Then slowly add them in, it smells amazing. | 0:11:42 | 0:11:46
Cookie dough mixed, now simply wrap in clingfilm and chill in the fridge. | 0:11:47 | 0:11:51
Once the cookie dough is firm, cut, ready to bake. | 0:11:53 | 0:11:56
-Jack, what are you doing? -That's delicious, good luck. | 0:12:00 | 0:12:04
See you soon. | 0:12:04 | 0:12:06
They're going in for 20-30 to minutes. | 0:12:06 | 0:12:09
When the cookies are done, leave them to cool, but keep them safe. | 0:12:09 | 0:12:13
No, Dad, no, you can't eat it, I've got just enough to make | 0:12:13 | 0:12:17
it into sandwiches. | 0:12:17 | 0:12:19
SHE HICCUPS | 0:12:19 | 0:12:21
Right, Jack, get a leg, hold her upside down. | 0:12:21 | 0:12:24
Hit her on the back, 1, 2, 3. | 0:12:24 | 0:12:28
Are the hiccups gone yet? Look behind you. Oh, Jesus. | 0:12:28 | 0:12:33
I did check up on her, she tripped up. | 0:12:33 | 0:12:36
Get rid of your family and add the ice cream filling. | 0:12:36 | 0:12:40
Right, that's it. They look really nice. | 0:12:40 | 0:12:42
Then gently put them on the tray. | 0:12:43 | 0:12:46
I'm taking these pictures again. | 0:12:46 | 0:12:49
Time for dinner. I hope everyone likes it. | 0:12:55 | 0:12:57
Who's ready for their burgers? | 0:12:57 | 0:13:02
-Dad always checks his food. -Delicious. | 0:13:02 | 0:13:05
Yay, fries. Tilly, the inside on these burgers look incredible. | 0:13:06 | 0:13:11
-Cheeseburgers! -Look how juicy that is, get in there, my son. | 0:13:11 | 0:13:16
I'm getting excited and nervous. | 0:13:16 | 0:13:19
Excited they taste good, nervous I'm out of a job. | 0:13:19 | 0:13:22
-Marks out of ten for the burger. -Nine. -(Don't go straight to nine.) | 0:13:24 | 0:13:27
-Megan's going to stick with dad. -Seven, Holls? -Eight. -Mum? -Ten. | 0:13:27 | 0:13:33
Oh, come on. | 0:13:35 | 0:13:37
-Who's excited for dessert? -Ramsay whoopie pies, right? | 0:13:39 | 0:13:44
-These are seriously an LA treat, aren't they? -Can we have a vote? | 0:13:44 | 0:13:48
Who would like Tilly to keep cooking across the holidays. | 0:13:48 | 0:13:50
ALL: Me. | 0:13:50 | 0:13:52
After cooking, I love have a serious foodie chat with my dad, | 0:13:54 | 0:13:58
to get his advice. He can be helpful, sometimes. | 0:13:58 | 0:14:02
How you feeling? | 0:14:02 | 0:14:03
-Tired? -Yeah, I'm still a bit jet-lagged. | 0:14:03 | 0:14:06
Do you know, in a chef's world, | 0:14:06 | 0:14:08
when you get home and you feel tired, that means that you've worked hard. | 0:14:08 | 0:14:12
-Did you like the burgers? -I loved the burgers. | 0:14:12 | 0:14:15
I've got some pictures of them when they were first done. | 0:14:15 | 0:14:18
They're beautiful. | 0:14:19 | 0:14:20
If you want to make it a little bit lighter, | 0:14:20 | 0:14:22
you could puree onions, carrots and run them through there. | 0:14:22 | 0:14:25
Those burgers were good and do you know what? | 0:14:25 | 0:14:27
The exciting part was that fresh lettuce in there as well. | 0:14:27 | 0:14:30
