Whose kitchen are we going to today?

0:00:260:00:29

Hi, my name is Lewis. This is my house.

0:00:310:00:34

Come in.

0:00:340:00:36

-This is my mum, Jane.

-Hello.

-Hi, mum.

0:00:370:00:41

Today, I'm going to be making challah bread

0:00:420:00:45

because it's really yummy and it's really easy to make.

0:00:450:00:49

Lewis' mum, Jane, has shown him the family's very special

0:00:490:00:53

way of making chocolate challah bread which is really tasty.

0:00:530:00:57

Lewis' mum and grandparents originally come from Israel.

0:00:570:01:02

Israel is a small country in a part of the world called the Middle East.

0:01:020:01:07

Israel is mostly hot and dry in the summer but cold in the winter.

0:01:070:01:12

People in Israel eat a lot of fruit and vegetables in their food.

0:01:120:01:17

Many Israeli people love cooking at home and eating

0:01:170:01:20

dinner in a family circle with lots of different types of food.

0:01:200:01:25

Some people in Israel make a bread called challah bread

0:01:250:01:29

to eat on special days.

0:01:290:01:30

It's a sweet fluffy bread made in the shape of a plait.

0:01:300:01:35

Lewis has washed his hands, put on his apron and is ready to cook.

0:01:380:01:42

I'm going to be making my very own special chocolate challah

0:01:420:01:46

bread for my friends.

0:01:460:01:48

And he's invited George, Samuel, Amelia and Charlie to taste a

0:01:480:01:53

special ingredients before they come round for an Israeli dessert later.

0:01:530:01:57

What's that?

0:01:570:01:59

It's chocolate.

0:01:590:02:00

It doesn't taste like normal chocolate.

0:02:000:02:03

It tastes like... Erm...

0:02:030:02:05

..really strong... Urgh!

0:02:070:02:10

..disgusting dark chocolate.

0:02:100:02:12

You're right. It is dark chocolate.

0:02:130:02:16

I do like light chocolate better but this is really nice.

0:02:160:02:20

Oh, Charlie likes it.

0:02:200:02:22

It's lovely.

0:02:220:02:23

-After a while, it doesn't taste that nice.

-Oh, dear.

0:02:230:02:26

Doesn't seem everyone likes dark chocolate.

0:02:260:02:31

Don't like it.

0:02:310:02:32

Let's hope Lewis can change their minds

0:02:320:02:34

because dark chocolate makes his challah bread very tasty.

0:02:340:02:38

As well as dark chocolate, you'll need salt, water,

0:02:380:02:43

dried active yeast, honey,

0:02:430:02:46

vegetable oil, eggs, plain flour and clementines.

0:02:460:02:51

First I need to put the yeast into this jug.

0:02:520:02:58

Make sure the water is warm and add some yummy, runny honey.

0:02:580:03:02

Cover it with a clean tea towel and leave it for a while.

0:03:020:03:06

Now crack those eggs.

0:03:070:03:09

Give them a mix. Wipe your hands.

0:03:150:03:20

Then I have to put some more honey into the jug.

0:03:200:03:24

Oh, more runny honey!

0:03:240:03:26

Add a pinch of salt and when the yeast is all bubbly,

0:03:290:03:32

pour it into the flour.

0:03:320:03:34

It looks like a hot chocolate.

0:03:340:03:37

Now I'm going to add the egg as well.

0:03:380:03:42

I'm going to mix all this together until it turns into dough.

0:03:420:03:47

Now, sprinkle the worktop with flour to stop the dough sticking.

0:03:520:03:56

I'm going to pour this onto the surface.

0:03:560:03:58

Push and pull it just like this. That's called kneading.

0:04:010:04:05

Oil your bowl...

0:04:080:04:09

..pop the dough inside.

0:04:140:04:16

Cover it with a clean tea towel and leave it to rise.

0:04:160:04:21

What now, Lewis?

0:04:210:04:22

I am going to peel some clementines.

0:04:220:04:26

They go really nice with the challah bread.

0:04:260:04:30

And after you've left the dough to rise...

0:04:300:04:33

It's definitely done.

0:04:330:04:34

..tip it onto a floured worktop.

0:04:340:04:37

Squash the air out of it then roll it into a big sausage.

0:04:370:04:42

What's next, Lewis?

0:04:420:04:44

You're cutting it into three pieces.

0:04:440:04:46

I'm going to make these three pieces into sausages.

0:04:460:04:50

-Now it's time for my most important ingredient.

-What's that?

0:04:570:05:01

The chocolate.

0:05:010:05:02

Dark chocolate is made from cocoa pods that grow on the cacao tree.

0:05:020:05:07

The pods are ready to pick when they're a brown colour.

0:05:090:05:13

Some cocoa pods can grow as big as a rugby ball.

0:05:140:05:18

Inside each cocoa pod are the cocoa seeds.

0:05:190:05:22

They tastes sour when first picked

0:05:240:05:26

and nothing like the chocolate we're used to.

0:05:260:05:29

Dried cocoa seeds are sent to factories where

0:05:290:05:32

they're turned into lots of different types of chocolate.

0:05:320:05:36

What do we do next, Lewis?

0:05:360:05:38

I have to open this bag...

0:05:380:05:41

..and put all of the chocolate inside the bag.

0:05:420:05:46

Smash all of the chocolate together.

0:05:470:05:49

LOUD BANGING

0:05:510:05:52

That is so loud.

0:05:550:05:56

Now I am going to put the chocolate into the dough.

0:05:570:06:01

I'm going to hide all of the chocolate.

0:06:030:06:05

And now I'm going to connect all of these tops together

0:06:090:06:13

and then I'm going to start plaiting them.

0:06:130:06:16

I'm really pleased with this challah bread.

0:06:230:06:28

Mmm, yummy. Then brush the dough with beaten egg.

0:06:280:06:31

It makes it go more shiny and it makes it look better.

0:06:310:06:36

Now ask a grown-up to pop it in the oven for you. Mum?

0:06:360:06:41

Now, if you want to make Lewis' chocolate challah bread,

0:06:410:06:45

first add the dry active yeast to warm water.

0:06:450:06:48

Add some runny honey then cover it with a clean tea towel

0:06:480:06:54

and leave it in a warm place.

0:06:540:06:56

Now crack your eggs into a jug...

0:06:560:06:59

..add more runny, yummy honey,

0:07:010:07:04

a pinch of salt and give it a good mix.

0:07:040:07:08

Uncover the yeast mixture when it's gone bubbly

0:07:100:07:13

and pour it into a bowl of flour.

0:07:130:07:17

At the eggy mixture and mix it all together

0:07:180:07:23

until it turns into a dough.

0:07:230:07:25

Tip the dough onto a floured worktop then start to push

0:07:250:07:30

and pull the dough until it's smooth, just like this.

0:07:300:07:35

Next, brush a bowl with oil and pop the dough into it.

0:07:370:07:41

Cover it with a clean tea towel and leave it to rise in a warm place.

0:07:410:07:47

Put the dark chocolate into a food bag

0:07:480:07:51

and bash it with a rolling pin till it goes into small pieces.

0:07:510:07:55

When the dough has risen, tip it onto a floured worktop then

0:07:570:08:03

push and pull it again to get all the air out.

0:08:030:08:06

This might take a few minutes.

0:08:060:08:08

Then roll it into a big sausage shape and cut it into three pieces.

0:08:080:08:14

Roll each piece into smaller sausages

0:08:150:08:18

and push your chocolate into each sausage, hiding it in the dough.

0:08:180:08:23

Then squeeze the three sausages together at one end

0:08:250:08:29

and cross each sausage until you get to the end.

0:08:290:08:33

This little trick is called plaiting.

0:08:380:08:40

Then squeeze the ends together just like this.

0:08:400:08:44

Now brush more beaten egg on top of the loaf

0:08:460:08:50

and lift it onto greaseproof paper on a baking tray.

0:08:500:08:54

Then ask a grown-up to put it into the oven for you.

0:08:540:08:57

Don't forget to peel and divide clementines into segments.

0:08:570:09:02

They go very well with the cooked chocolate challah bread.

0:09:020:09:06

Now there's just enough time for Lewis to get the table ready.

0:09:060:09:10

In Israel, they grow lots of fruits,

0:09:100:09:13

so I'm decorating the table with them.

0:09:130:09:16

We always drink grape juice with the challah bread

0:09:170:09:20

because it makes the bread taste even nicer.

0:09:200:09:24

DOORBELL RINGS

0:09:240:09:25

-My friends.

-Well done, Lewis.

0:09:260:09:29

Your fruity Israeli-themed table looks brilliant.

0:09:290:09:32

-ALL:

-Hi.

-Come in.

0:09:320:09:35

Everyone's washed their hands and they're ready to eat.

0:09:370:09:41

Here comes Mum with that cooked bread.

0:09:410:09:43

I've made this special Israeli dish you to try.

0:09:430:09:47

It's called challah bread.

0:09:470:09:49

Wow! Lewis' chocolate challah bread looks great.

0:09:490:09:53

And it's ready to eat now that it's cooled down.

0:09:550:09:58

-Thank you.

-I'll take that one.

0:10:040:10:07

Why do you think clementines is to eat with the bread?

0:10:070:10:11

They go really well together.

0:10:110:10:13

Earlier, only Charlie liked the taste of dark chocolate.

0:10:130:10:17

Do you think everybody else will like it now it's

0:10:170:10:19

-cooked in the challah bread?

-It is really good.

0:10:190:10:22

-I absolutely love the bread.

-I think you've done a good job.

0:10:220:10:26

-Is this grape juice?

-Yes.

0:10:260:10:28

You drink it with the challah bread to make it taste even nicer.

0:10:280:10:32

-Can you guess what my special ingredient is?

-Dark chocolate.

0:10:320:10:36

-Easy.

-I think you've changed my mind, Lewis.

0:10:360:10:39

Now I really like dark chocolate with bread.

0:10:390:10:42

Oh, that's brilliant, George.

0:10:420:10:44

-To the bread.

-To the bread.

-Cheers.

0:10:440:10:46

Well done, Lewis, they do like the taste of dark chocolate after all.

0:10:460:10:51

Thank you for coming to My World Kitchen.
