Hi, this is my life.
-'I love cooking.'
-They smell amazing.
'My dad's a chef...
..but I think I'm already better than him.'
My name is...
But people usually call me...
She wears the trousers and is the only one Dad's afraid of.
I am not kissing you when you're like that.
Big sister Megan.
She's all grown-up now and crazy to get on with life.
He's so good at sport, he's going to be playing for Britain soon.
She is determined to be the greatest fashion designer of her generation.
Even though he's hard on the outside,
he's soft and mushy on the inside.
And he's...quite a good cook, too.
Er, excuse me? How about "very"? Matilda?
-When you're the youngest, you have to fight to get noticed.
So that's why I love to...
-This is my world.
-A little kiss, please.
'My crazy family and I have been spending the summer in Los Angeles.'
'And we're having the time of our lives.
'We're trying loads of new stuff and we're loving every second.
'But the icing on the cake is all the exciting food I'm cooking -
'and I've been adding some pictures to my food blog,
'so that everyone back home can see what I'm up to.
Today, I'll be snapping my all-American chilli,
my Californian cornbread
and my magical meringues.
It's the kind of American feast you'd expect Wild West cowboys
and American superheroes to eat.
Perfect for the adrenaline-fuelled day we've got planned.
Today, we're going totally daredevil,
with an amazing zip line on Catalina Island.
It's going to be fast, furious and thrilling.
Mum and my sisters get a bit nervous,
Jack loves extreme sports, and Dad...
Well, he thinks he's the bravest of all, but I know I am.
But the question is...
My first adventurous dish is chilli.
..is a real Ramsay family favourite.
Jack likes it with lots of cheese on top.
Megan likes it with sour cream, Holly with spring onions
and I like all of them.
First, fry onions in oil till they all go softer,
but let your adults know you're going to do this.
Then, it's crushed garlic. You do it straight into the pan.
Add minced beef and spices.
Then you need to wait for it to go brown.
That's when you know it's ready.
It's really simple.
Add kidney beans, chopped tomatoes, salt and pepper and cook for...
'Jack's always looking for an adventure.
'He's in the garden, on the hunt for lizards and snakes.
'I'm going to give him a hand.'
Here we have Wilderness Explorer Tilly...
..and she is about to be going under the bushes.
-Titch, I know the perfect spot for lizards.
-I'll show you.
I'll come with you.
I think under the umbrella.
'Oh, I see a wiggle of wildlife!'
-No, there's just a worm.
'No crazy creatures yet. I'll leave Jack to it
'and be back to search for more later.'
'In the kitchen, my chilli is cooked and looking great.'
-Bubbling away nicely.
-Ooh, that smells nice.
Can I have a little taste?
That is really good.
Generous helping of cheese.
Oh, wow. That looks really beautiful.
'Chilli is super easy and totally tasty -
'perfect for an adrenaline-fuelled day.
'Time to snap it.'
-Made by me.
'Back in the garden, and danger's lurking.'
This tarantula in the pool is massive.
-No, it'll be fine, look.
TILLY YELPS Come here, Tills.
'Tarantulas have big fangs and look scary...' Stop it!
'..but their venom is no worse than a bee sting.'
Right, let's put him back safe over there, shall we? Big and beautiful.
-Don't put him back in the grass.
-Where else are we going to put him?
Over there, over the mountain!
'This is a Californian Black tarantula.
'For some reason, they love hanging out in pool filters.
'Imagine finding something like that in your plughole at home.'
I'm cooking in that bowl!
It is beautiful. Go on.
It jumped! TILLY YELPS
He is happy.
I'm going back to the safety of the kitchen.
Americans love cornbread
and, I have to admit, it's pretty good.
First, add two eggs and buttermilk.
Buttermilk is a lot thicker than normal milk,
which I'm going to add in now.
Give a whisk, add baking powder,
then a real American ingredient...
But you can get it in our supermarkets.
This is dried out and ground-up sweetcorn,
so that is why they call it "cornbread".
Next, add flour and sugar, then pour it into an ovenproof dish.
Smells a bit like a cake mix.
That'll bake for about...
It's been around 20 minutes,
but I'm still going to do the knife check.
And if it comes out clean, like this...it's done.
Remember, the dish will be very hot.
I'm going to chop it into little squares,
because that's how they have it here.
To make this even tastier,
I'm using butter mixed with honey.
You just wipe it over the top. Mmm.
It was quick, simple and tastes delicious!
He just scared the life out of me!
Dad, go away!
I think Dad's got "daredevil" confused with "silly devil".
Dad, go away!
Right, once is enough!
Come on, let's get in.
Stay there a second.
Thank you. Where are you going?
-I'd better taste this.
That is delicious.
..otherwise you get a face like mine!
-Let's sneak upstairs...
-..And scare Mummy!
-..and scare Mummy!
Creeping up on Mum is extremely daring.
THEY ROAR AND SNARL
What an improvement!
I could have been standing here with no clothes on.
All right, Tills. Come on.
I have to say, Tilly, that is a really cool mask.
Come on, stop messing around. Let's go. Back to work.
I've got one more dish for our lunch
before daredevil day out.
This is the world's most perfect sandwich,
made out of magic meringues and lemon curd.
I love meringues. They're probably one of my favourite things to bake.
First, separate the egg white and yolk.
Toss it to that one and let it come down.
Toss it to that one...
Hopefully, you want to get as little yolk as possible,
otherwise it won't get as stiff as you want it.
Next, whisk it up.
There's not a lot of work, so you can just sit back and relax.
When it's stiff, add the sugar.
Nice and shiny.
To test if it's done,
you have to hold it over your head -
and if it doesn't fall out, then you're done.
I think it's most definitely done.
Now, spoon the mixture onto a tray lined with baking paper.
These ones are going to be nice and gooey.
Pop them in the oven for...
..and then you need to turn the oven off
and leave them in for at least an hour, to dry out.
Now, the meringues are ready to finish off.
Here is the lemon curd and some raspberries.
You can buy or make lemon curd and it's super yummy.
Wow, these are extremely light.
Smother the bumpy side of the meringues in lemon curd.
Lemon curd is...
It's really delicious.
Next, add raspberries. Sandwich it on.
Then dip a raspberry in, stick it on the top
and it looks like it's wearing a hat.
They're perfect and just what we need
before our day of extreme sport adventure.
Come on, everyone.
'My lunch is ready, but Dad's got to go to work,
'so I've packed a portion for him.'
Chives and cheese, cornbread...
'Everyone's so excited about going on the zip wire,
'they're zipping through lunch.'
I waited ages to have chilli and cornbread and it's just so nice.
Probably my favourite dish ever.
-It's just a little bit healthy with the raspberries.
-And the lemon. Thank you, Tilly.
-Thank you so much.
'Finally, it's time for us to head out to our zip wire adventure.
'Dad couldn't miss out on this.'
I've never been on a helicopter before.
'The excitement starts right away, with a chopper ride.
'The zip wire is up in the mountains of Catalina Island,
'which is just over 22 miles off the coast -
'but a world away from the busyness of LA.
'It's where you come for an extreme sports adventure.
'We're heading up to the highest ridge,
'but there's only one way to get down.'
Right, who's going first?
-Go on, Dad!
-'Of course, it's the number one Ramsay daredevil.'
-Go on, Dad!
'Then, it's Jack.
'Then, big sister Megan.'
-Come on, Meg!
-Go on, Meg!
I think it's amazing. I can't wait.
'Someone else is not so sure.'
Come on, Holly!
'Holly's got a fear of heights and we are 200 metres off the ground.'
One, two, three... Go on. Come on, my darling.
Imagine you're in a dream.
You shut your eyes and you're on a nice comfy bed...
'My pep talk didn't work.
'Holly's decided to keep her feet firmly on the floor.'
Thank goodness I've got one sensible daughter, OK?
It doesn't matter in the slightest.
'I'm definitely not the sensible one!
'It's so fast, you can get up to speeds of 45mph.'
They're absolutely crazy.
'But it's not over yet -
'and we've got four more zip wires to get to the bottom.
'The longest run is over 300 metres...
'..and we'll have travelled almost a mile by zip wire
'when we finally get to the bottom.'
-How many more after this?
They're not as scared as most people are. They're a brave bunch.
Ah! My butt!
-My bum hurts.
-Yeah, so does mine. Come on, Jack. Let's go.
It's kind of scary, when you're jumping off -
but then, I was like, wow!
It was so cool.
'It's been an amazing day.
'Dad's pretty good on a zip wire
'and he's not bad in the kitchen, either.
'I want to catch up about the lunch I packed him.'
-So, Dad - how was it today?
-That was scary.
-Did you like the chilli and cornbread?
-Chilli was perfect.
Do you know what it did? It put fire in my belly.
But for me, what did it was that honey butter.
The cornbread, the honey butter
for breakfast in the morning would be delicious.
Those magic meringues were just stunning.
-So, I wonder if we have an answer to the big question.
Do you get more scared before the daredevil act,
or during the daredevil act?
I think you get more scared at the beginning
and you get more scared for the first 15 seconds.
So, you get scared twice.
Yeah, but mainly, it's just before you do it, I think.
It's that split-second, like a bungee jump. Oh!
But there's something exciting happening down there,
cos I've just gone and bought it.
-Do you know what it is?
-It's a kayak.
And it seats three, because one day,
if you happen to come here with your...
Oh, Dad, I'm really tired. I think I need to go home.
-But normally, two of you can fit in the kayak...
Now I know there's three of you... Tilly?
Wow - what an experience!
Time to fly home.
And after all those zip wires,
us daredevils just want to catch some Zs.
Is everyone tired out after today?
-Guys, good night.
