Even though he's hard on the outside,

he's soft and mushy on the inside.

And he's...quite a good cook, too.

Today, I'll be snapping my all-American chilli,

my Californian cornbread

and my magical meringues.

It's the kind of American feast you'd expect Wild West cowboys

and American superheroes to eat.

Really delicious.

Perfect for the adrenaline-fuelled day we've got planned.

Today, we're going totally daredevil,

with an amazing zip line on Catalina Island.

It's going to be fast, furious and thrilling.

Mum and my sisters get a bit nervous,

Jack loves extreme sports, and Dad...

Ironman Daddy!

Well, he thinks he's the bravest of all, but I know I am.

But the question is...

My first adventurous dish is chilli.

..is a real Ramsay family favourite.

Jack likes it with lots of cheese on top.

Megan likes it with sour cream, Holly with spring onions

and I like all of them.

First, fry onions in oil till they all go softer,

but let your adults know you're going to do this.

Then, it's crushed garlic. You do it straight into the pan.

Add minced beef and spices.

Then you need to wait for it to go brown.

That's when you know it's ready.

It's really simple.

Add kidney beans, chopped tomatoes, salt and pepper and cook for...

'Jack's always looking for an adventure.

'He's in the garden, on the hunt for lizards and snakes.

'I'm going to give him a hand.'

This tarantula in the pool is massive.

'..but their venom is no worse than a bee sting.'

'This is a Californian Black tarantula.

'For some reason, they love hanging out in pool filters.

'Imagine finding something like that in your plughole at home.'

I'm cooking in that bowl!

I'm going back to the safety of the kitchen.

Americans love cornbread

and, I have to admit, it's pretty good.

First, add two eggs and buttermilk.

Buttermilk is a lot thicker than normal milk,

which I'm going to add in now.

Give a whisk, add baking powder,

then a real American ingredient...

But you can get it in our supermarkets.

This is dried out and ground-up sweetcorn,

so that is why they call it "cornbread".

Next, add flour and sugar, then pour it into an ovenproof dish.

Smells a bit like a cake mix.

That'll bake for about...

It's been around 20 minutes,

but I'm still going to do the knife check.

And if it comes out clean, like this...it's done.

Remember, the dish will be very hot.

Wow.

I'm going to chop it into little squares,

because that's how they have it here.

To make this even tastier,

I'm using butter mixed with honey.

You just wipe it over the top. Mmm.

Yum.

It was quick, simple and tastes delicious!

I've got one more dish for our lunch

before daredevil day out.

This is the world's most perfect sandwich,

made out of magic meringues and lemon curd.

I love meringues. They're probably one of my favourite things to bake.

First, separate the egg white and yolk.

Toss it to that one and let it come down.

Hopefully, you want to get as little yolk as possible,

otherwise it won't get as stiff as you want it.

Next, whisk it up.

There's not a lot of work, so you can just sit back and relax.

When it's stiff, add the sugar.

Whoo-hoo!

Nice and shiny.

To test if it's done,

you have to hold it over your head -

and if it doesn't fall out, then you're done.

I think it's most definitely done.

Now, spoon the mixture onto a tray lined with baking paper.

These ones are going to be nice and gooey.

Pop them in the oven for...

..and then you need to turn the oven off

and leave them in for at least an hour, to dry out.

Now, the meringues are ready to finish off.

Here is the lemon curd and some raspberries.

You can buy or make lemon curd and it's super yummy.

Wow, these are extremely light.

Smother the bumpy side of the meringues in lemon curd.

Lemon curd is...

It's really delicious.

Next, add raspberries. Sandwich it on.

Then dip a raspberry in, stick it on the top

and it looks like it's wearing a hat.

They're perfect and just what we need

before our day of extreme sport adventure.

Come on, everyone.

'My lunch is ready, but Dad's got to go to work,

'so I've packed a portion for him.'

'Everyone's so excited about going on the zip wire,

I waited ages to have chilli and cornbread and it's just so nice.

Probably my favourite dish ever.

I've never been on a helicopter before.

'The excitement starts right away, with a chopper ride.

'The zip wire is up in the mountains of Catalina Island,

'which is just over 22 miles off the coast -

'but a world away from the busyness of LA.

'We're heading up to the highest ridge,

'but there's only one way to get down.'

They're not as scared as most people are. They're a brave bunch.

It's kind of scary, when you're jumping off -

but then, I was like, wow!

It was so cool.

I think you get more scared at the beginning

and you get more scared for the first 15 seconds.
