-We start the programme

-in the kitchen with Lisa.

-The first dish is an alternative

-to the traditional turkey.

-This is a recipe

-for salmon and orange.

-Many pescatarians

-opt for a recipe like this.

-Pescatarians eat fish but not meat.

-There's a lovely colour

-to this Scottish salmon.

-It's a quality piece of fish.

-You pay for the quality.

-Poach the salmon in the oven.

-Some people worry

-that it will dry out.

-But this one won't as it will be

-in a bag of foil.

-There's a non-stick parchment paper

-with this foil.

-I've cut it into a fish shape

-as it makes it easier to handle.

-Opt for a strong foil.

-Unfortunately,

-this is called turkey foil!

-Fold the foil around the salmon.

-There's nothing going into the bag.

-Fold the foil several times

-to seal the salmon well.

-Place on a baking tray

-and bake for ten minutes.

-Make a hole in the foil after

-it has baked for the ten minutes.

-You want to add some flavours to it.

-The foil is opened with this one.

-We want to make a sauce

-that contains soy sauce...

-..and some marmalade...

-..into the salmon.

-You can use orange juice

-or cranberry juice too.

-You can prepare it beforehand.

-Get your ingredients ready

-in the pan the night before.

-Add a touch of marmalade.

-It will melt.

-Cover the salmon in the foil.

-Return it to the oven

-for 30 minutes.

-Keep the salmon

-on the parchment paper...

-..when you're ready to serve.

-Serve it with

-some festive vegetables.

-The fish is ready when

-it's flaking away from the skin.

-You can also test its temperature.

-Grab a plate or board to serve it.

-There's some spinach

-that will cook in the heat.

-We also have some spring greens.

-It's a lovely scene!

-There's also some broccoli

-and sweetcorn.

-You can prepare

-everything in the oven.

-Next, we add some colour.

-There's some roasted carrots

-and parsnips.

-Keep the temperatures low

-when making roasted vegetables.

-Yes, as it's affected

-much younger children now.

-Sexting has also taken over

-the work of teachers.

-The Police and ChildLine have

-described sexting with this.

-There are four lessons that

-the police carry out in schools.

-Mobile phones and social media

-is a part of our lives.

-I attend parents evenings.

-Parents are also responsible

-for the mobile phones.

-They are paying the bills

-of these mobile phones.

-How do you monitor this?

-It's difficult to monitor as

-they could be breaking the law.

-Technology is moving quickly.

-We hold parents evenings

-to advise them.

-I recommend that parents

-speak to their children...

-..about what they are doing

-on social media.

-There are many

-unsavoury characters online.

-People hide behind their screens.

-Should parents have a password to

-help them monitor online activity?

-that are only suitable for adults.

-They contain a lot of violence.

-It's difficult to stop it happening.

-We don't know what is happening

-were willing to give them a go.

-are at a restaurant in St Davids.

-After the last time, I'm

-more open about trying something.

-I wasn't a fan of the locusts

-so I'll avoid them!

-I've looked into it further.

-In a decade or two, I suspect

-more people will eat them in Wales.

-I hope you're ready for the first

-insect restaurant in Britain...

-..that happens to be

-in Pembrokeshire.

-We arrive and enjoy a coffee

-but this isn't any old coffee!

-It tastes like normal coffee.

-Yes, I agree.

-I don't see the problem

-because they are very healthy.

-We've got three menus

-so does anything take your fancy?

-The bug burger with mealworms,

-crickets and grasshoppers.

-Everything looks good as

-it's quite normal but with a twist.

-I like the burger

-or the cricket and pumpkin curry.

-We'll have mealworms, crickets

-and grasshoppers instead of beef.

-As a chef, there's a lot of

-trial and error at the beginning.

-Once you've got the basic recipes,

-it's easy to use your creativity.

-Insects are a great way

-to sustain a growing population.

-They are very easy to farm.

-I like to do things differently.

-I'm not saying to not eat meat but

-to highlight future alternatives.

-The farm is also

-a research centre...

-..that looks at the environment and

-effective ways of producing food.

-Some 80% of the world already eats

-insects so we're trailing behind.

-Some 31% are fleas,

-followed by caterpillars...

-..ants, bees and wasps are third...

-..whilst 13% are crickets,

-grasshoppers and locusts.

-A mixture of these

-formed our burgers.

-What's on the menu now, Lisa?

-Ginger biscuits are on the menu now.

-I've made an array of biscuits.

-They aren't difficult to make.

-You can buy cutters

-for all the different shapes.

-You want to start with the dough.

-You need 350g of plain flour

-and 125g of butter.

-Rub these together or use a mixer.

-I've got a great device

-for cutting up the butter.

-I've got a large amount

-for my mixer.

-Add some brown sugar.

-The brown sugar

-gives a rich flavour.

-I like to use a spoon of cinnamon.

-It reminds me of Christmas.

-It's quite a strong flavour.

-There's also two teaspoons

-of ginger.

-Stir these into the mixture.

-You also need a teaspoon

-of baking powder.

-Crack in one egg.

-There's also four tablespoons

-of syrup.

-This is going to be like

-a calorific coffee!

-Don't drink a coffee

-and eat one of these biscuits!

-I've got a larger mixer at home...

-..and this one is a bit small.

-Keep mixing until this forms a ball.

-You don't need to chill it

-before rolling it out.

-by using icing sugar.

-Roll this out thinly.

-This is a great mix.

-You get a lovely biscuit.

-You can pipe on the icing.
