-Where are you from?

-I'm originally from Deiniolen

-in North Wales.

-I started cooking

-from the age of 15.

-I worked in the Lake District

-and London.

-I've worked with great chefs and

-taught from the best.

-I've also learnt their bad habits!

-You've appeared on Heno.

-I was also on Masterchef

-Professionals in 2012.

-I was on Chefs on Trial

-with Alex Polizzi too.

-Masterchef was the most

-nerve-wracking thing I've done.

-I'm ready to settle down now.

-I would love to open my own

-I work as a consultant chef for

-companies at the moment.

-I've been asked to be part of a food

-event in Caernarfon next month.

-I will return to my former college,

-Today, I'm making a beef salad with

-tomatoes, sweet chilli and onions.

-I've got one whole chilli.

-What are you preparing for us next,

-I'm going to make

-an apple tarte tatin.

-The beef salad was delicious

-earlier.

-I didn't know how to say it!

-It sounds very posh!

-It's really simple to make.

-Caramelize some sugar in a saucepan.

-Make sure that it doesn't burn by

-adding some water to it.

-The temperature in the pan can reach

-180 degrees Celsius.

-Keep your fingers out of it!

-It will start to turn to a yellow,

-golden colour.

-Add some apples to the caramel.

-What apples do you use?

-I prefer Granny Smith apples.

-Slice the apples.

-You want to create a pattern
