Hello and a very warm welcome to Landward, bringing the Scottish | 0:00:22 | 0:00:27
countryside right into your home. In a moment I will be examining how | 0:00:27 | 0:00:30
likely it is we will meet our renewable energy target by the end | 0:00:30 | 0:00:34
of the decade, but first here is what else is coming up: Keeping an | 0:00:34 | 0:00:40
eye out for nesting birds. It does not matter whether it is a golden | 0:00:40 | 0:00:45
eagle are house sparrow, if the bird isn't a -- is nesting you are | 0:00:45 | 0:00:51
not allowed to disturb it. Ganseys, the jumpers that defiant | 0:00:51 | 0:00:55
generations of fishermen. We were dealing with very severe weather | 0:00:55 | 0:01:01
and it get you warm. And Nick creates -- creates a main | 0:01:01 | 0:01:08
cause fit for an elite athletes. This dish demonstrates that | 0:01:08 | 0:01:12
athletes can eat gourmet dishes. Offshore wind turbines have hardly | 0:01:12 | 0:01:17
been out of the news headlines over the last couple of weeks. First | 0:01:17 | 0:01:22
engineering giant Doosan scrapped a plan to invest 170 million in the | 0:01:22 | 0:01:26
industry. Ben Donald Trump flew in to outline his objections to wind | 0:01:26 | 0:01:30
turbines to a Scottish parliamentary committee. They are | 0:01:30 | 0:01:36
so unattractive, so ugly, so noisy and so dangerous that Scotland does | 0:01:36 | 0:01:40
this, I think Scotland will be in serious trouble. | 0:01:40 | 0:01:46
But the Government's target stands. By 2020 they won the equivalent of | 0:01:46 | 0:01:50
100 % of our electricity consumption to come from renewable | 0:01:50 | 0:01:55
sources. We decided to look at the Engineering reality behind all that | 0:01:55 | 0:01:59
hot air. It is estimated that we have a | 0:01:59 | 0:02:03
quarter of Europe's offshore wind resource, in up to produce all the | 0:02:03 | 0:02:07
electricity we need several times over, if we can harness it. This is | 0:02:08 | 0:02:13
Robin Ray, the first commercially operated wind farm in Scottish | 0:02:13 | 0:02:22
waters. The Government wants to hit their target by 2020. Tired all | 0:02:22 | 0:02:26
wave systems just will not be producing any sort of scale by them. | 0:02:26 | 0:02:32
-- tried energy or wait systems. Its success is going to happen it | 0:02:32 | 0:02:37
is going to be down to offshore turbines. The Crown Estate, which | 0:02:37 | 0:02:41
owns the sea bed, he issued lease agreements for 11 different | 0:02:41 | 0:02:48
offshore developments in Scottish waters. The potential for offshore | 0:02:48 | 0:02:52
wind is huge. The Government estimates it could create up to | 0:02:52 | 0:03:00
30,000 jobs, bringing 7 billion of investment into the country. This | 0:03:00 | 0:03:05
company based in Fife is one taking advantages of the opportunity. They | 0:03:05 | 0:03:09
are using expertise gained in oil and gas to construct underwater | 0:03:09 | 0:03:16
supports for offshore turbines and transformers. We see tremendous | 0:03:16 | 0:03:20
employment opportunities. The oil and gas sector is also booming, to | 0:03:20 | 0:03:24
be fair, and we will be tied to them for two to three years, but by | 0:03:24 | 0:03:28
that time we get to 2015 or 2060 most of our work will be in the | 0:03:28 | 0:03:33
renewables sector. Do you think the renewables target that has been set | 0:03:33 | 0:03:37
by the Government is achievable? think the target is challenging. I | 0:03:37 | 0:03:41
think we will get there. I picked it will take longer than ten years. | 0:03:41 | 0:03:46
And at the end of the day, when you think of the opportunity here not | 0:03:46 | 0:03:50
only for the UK and exporting into Europe, I see a business | 0:03:50 | 0:03:55
opportunity that could last 25 years plus. So far, though, apart | 0:03:55 | 0:04:01
from a couple of experimental turbines, this wind farm is still | 0:04:01 | 0:04:06
Scotland's only operational offshore development. The site Arms | 0:04:06 | 0:04:11
away firth has been producing electricity since April 2010 and | 0:04:11 | 0:04:16
should produce enough for more than 100,000. But on the day we visited, | 0:04:16 | 0:04:25
many turbines were surprisingly static. It is a really nice day, | 0:04:25 | 0:04:30
and I have counted around 60 wind turbines and about half of them are | 0:04:30 | 0:04:35
not turning. We checked with E.ON, the company that operate them, and | 0:04:35 | 0:04:38
they said we just picked a bad time to visit and they were doing | 0:04:38 | 0:04:41
maintenance work which required a whole sections of the wind farm to | 0:04:41 | 0:04:47
be turned off. If the wind does not blow or they are being maintained, | 0:04:48 | 0:04:52
like almost half of the ones behind me, these turbines produce nothing, | 0:04:52 | 0:04:56
which is why the Government's target is to produce the equivalent | 0:04:56 | 0:05:01
of 100 % of our energy needs from renewable sources. In reality, we | 0:05:01 | 0:05:04
will meet the capacity to generate far more electricity than we | 0:05:04 | 0:05:09
actually need. We will still the power stations fuelled by coal and | 0:05:09 | 0:05:13
gas. That way we will have a reliable supply even when there is | 0:05:13 | 0:05:18
no wind. On the days where there is plenty of wind, the plan is to | 0:05:18 | 0:05:24
export these supplies power to England. -- the surplus power. But | 0:05:24 | 0:05:27
the Institute of Mechanical Engineers things the Government is | 0:05:27 | 0:05:31
expecting too much offshore development too soon. We reckon | 0:05:31 | 0:05:37
that to meet the target by a 2015- 2020, they will have to install | 0:05:37 | 0:05:41
approximately one per day, a very ambitious target. Is that | 0:05:41 | 0:05:47
achievable? We do not think so. The wants of short will be a seven | 0:05:47 | 0:05:53
megawatt size and the blade for them is about 80 metres long, so | 0:05:53 | 0:05:57
the Transport and manufacturer of them, the shipping facilities, the | 0:05:57 | 0:06:03
drainage, particularly, you need very large cranes, the logistics of | 0:06:03 | 0:06:08
the whole exercise needs much more planning. So how does the | 0:06:08 | 0:06:13
Government respond to these concerns? To produce the equivalent | 0:06:13 | 0:06:18
of 100 % of energy from renewable sources by 2020 is hugely ambitious. | 0:06:18 | 0:06:24
Is it achievable? It is ambitious and we think it is achievable and | 0:06:24 | 0:06:28
we have set out in a document called the electricity generation | 0:06:28 | 0:06:32
policy statement how it might be achieved. Just last year, actually, | 0:06:32 | 0:06:39
the interim target of 30% was exceeded, so regenerated 35 % of | 0:06:39 | 0:06:43
our own electricity needs from renewable sources. The company | 0:06:43 | 0:06:48
which will be manufacturing turbine components have recently wreck | 0:06:48 | 0:06:54
located to Edinburgh. Samsung, all these companies are investing | 0:06:54 | 0:06:58
millions of pounds. I think it was President Obama who said the | 0:06:59 | 0:07:05
country leads the world in -- the country that leads the world in | 0:07:05 | 0:07:10
developing renewable energy will be the country that leads the world. | 0:07:11 | 0:07:16
It is no doubt that renewables could bring investment and security | 0:07:16 | 0:07:20
to Scotland, but the engineering challenges are vast. Can they be | 0:07:20 | 0:07:24
overcome in time to reach the target? In a few years will find | 0:07:24 | 0:07:28
out. Last week Nick started a three-part | 0:07:28 | 0:07:32
series to create a meal based on the latest science in sports | 0:07:32 | 0:07:39
nutrition. Today he is on the main course. | 0:07:39 | 0:07:42
I have been learning about the latest sports nutrition research | 0:07:43 | 0:07:48
and giving a gourmet twist. Just because food is fuel, it does not | 0:07:48 | 0:07:53
have to taste like it. Last week I made a beetroot soup full of | 0:07:53 | 0:07:57
nitrates, which are great for enhancing performance. This week it | 0:07:57 | 0:08:02
is time to create a main course fit for a gourmet athlete. Kevin Tipton | 0:08:02 | 0:08:06
hails from the US and is now a professor at Stirling University. | 0:08:06 | 0:08:10
He has worked with top international bodies like fever and | 0:08:10 | 0:08:17
the Olympic Committee. Now he is advising me. -- like FIFA. | 0:08:17 | 0:08:21
ingredient which has been getting attention is Omega 3 fatty acids, | 0:08:21 | 0:08:25
which you can find in oily fish. These fatty acids have been known | 0:08:25 | 0:08:29
for a long time to be cardia protective, to help with a heart | 0:08:30 | 0:08:34
disease. They get incorporated into your muscle cells and that allows | 0:08:34 | 0:08:39
your muscle to respond to the protein that you eat and actually | 0:08:39 | 0:08:43
grow better. It is a recommendation to have at least two or three days | 0:08:43 | 0:08:50
a week of oily fish. I am really glad that Kevin said or if it is | 0:08:50 | 0:08:52
great for athletes, because I love salmon and this is one of my | 0:08:53 | 0:08:58
favourite salmon dishes. Pansy of fillet of salmon with an avocado | 0:08:58 | 0:09:03
salsa and pesto dressing. In a mixing bowl, add a small amount of | 0:09:03 | 0:09:09
very finely sliced red onion. Some finely sliced chillies, seats and | 0:09:09 | 0:09:15
all. A roughly chopped ripe plum tomato. A sliced ripe creamy | 0:09:15 | 0:09:22
avocado. Some are roughly chopped basil leaves. A glut of good fruity | 0:09:22 | 0:09:27
olive oil. A squeeze of lemon. A pinch of sea salt and some freshly | 0:09:27 | 0:09:36
ground black pepper. And mix carefully. A really lovely salsa. | 0:09:36 | 0:09:40
It has a zingy fresh flavour and it is the way the acidity from the | 0:09:40 | 0:09:43
tomatoes and the heat of the chilly work with the richness of the | 0:09:44 | 0:09:48
avocado and that little scene from the lemon. Could a thin slice of | 0:09:48 | 0:09:53
farmed salmon, as well can be to drive. Flash fried in a little | 0:09:53 | 0:09:58
olive oil for 30 seconds on one side only, and the bonfire is | 0:09:58 | 0:10:05
optional. Serve on a plate with a sneer of pesto, and a dollop of the | 0:10:05 | 0:10:10
salsa and the salmon placed on top. I am using a home-made pesto | 0:10:10 | 0:10:17
watered down with a bit of olive oil, but jar pesto is fine. Bat has | 0:10:17 | 0:10:21
to be my favourite way to cook salmon. It has an almost smoky | 0:10:21 | 0:10:24
barbecue flavour from the high temperature find and has the | 0:10:24 | 0:10:27
richness of the avocado offset by the easing of the tomatoes and | 0:10:27 | 0:10:37
0:10:37 | 0:10:39 | ||
Chile. -- it is the end of the tomatoes -- and he's in the | 0:10:39 | 0:10:44
tomatoes. This dish demonstrates that athletes can be gourmets. | 0:10:44 | 0:10:50
Advice on how to nesting -- avoid nesting birds. If you think the | 0:10:50 | 0:10:56
birds are export -- if you think the birds are exhibiting any alarm | 0:10:56 | 0:11:01
behaviour, or walk away. And Andy Turner that takes us under | 0:11:01 | 0:11:05

A gansey is a scene as pullover worn by fishermen in the 19th and | 0:11:15 | 0:11:18
early 20th centuries. They have been out of fashion for years now | 0:11:18 | 0:11:21
but a project has been set up to preserve the unique patterns and | 0:11:21 | 0:11:27
knitting skills. -- a seamless pullover. | 0:11:27 | 0:11:31
In the 19th and early 20th century the coast of the Moray Firth was | 0:11:31 | 0:11:38
home to a thriving fishing ports. The towns were tight-knit | 0:11:38 | 0:11:44
communities with a distinct culture, traditions and style of dress. Most | 0:11:44 | 0:11:51
fishermen or walk seamless one and pullovers called ganseys. There | 0:11:51 | 0:11:54
were hand-knitted with fine needles which made them dense and resistant | 0:11:54 | 0:12:04
0:12:04 | 0:12:04 | ||
to the wind, but the jumpers were far more than just a simple sweater. | 0:12:04 | 0:12:08
It was often the case that different villages had different | 0:12:08 | 0:12:12
designs and patterns, and from a young age, the gansey became part | 0:12:13 | 0:12:20
of a fishermen's identity. In this village on the Black Isle, Sandy | 0:12:20 | 0:12:29
grew up wearing a gansey. This is May at seven years, eight years of | 0:12:29 | 0:12:34
age, in primary schools. Very cute. Did you wear a gansey every day? | 0:12:35 | 0:12:40
Most of the time. And you went on to become a fishermen? I did. I | 0:12:40 | 0:12:47
left school at 15 and I was five years a cook aboard a vessel and | 0:12:47 | 0:12:55
then I became a skip that at 21 and got my own boat. Was a gansey | 0:12:55 | 0:12:59
uniform for fishermen? It was indeed. It was used by all the | 0:12:59 | 0:13:02
fishermen. During the winter months, while we worked at the local | 0:13:02 | 0:13:06
herring fishery and the sprat fisheries, we were dealing with a | 0:13:06 | 0:13:14
very severe weather, very cold, and the gansey kept you warm. | 0:13:14 | 0:13:17
intricate designs were developed by families and then passed down from | 0:13:17 | 0:13:25
mother to daughter without ever being written down. Many patterns | 0:13:25 | 0:13:28
had sea all fishing themes like grapes or herring nets but the | 0:13:28 | 0:13:34
designs could also carry messages. Ethel was a herring gull and then a | 0:13:34 | 0:13:41
fishermen's wife near Fraserburgh. She started nicking ganseys as a | 0:13:41 | 0:13:51
young girl. In these stories I was told, when a bishop girl last | 0:13:51 | 0:13:55
married a -- first marriage a fishermen, this is the first gansey | 0:13:55 | 0:14:02
that she did. So if he went to work in different places, they knew he | 0:14:02 | 0:14:06
was a marriage and right. So no one else could have come! And what it | 0:14:06 | 0:14:09
expected of you when you got married that you would need a | 0:14:09 | 0:14:14
gansey for your husband? Yes. They used to have working once and dress | 0:14:14 | 0:14:22
once. This was a dress gansey. They very seldom wore shirts. The only | 0:14:22 | 0:14:27
day by husband wore a shirt was when he got married, I think. | 0:14:27 | 0:14:32
did you have time to meet? I do not know! You never sit down without | 0:14:32 | 0:14:38
your knitting. You never wasted a minute. If you had a minute to | 0:14:38 | 0:14:45
spare, you needed. When you sat down at night, United. The times | 0:14:45 | 0:14:52
and tastes have changed. It was where all the intricate patterns | 0:14:52 | 0:14:57
built up over two centuries would be lost. But then the web project | 0:14:57 | 0:15:04
stepped in. -- the gansey project. The idea is to record and preserve | 0:15:04 | 0:15:09
as many of the different designs as possible. A team of regional co- | 0:15:09 | 0:15:12
ordinators have also been visiting bidding groups like is to try to | 0:15:12 | 0:15:22
0:15:22 | 0:15:25 | ||
encourage them to meet ganseys and Each letter would to develop their | 0:15:25 | 0:15:35
0:15:35 | 0:15:35 | ||
own variation on the pattern. Each person. I am sure the girls are | 0:15:35 | 0:15:45
0:15:45 | 0:15:46 | ||
must have shared patterns as well. Often the history books are about | 0:15:46 | 0:15:51
the big staff - who won, who lost, who got there first. But think | 0:15:52 | 0:15:56
about and gansey. The first gift alike made for her husband. The | 0:15:56 | 0:16:00
design and that your grandmother shared just with you. That is also | 0:16:00 | 0:16:10
0:16:10 | 0:16:15 | ||
big stuff. All that meaning in just a garment. If you have a comment | 0:16:15 | 0:16:22

I am Andy Torbet. This week I am going into choppy waters. When you | 0:20:10 | 0:20:13
were heading out to investigate the islands of the Firth of Forth you | 0:20:14 | 0:20:19
have got to be prepared. Tides a continuous. There are big boats. | 0:20:19 | 0:20:25
Out in open water the weather is always a consideration. There are | 0:20:25 | 0:20:30
some bit of extra kit you need. Spare a paddle, signal flares, a | 0:20:30 | 0:20:36
radio and know how to use it, food and drink, and spare warm clothing. | 0:20:36 | 0:20:40
And I had better take my Helmut with me in case I encounter any | 0:20:40 | 0:20:44
rocky beaches. Once you have got all that together you are ready to | 0:20:44 | 0:20:54

underneath it. It gives you a sense of the scale of the structure. | 0:21:06 | 0:21:11
Beyond the bridge is the first island to pass - Inch Garvie. But | 0:21:11 | 0:21:16
Ireland is a foundation for one of the bridge's cantilevers. Bridge | 0:21:16 | 0:21:23
workers lived there during construction. It might seem scary | 0:21:23 | 0:21:27
being out in such an expanse of water in a tiny vessel but if | 0:21:27 | 0:21:31
you're careful there should be no problem. Make sure you know if | 0:21:32 | 0:21:36

Incholm. That island is home to a variety of wildlife. Like many | 0:22:03 | 0:22:09
islands in this area this island was fortified during World War II. | 0:22:09 | 0:22:13
But its main feature is a twelfth- century abbey. It is in a | 0:22:13 | 0:22:17
remarkable state of repair. It was protected during the Reformation by | 0:22:17 | 0:22:22
its isolated position. If you do not want to go to all the trouble | 0:22:23 | 0:22:26
of paddling out here there are regular boat trips from South | 0:22:26 | 0:22:31
Queensferry. The next stretch of my journey takes me back towards the | 0:22:31 | 0:22:36
mainland. Past the White House and on towards the tiny island of | 0:22:36 | 0:22:40
Inchmickery. It is covered in wartime defences at make it | 0:22:40 | 0:22:49

step of my trip takes me back to my starting point. It should take you | 0:22:53 | 0:23:03
for hours to complete the circuit. -- four hours. This is a fantastic | 0:23:03 | 0:23:07
way to see the huge variety of Scotland's coastline from a new and | 0:23:07 | 0:23:15
unique perspective. Joy in the next week when I will head out to sea to | 0:23:15 | 0:23:19
visit Bass Rock - arguably one of the greatest natural spectacles in | 0:23:19 | 0:23:28
Britain. I will see them. Did you know what is illegal to | 0:23:28 | 0:23:38

I have come up to Scotland's Sa harper - the dunes of Forvie Nature | 0:23:47 | 0:23:51
Reserve. Last month he might have been forgiven for thinking that | 0:23:51 | 0:23:55
desert Style weather was here to stay. Since then we have had | 0:23:55 | 0:24:01
snowfall and everything in between. By end of April it should be safe | 0:24:01 | 0:24:06
to say that spring has sprung. New life is out in force in the | 0:24:06 | 0:24:10
countryside at the moment. For an outdoor enthusiast like me it is a | 0:24:10 | 0:24:16
great time to get out there and enjoy it. It is also a fragile time | 0:24:16 | 0:24:20
for Nature, particularly for birds, who often end up sharing their | 0:24:20 | 0:24:28
nesting grounds with our favourite walking spot. Four of the nature | 0:24:28 | 0:24:33
reserve covers 1000 hectares of course life. Its dramatic landscape | 0:24:33 | 0:24:41
is an attraction to both humans and birds. Annabel Drysdale is getting | 0:24:41 | 0:24:46
organised for the arrival of all sorts of nesting birds, including | 0:24:46 | 0:24:53
3,000 Eider ducks. What are we doing today? This is the start of | 0:24:53 | 0:25:03
0:25:03 | 0:25:05 | ||
the season for the nesting birds. We find that giving people | 0:25:05 | 0:25:09
information really helps them understand why we are asking people | 0:25:09 | 0:25:16
to keep to the path. How am vulnerable are they? They are very | 0:25:16 | 0:25:21
vulnerable. They nest on the ground. They are open to predators such as | 0:25:21 | 0:25:25
foxes. If they are scared of their nests at the birds are always on | 0:25:25 | 0:25:33
the lookout for a tasty meal of the eggs, or even the young chicks. | 0:25:33 | 0:25:38
Here you can see just how easy it is to disturb the. I have walked | 0:25:38 | 0:25:41
along this path and these birds look at you and then decide you are | 0:25:41 | 0:25:48
a threat. If they had chicks they could be easily traced off. This is | 0:25:48 | 0:25:52
just one example of a kind of place where wildlife and the public share | 0:25:53 | 0:25:58
the same space. That is why it is so important to know what you can | 0:25:58 | 0:26:03
and cannot do it comes to nesting birds both to protect the birds and | 0:26:03 | 0:26:08
to make sure you are not breaking the law. It does not matter if it | 0:26:08 | 0:26:12
is an eagle or a sparrow. At a bird is nesting you are not allowed to | 0:26:12 | 0:26:16
disturb the best on the nest. You are not allowed to destroy the best. | 0:26:16 | 0:26:23
You're not allowed to interfere with their eggs in any way. It is | 0:26:23 | 0:26:29
one thing to avoid disturbing ground-nesting birds. It is a | 0:26:29 | 0:26:33
bigger problem to avoid the public disturbing spectacular birds of | 0:26:33 | 0:26:41
prey. The wildlife crime unit has received a call from a nearby | 0:26:41 | 0:26:46
estate. Two nesting ospreys have a right. They are concerned the | 0:26:46 | 0:26:55
public will disturb them. I am worried about protecting the mess. | 0:26:55 | 0:27:02
My advice should be to cordon a area off. If the birds show signs | 0:27:02 | 0:27:07
of disturbance, if they behave differently, if they are calling | 0:27:07 | 0:27:11
out regularly, bring the cordon further back and keep people away | 0:27:11 | 0:27:16
from the area. The birds have chosen to invest in a public place. | 0:27:16 | 0:27:22
The chances are they are quite used to people. For both this estate and | 0:27:22 | 0:27:28
the Forvie Sands spring has debt that Lee sprang. The birds are busy | 0:27:28 | 0:27:31
ensuring there is another generation for us to enjoy. If we | 0:27:31 | 0:27:35
all do our bit we can ensure that all are nesting birds get a good | 0:27:35 | 0:27:43
start to the breeding season. Disturb a nesting bird and you | 0:27:43 | 0:27:49
