So, after they've been split, the herring go in a brine, | 0:16:28 | 0:16:32 | |
which is like salt and water, for curing purposes. | 0:16:32 | 0:16:34 | |
Then they get drip dried then put straight in the smokehouse. | 0:16:34 | 0:16:38 | |

Hot smoking cooks the food and cold smoking just flavours it. | 0:16:41 | 0:16:45 | |
