-potato and laverbread soup.

-It's quite unusual.

-I've never had laverbread!

-You haven't lived!

-Start by frying some roughly

-chopped onions.

-We're ready to add the

-next ingredients.

-I've got some potatoes.

-Ireland is famous for its potatoes.

-Add a touch of celery.

-This adds extra flavour.

-The potatoes will cook in the soup.

-There's also some cabbage.

-I'm using half a savoy cabbage.

-You can use any cabbage.

-The dark spring cabbage

-is great too...

-..but it gives the soup

-a darker colour.

-The Irish love their cabbage!

-It's important to stir the potatoes

-and cabbage in the butter.

-Season with a touch of salt.

-The laverbread is full of salt...

-..so you don't want too much.

-Add a litre of vegetable stock.

-You can add chicken stock

-if you prefer.

-You need to cover all the vegetables

-with the stock.

-Cover it and allow it to cook

-for about 20 minutes.

-Next, add some parsley.

-I don't chop it.

-It's added right at the end...

-..before it goes in the blender.

-It gives some lovely flecks.
