The Concert Matilda and the Ramsay Bunch

It's great to be back. My name is Matilda.

I'm crazy about cooking...

Deliciousness! Om nom!

..mad to mess about...

..and I've got the most embarrassing family ever.

ALL: Says who?

-Is it true you have a boyfriend?

-WHAT?

TILLY LAUGHS

I didn't use your recipe!

-Dad's a chef.

-Matilda, where's my frying pan? Please!

But I've taken over the kitchen in this house.

-What are you doing?

-I'm looking for a frying pan.

Tilly rules, OK?

-No!

-They're not for you!

-Oh, come on! One for me? Please?

We're in Los Angeles, the music capital of America.

Which is brilliant because us Ramsays love our music.

Almost as much as I love cooking and updating my food blog.

Everyone's really excited today because we're going to find out

what it's like to be backstage with famous rock stars.

We're meeting the Vamps. And in return for me cooking them dinner

they're going to show us what it takes to

put on a massive concert. So the big question is...

You may have guessed, I'm a massive Vamps fan.

But I'm not the only one around here.

-Jack, are you excited for tonight?

-Yeah, I am, actually.

-I'm excited.

-I think everyone's excited.

-It should be good.

Yeah, it should be really fun.

I'm cooking everyone a special dinner before tonight's concert.

Delicious pulled chicken lettuce

wraps, rocking Ramsay rice balls,

and my glitzy microphone cake pops.

CROWD CHEERS Hello, Los Angeles!

So I'd better get rocking with my first dish.

I love cooking food that everyone can tuck into and share.

For this dish, everyone helps themselves

and makes their own wraps.

It's much more fun that way. This dish is really easy.

'First, crush garlic.'

There we go. Doing this just releases all the flavours and makes

the chicken nice and garlicky.

Next, salt.

DING!

And then two tablespoons of sesame oil. It's a really yummy flavour.

So I'm now just going to mix this all up.

It feels slimy.

'And, of course, you know to wash your hands after handling raw meat.'

This is now going to go in a hot oven for about 20 to 30 minutes.

'Once it's cooked, wait for the chicken to cool down

'and then pull it into pieces.'

You shred it because it'll fit in the wraps really easily.

This is very messy work.

Hello, darling, who are you cooking for? The Vampires?

BUZZER SOUNDS

-Is that what they're called?

-No, the Vamps.

OK, I'll see you later, and Tilly, don't forget to...what?

'Mum hates any kind of mess.'

I always get told off for not cleaning up.

'It's important, but very dull.'

'Next, hoisin sauce and then some soy sauce.'

So the sauce is getting a bit of a Chinesey flavour.

'Some rice wine vinegar...'

Mm. It smells really good right now.

'Grate some fresh ginger and then chopped coriander.'

Everyone in my family loves coriander.

You can add as much as you'd like depending on how you like it.

'So I'm doing loads.'

This is also going to make it look a lot nicer.

'Water chestnuts for crunch and chopped spring onions.'

Wow, so this looks delicious.

'Use the lettuce leaves as wraps.'

And then put on some dried crunchy noodles and then a squeeze of lime.

I know Jack will love having lots of chilli sauce on his,

so I'll put some on this one.

This chicken's going to look great on my blog.

Do you like, though, standing on a stage with thousands

and thousands of people screaming for you?

I would love it.

And I bet these would be his favourite food.

These rice balls are so easy and so delicious.

'Chop some spring onions.'

You have to be really careful

when you're cutting, especially if you're using a big knife.

Perfect, that should be enough.

'Add to cooked brown rice.'

This is just dried-out seaweed. I love this seaweed.

Brown rice is healthier

and the Vamps are very into being healthy.

'A pinch of salt, and roll into balls.'

'Next, sesame seeds.'

You could just use white or you could just use black

but I like using them both.

'Then roll.'

This gives them a nice flavour and now they're not sticky to pick up.

These are going to be brilliant for the concert.

I'm going to get some pictures for my blog.

Meg and Jack are still banging on about boybands.

Wait, so if you were in a boyband what would you see yourself doing?

-Would you be the singer? Actually no, you can't sing.

-Yeah, I can!

Would you be like the guitar player, the drum player...

The guitar player, I'd be the guitar player.

-Would you do a bit of singing?

-I could do those guitar jumps as well.

The whole house is getting into the rock and roll vibe

and Dad thinks rock and rollers do crazy stuff like bringing

their motorbikes into the house just for the sake of it.

-Mum is going to be so angry.

-She's not going to be...

HE LAUGHS

-She's not going to know.

-Mum is going to kill you.

Come on!

'Does he really think this is cool?'

Dear, oh dear!

-Tilly made me do it.

-Dad!

-Mum is going to be so angry.

-Mummy won't know.

-She's going to be back in half an hour.

She's going to freak.

If you don't want us to tell Mum, we need some pocket money.

'Blackmail. Nice one, Meg.'

-I would really like some new shoes.

I would love some new football boots.

So we're going to have to come up with a deal to keep this quiet.

'Dad doesn't want to bribe us so he's changing the subject.'

-Are you serving these to the Vamps?

-Yep.

-Right. Is Vamps short... Are they vampires?

-No, the Vamps.

Yeah, but is it short for vampires?

-No. The Vamps.

-How do they look?

-On a scale of 1 to 10?

-Would you like me to just draw you a picture?

Come on, how good-looking are they?

Oh. He needs a haircut.

Ooh, he needs a haircut and he looks like he's been stuck up a drain.

'Ooh, jealousy gets you nowhere, Dad.'

Before Mum gets home and goes bananas, I'm finishing off cooking.

I wanted to make something special for the Vamps

so I've come up with the ultimate pop star pudding.

Microphone cake pops. I hope they like them.

First I'm going to start by

crumbling up this plain chocolate sponge cake.

'Add some chocolate spread.'

This is to help the cake crumbs stick together.

So I can make little balls out of it

and then that'll be like the top bit of the microphone.

'Get stuck in.'

So, you want it to be big enough to

fit in the top of the cone and look like a microphone.

'Put them in the fridge to chill.'

Dad knows Mum will kill him

if she sees his motorbike indoors, so he's moving it.

Welcome to the madhouse.

But he's driven it back across the lawn. I bet she'll notice that.

'Dip the microphones in chocolate and then add rock

'and roll sugar sprinkles.'

Adding these are the final touches

that make them look brilliant and shiny.

It really does look like a microphone.

-and then you put some chicken in.

-noodles and then some lime and then chilli sauce if you like it.

JACK: So what sort of normal food do you eat on tour?

-All fast food?

-No, no. these guys have fast food.

I like stuff like this, man.

-Is your dad is scary as he is on the screen?

Is it scary, though, doing all these kind of shows in front

-of lots of people?

-It's awesome.

-BRAD:

-It's really fun.

We still get a bit nervous but we just try and enjoy the gigs.

So, what kind of top tips have you guys

got for becoming a musician?

Obviously you've got to, like,

enjoy it and love what you're doing.

And that's applicable to, like, anything but if it's music then

practise and then just work hard, really.

To actually, like, have this type of food is a blessing.

-So nice, thank you.

-And just be the catering.

-Yeah, yeah.
