It's great to be back. My name is Matilda.

0:00:020:00:05

ALL: Tilly!

0:00:050:00:06

But people call me "Tilly."

0:00:060:00:09

-Tilly, flat!

-Tilly!

0:00:090:00:11

I'm crazy about cooking...

0:00:110:00:14

Mmm!

0:00:140:00:15

Deliciousness! Om nom!

0:00:150:00:17

..mad to mess about...

0:00:170:00:19

..and I've got the most embarrassing family ever.

0:00:220:00:25

ALL: Says who?

0:00:250:00:26

-Is it true you have a boyfriend?

-WHAT?

0:00:260:00:29

TILLY LAUGHS

0:00:290:00:30

Says who?

0:00:300:00:31

I didn't use your recipe!

0:00:310:00:33

-Dad's a chef.

-Matilda, where's my frying pan? Please!

0:00:330:00:37

But I've taken over the kitchen in this house.

0:00:370:00:39

-What are you doing?

-I'm looking for a frying pan.

0:00:390:00:41

Tilly rules, OK?

0:00:410:00:43

-No!

-What?

-They're not for you!

0:00:430:00:45

-Oh, come on! One for me? Please?

-No.

0:00:450:00:47

We're in Los Angeles, the music capital of America.

0:00:530:00:56

Which is brilliant because us Ramsays love our music.

0:00:560:01:00

Almost as much as I love cooking and updating my food blog.

0:01:000:01:04

Everyone's really excited today because we're going to find out

0:01:040:01:08

what it's like to be backstage with famous rock stars.

0:01:080:01:11

We're meeting the Vamps. And in return for me cooking them dinner

0:01:120:01:16

they're going to show us what it takes to

0:01:160:01:18

put on a massive concert. So the big question is...

0:01:180:01:21

You may have guessed, I'm a massive Vamps fan.

0:01:280:01:30

But I'm not the only one around here.

0:01:300:01:33

-Jack, are you excited for tonight?

-Yeah, I am, actually.

-I'm excited.

0:01:330:01:36

-I think everyone's excited.

-It should be good.

0:01:360:01:38

Yeah, it should be really fun.

0:01:380:01:40

I'm cooking everyone a special dinner before tonight's concert.

0:01:400:01:44

Delicious pulled chicken lettuce

0:01:440:01:46

wraps, rocking Ramsay rice balls,

0:01:460:01:49

and my glitzy microphone cake pops.

0:01:490:01:51

CROWD CHEERS Hello, Los Angeles!

0:01:510:01:53

So I'd better get rocking with my first dish.

0:01:540:01:57

I love cooking food that everyone can tuck into and share.

0:02:000:02:03

For this dish, everyone helps themselves

0:02:030:02:06

and makes their own wraps.

0:02:060:02:08

It's much more fun that way. This dish is really easy.

0:02:080:02:12

'First, crush garlic.'

0:02:120:02:15

There we go. Doing this just releases all the flavours and makes

0:02:150:02:20

the chicken nice and garlicky.

0:02:200:02:23

Next, salt.

0:02:230:02:24

DING!

0:02:240:02:26

And then two tablespoons of sesame oil. It's a really yummy flavour.

0:02:260:02:30

So I'm now just going to mix this all up.

0:02:300:02:32

It feels slimy.

0:02:340:02:35

'And, of course, you know to wash your hands after handling raw meat.'

0:02:390:02:43

This is now going to go in a hot oven for about 20 to 30 minutes.

0:02:430:02:46

'Once it's cooked, wait for the chicken to cool down

0:02:490:02:52

'and then pull it into pieces.'

0:02:520:02:54

You shred it because it'll fit in the wraps really easily.

0:02:540:02:57

This is very messy work.

0:02:570:02:59

Hi, Mum.

0:02:590:03:00

Hello, darling, who are you cooking for? The Vampires?

0:03:000:03:03

BUZZER SOUNDS

0:03:030:03:05

-Is that what they're called?

-No, the Vamps.

0:03:050:03:09

OK, I'll see you later, and Tilly, don't forget to...what?

0:03:090:03:14

Save you some.

0:03:140:03:15

BUZZER SOUNDS

0:03:150:03:17

Clear up.

0:03:170:03:18

'Mum hates any kind of mess.'

0:03:180:03:21

See you later.

0:03:210:03:23

I always get told off for not cleaning up.

0:03:230:03:26

'It's important, but very dull.'

0:03:260:03:28

'Next, hoisin sauce and then some soy sauce.'

0:03:300:03:32

So the sauce is getting a bit of a Chinesey flavour.

0:03:340:03:37

'Some rice wine vinegar...'

0:03:370:03:39

Mm. It smells really good right now.

0:03:390:03:42

'Grate some fresh ginger and then chopped coriander.'

0:03:420:03:45

Everyone in my family loves coriander.

0:03:450:03:48

You can add as much as you'd like depending on how you like it.

0:03:480:03:52

'So I'm doing loads.'

0:03:520:03:53

This is also going to make it look a lot nicer.

0:03:550:03:58

'Water chestnuts for crunch and chopped spring onions.'

0:03:580:04:02

Wow, so this looks delicious.

0:04:020:04:04

'Use the lettuce leaves as wraps.'

0:04:040:04:06

And then put on some dried crunchy noodles and then a squeeze of lime.

0:04:060:04:11

I know Jack will love having lots of chilli sauce on his,

0:04:110:04:15

so I'll put some on this one.

0:04:150:04:17

This chicken's going to look great on my blog.

0:04:190:04:22

Check out my recipes and blog on the CBBC website.

0:04:220:04:25

Jack and Meg are getting into the rock and roll spirit.

0:04:270:04:29

-So, Meg?

-Yeah?

-Just on the Vamps Instagram.

0:04:290:04:32

-They've nearly got a million followers.

-Are you joking?

-No.

0:04:320:04:36

-Imagine having that many followers.

-Imagine being in a boyband.

0:04:360:04:39

I could see you in a boyband.

0:04:390:04:41

Do you like, though, standing on a stage with thousands

0:04:410:04:44

and thousands of people screaming for you?

0:04:440:04:46

I would love it.

0:04:460:04:47

And I bet these would be his favourite food.

0:04:470:04:50

These rice balls are so easy and so delicious.

0:04:520:04:56

'Chop some spring onions.'

0:04:560:04:58

You have to be really careful

0:04:580:04:59

when you're cutting, especially if you're using a big knife.

0:04:590:05:03

Perfect, that should be enough.

0:05:030:05:05

'Add to cooked brown rice.'

0:05:050:05:06

This is just dried-out seaweed. I love this seaweed.

0:05:080:05:12

Brown rice is healthier

0:05:130:05:14

and the Vamps are very into being healthy.

0:05:140:05:17

'A pinch of salt, and roll into balls.'

0:05:170:05:19

'Next, sesame seeds.'

0:05:230:05:24

You could just use white or you could just use black

0:05:240:05:27

but I like using them both.

0:05:270:05:28

'Then roll.'

0:05:300:05:32

This gives them a nice flavour and now they're not sticky to pick up.

0:05:320:05:36

These are going to be brilliant for the concert.

0:05:360:05:39

I'm going to get some pictures for my blog.

0:05:390:05:41

Meg and Jack are still banging on about boybands.

0:05:460:05:49

Wait, so if you were in a boyband what would you see yourself doing?

0:05:490:05:53

-Would you be the singer? Actually no, you can't sing.

-Yeah, I can!

0:05:530:05:55

Would you be like the guitar player, the drum player...

0:05:550:05:58

The guitar player, I'd be the guitar player.

0:05:580:06:00

-Would you do a bit of singing?

-I could do those guitar jumps as well.

0:06:000:06:03

Do it! Do it! Come on, quickly!

0:06:030:06:04

-It's just us.

-So... Go like this.

0:06:040:06:07

-And then like...

-ELECTRIC GUITAR PLAYS

0:06:070:06:09

Rock on, Jack. WOO!

0:06:090:06:11

The whole house is getting into the rock and roll vibe

0:06:110:06:14

and Dad thinks rock and rollers do crazy stuff like bringing

0:06:140:06:18

their motorbikes into the house just for the sake of it.

0:06:180:06:21

-Mum is going to be so angry.

-She's not going to be...

0:06:210:06:24

HE LAUGHS

0:06:240:06:25

-She's not going to know.

-Mum is going to kill you.

0:06:250:06:29

Come on!

0:06:290:06:31

'Does he really think this is cool?'

0:06:310:06:32

Dear, oh dear!

0:06:320:06:34

-Tilly made me do it.

-Dad!

-Mum is going to be so angry.

0:06:340:06:37

-Mummy won't know.

-She's going to be back in half an hour.

0:06:370:06:40

She's going to freak.

0:06:400:06:42

If you don't want us to tell Mum, we need some pocket money.

0:06:420:06:44

'Blackmail. Nice one, Meg.'

0:06:440:06:46

-I would really like some new shoes.

-I would really like...

0:06:460:06:49

I would love some new football boots.

0:06:490:06:51

So we're going to have to come up with a deal to keep this quiet.

0:06:510:06:54

'Dad doesn't want to bribe us so he's changing the subject.'

0:06:540:06:58

-Are you serving these to the Vamps?

-Yep.

0:06:580:07:00

-Right. Is Vamps short... Are they vampires?

-No, the Vamps.

0:07:000:07:04

Yeah, but is it short for vampires?

0:07:040:07:06

-No. The Vamps.

-How do they look?

0:07:060:07:07

-On a scale of 1 to 10?

-Would you like me to just draw you a picture?

0:07:070:07:10

Come on, how good-looking are they?

0:07:100:07:12

Oh. He needs a haircut.

0:07:120:07:13

Ooh, he needs a haircut and he looks like he's been stuck up a drain.

0:07:130:07:16

'Ooh, jealousy gets you nowhere, Dad.'

0:07:160:07:19

Before Mum gets home and goes bananas, I'm finishing off cooking.

0:07:210:07:25

I wanted to make something special for the Vamps

0:07:250:07:28

so I've come up with the ultimate pop star pudding.

0:07:280:07:31

Microphone cake pops. I hope they like them.

0:07:310:07:34

First I'm going to start by

0:07:360:07:37

crumbling up this plain chocolate sponge cake.

0:07:370:07:40

'Add some chocolate spread.'

0:07:430:07:45

This is to help the cake crumbs stick together.

0:07:450:07:49

So I can make little balls out of it

0:07:490:07:50

and then that'll be like the top bit of the microphone.

0:07:500:07:53

'Get stuck in.'

0:07:530:07:54

So, you want it to be big enough to

0:07:560:07:58

fit in the top of the cone and look like a microphone.

0:07:580:08:01

'Put them in the fridge to chill.'

0:08:030:08:05

Dad knows Mum will kill him

0:08:060:08:08

if she sees his motorbike indoors, so he's moving it.

0:08:080:08:11

Welcome to the madhouse.

0:08:110:08:13

But he's driven it back across the lawn. I bet she'll notice that.

0:08:130:08:17

'Dip the microphones in chocolate and then add rock

0:08:200:08:23

'and roll sugar sprinkles.'

0:08:230:08:24

Adding these are the final touches

0:08:240:08:26

that make them look brilliant and shiny.

0:08:260:08:28

It really does look like a microphone.

0:08:280:08:31

CROWD SCREAMS 'Rock on!'

0:08:310:08:33

-They look nice, Tills.

-Thank you.

-What are they?

0:08:330:08:37

They are microphone cakes.

0:08:370:08:39

Oh, for the Vampires?

0:08:390:08:40

-For the Vamps?

-At last!

0:08:400:08:43

They look great. Feel like a little sing-song. Shall we do a little duo?

0:08:440:08:47

-No, you can do a solo.

-Solo- Oh.

0:08:470:08:50

# Born to be wild! #

0:08:500:08:53

SIRENS

0:08:530:08:55

-Thank you, by the way!

-No!

0:08:550:08:57

-What? What?

-They're not for you!

0:08:570:09:00

-Aw, come on. One for me, please?

-No.

-I share my stuff with you.

0:09:000:09:04

No, you don't.

0:09:040:09:06

I need to take a picture for my blog before they all get eaten.

0:09:060:09:09

With the food packed, we're going Downtown LA.

0:09:210:09:24

I can't wait to meet the band. Woo!

0:09:250:09:28

Ah, hello. How are you doing?

0:09:300:09:32

-Are you OK? Nice to see you.

-How's it going, mate?

-Hi.

0:09:320:09:35

'Wow, I've cooked for the mega-famous Vamps.

0:09:370:09:39

'I hope they're going to like it.'

0:09:390:09:42

-Great.

-Wow.

-OK, so, yeah, you've got lettuce like cups

0:09:420:09:45

-and then you put some chicken in.

-Oh, yeah?

0:09:450:09:48

And then you put some dried crunchy

0:09:480:09:49

-noodles and then some lime and then chilli sauce if you like it.

-OK.

0:09:490:09:53

-Thank you very much.

-This is amazing. Oh, thanks.

0:09:530:09:56

JACK: So what sort of normal food do you eat on tour?

0:09:560:09:59

-All fast food?

-No, no. these guys have fast food.

0:09:590:10:02

I like stuff like this, man.

0:10:020:10:04

This is awesome.

0:10:040:10:05

Oh, that is amazing.

0:10:050:10:07

-Is your dad is scary as he is on the screen?

-No!

0:10:070:10:11

-MEG:

-He's like a big kid. He just messes around.

0:10:110:10:13

Dad was on a motorbike in the kitchen this morning.

0:10:130:10:16

-He brought the motorbike in!

-He brought the motorbike in.

0:10:160:10:19

CONNOR LAUGHS

0:10:190:10:20

Is it scary, though, doing all these kind of shows in front

0:10:200:10:23

-of lots of people?

-It's awesome.

-BRAD:

-It's really fun.

0:10:230:10:26

We still get a bit nervous but we just try and enjoy the gigs.

0:10:260:10:29

So, what kind of top tips have you guys

0:10:290:10:31

got for becoming a musician?

0:10:310:10:32

Obviously you've got to, like,

0:10:320:10:34

enjoy it and love what you're doing.

0:10:340:10:36

And that's applicable to, like, anything but if it's music then

0:10:360:10:39

practise and then just work hard, really.

0:10:390:10:42

To actually, like, have this type of food is a blessing.

0:10:420:10:45

-So nice, thank you.

-Thank you very much.

-It's all right.

0:10:450:10:47

-You need to come on tour...

-And just be the catering.

0:10:470:10:51

-Yeah, yeah.

-Definitely.

-Love to.

0:10:510:10:53

'And they haven't even had my microphone cake pops yet!'

0:10:530:10:56

-That looks so good!

-Oh, wonderful.

0:10:560:10:58

-Cheers.

-Cheers, everyone.

-Just like a real microphone.

0:10:580:11:01

ALL: Yeah!

0:11:010:11:03

CROWD CHEERS

0:11:030:11:05

THEY TALK OVER ONE ANOTHER

0:11:060:11:08

So, you've done your thing.

0:11:080:11:10

Do you now want to come onto the stage?

0:11:100:11:13

-JACK: Yeah!

-Let's do it.

0:11:130:11:15

'And as I cooked dinner, I get the VIP travel option.

0:11:150:11:20

'Check me out. Woohoo!'

0:11:200:11:22

So yeah, this is our stage. You're the drummer, aren't you?

0:11:250:11:28

-Yeah you've got to drum.

-Wow, thank you.

0:11:280:11:30

SHE DRUMS

0:11:330:11:34

That's so cool.

0:11:340:11:36

-ALL: Yes.

-Oh!

-Tris, you're out the band!

-That's good.

0:11:380:11:42

THEY APPLAUD

0:11:420:11:44

Does anyone want a go on guitar? Yeah?

0:11:460:11:50

'Go on, Jack.'

0:11:500:11:51

So, Con's really good at jumping on stage.

0:11:510:11:54

You are now a member of the Vamps.

0:12:050:12:07

CHEERING

0:12:080:12:10

# All I wanna be all I ever wanna be

0:12:110:12:13

# Yeah, yeah

0:12:130:12:15

# Is somebody to you

0:12:150:12:16

# All I wanna be all I ever wanna be

0:12:160:12:19

# Yeah, yeah

0:12:190:12:20

# Is somebody to you! #

0:12:200:12:23

Aw, yeah!

0:12:230:12:24

CHEERING

0:12:240:12:25

'There's no way the Ramsay bunch's

0:12:280:12:31

'oldest rockers were going to miss this.'

0:12:310:12:33

-GORDON:

-Hello!

0:12:330:12:35

-Oh!

-How's it going? Nice to meet you!

0:12:350:12:37

-Likewise, good to see you too. This is my wife, Tana.

-Nice to meet you.

0:12:370:12:41

So, big question, how was the food?

0:12:410:12:42

It was so good. I've eaten so much. The cake pop as well.

0:12:420:12:45

-Brilliant.

-So good.

0:12:450:12:46

-TANA:

-Have you had good fun?

-JACK: Loads of fun.

0:12:460:12:49

By the way, you, as I was leaving

0:12:490:12:51

I went outside to check something. What've you done to the garden?

0:12:510:12:54

Have you been riding your bicycle across the garden?

0:12:540:12:57

-JACK: It was you!

-He had his motorbike in the kitchen.

0:12:570:13:00

LAUGHTER

0:13:000:13:01

Good to see you, man, good luck.

0:13:030:13:06

Here we go, one, two, three.

0:13:060:13:09

'Every band does a sound check before they play a concert.'

Dad may not be a rock star but he's a brilliant chef

0:13:440:13:47

and I love our foodie chats together.

0:13:470:13:49

It was really fun today, they really enjoyed the food.

0:13:490:13:52

-Great guys, by the way. Love the music.

-Yeah.

0:13:520:13:55

So, what did they like best?

0:13:550:13:57

Because you did the rice balls, chicken,

0:13:570:13:59

and then those little desserts.

0:13:590:14:01

-Yeah. I think they probably liked the chicken the best.

-Oh, really?

0:14:010:14:04

What was the dressing inside the chicken?

0:14:040:14:06

-Hoisin sauce, soy sauce, sesame oil...

-Nice.

0:14:060:14:09

-Good, and so that was done in, like, a little lettuce cup?

-Yeah.

-Great.

0:14:090:14:13

What's those bits on top?

0:14:130:14:15

-Dried crispy noodles.

-OK.

0:14:150:14:17

What about the rice balls?

0:14:170:14:19

They went down well as well.

0:14:190:14:20

And tell me about the dessert.

0:14:200:14:22

-Oh, they loved the dessert.

-Really?

0:14:220:14:24

And they said if I want a job on the road helping them cook

0:14:240:14:27

they'd love that.

0:14:270:14:28

Well, thankfully you'll be at school for the next ten years.
