Now on BBC News, it's time for the Travel Show. | :00:00. | :00:08.
This week, I'm underground in Hungary, as travel restrictions are | :00:09. | :00:17.
lifted, we are in Sierra Leone at the first ever Freetown music | :00:18. | :00:20.
festival in the capital. Simon Calder tackles your questions about | :00:21. | :00:25.
getting the best out of Canada, and we check out barbecue style with | :00:26. | :00:56.
global gourmet. Sierra Leone, a destination that has long been off | :00:57. | :00:59.
the tourist rate despite having some of West Africa's most idyllic | :01:00. | :01:04.
beaches, clearest waters, and lush rainforests to explore. The civil | :01:05. | :01:11.
war that ravaged much of the country left deep scars, but just as it | :01:12. | :01:13.
looked like those were healing, the Ebola struck, helping to ensure that | :01:14. | :01:19.
Sierra Leone remained a virtual no-go area for tourists. With no new | :01:20. | :01:25.
cases reported since January, the first time ever Freetown music | :01:26. | :01:29.
festival has just been held to celebrate the Sierra Leone | :01:30. | :01:33.
resilience and hopefully the return of much-needed tourists. The Travel | :01:34. | :01:37.
Show went along to join in with the party. Everyone, welcome to Freetown | :01:38. | :01:50.
Music Festival, 2016, right here in Freetown, Sierra Leone. It is going | :01:51. | :01:57.
to be amazing! We have two days of live performances, DJs, food, | :01:58. | :02:05.
fashion, arts, film and I cannot even think of what else we have a | :02:06. | :02:24.
moan because we have everything. I think Sierra Leone is more than | :02:25. | :02:27.
ready for this because there is a lot of local talent, and there is a | :02:28. | :02:33.
lot of enthusiasm for this kind of thing, so people love music, | :02:34. | :02:37.
dancing, they love celebrations. It is about bringing it all together | :02:38. | :02:41.
into something that really works, and that just hasn't happened. My | :02:42. | :02:52.
mum would tell me stories about how they used to dress up and go out to | :02:53. | :02:57.
plays and listen to live music. For a while we lost it because of | :02:58. | :03:01.
everything that has been going on in Sierra Leone, we have been kind of | :03:02. | :03:05.
distracted, but I think it is really great, this festival. It is a real | :03:06. | :03:16.
treat. It brightened's peoples lives up -- it brightens people's lives | :03:17. | :03:27.
up. As you know, we have had the whole Ebola thing going on, with a | :03:28. | :03:30.
locked down, so we couldn't go anywhere. Now, there are a lot of | :03:31. | :03:36.
weddings going back and forth, we have excuses for parties, it is like | :03:37. | :03:44.
a relief, more reason to enjoy yourself! I walk around the city, | :03:45. | :03:51.
and people say it was nice, we should do this more often. This is | :03:52. | :03:54.
the first live festival in Freetown for so long, and I think it will | :03:55. | :04:10.
have a great impact. People keep moving forward no matter what | :04:11. | :04:15.
happens, no matter what happens they want to keep doing this. The spirit | :04:16. | :04:18.
is what is helping us. We like to enjoy ourselves here, and | :04:19. | :04:47.
this is just a bit more of it. There is an energy in the air, people | :04:48. | :04:51.
walking around enjoying themselves, at the beach. What more could you | :04:52. | :04:54.
ask for? Live music was not the thing, | :04:55. | :05:24.
because people were frowning at it. Only for the old people, but now | :05:25. | :05:32.
people want it. The artists are craving it, the fans are rejoicing | :05:33. | :05:44.
when they see live music. I love music because... I just love music, | :05:45. | :05:49.
I don't know why they love it I just do. It was one in a billion, it | :05:50. | :06:19.
happened. Sierra Leone isn't the only country in Africa that hosts | :06:20. | :06:23.
music festival. Irizar peak of some of the best. The Bushfire is a | :06:24. | :06:31.
two-day event in Swaziland featuring music, arts and culture from | :06:32. | :06:36.
southern Africa and beyond, offering residents the ultimate in glamping | :06:37. | :06:45.
if you like the great outdoors. This is based on the burning man festival | :06:46. | :06:49.
in the US and is one of the biggest events. It is now in its 10th year, | :06:50. | :06:55.
and more than 30 -- 13,000 regularly offend. This is an internationally | :06:56. | :07:02.
renowned music festival to take place on the shores of Lake Malawi. | :07:03. | :07:06.
This year it takes place in September over three days. Finally, | :07:07. | :07:16.
it in Morocco's capital, on them 21st of May, plenty of home-grown | :07:17. | :07:24.
talent performing. The eclectic line-up teaches Middle Eastern and | :07:25. | :07:27.
African artists alongside big names, including this year, Marcus Miller | :07:28. | :07:40.
and Christina Aguilera. Part of a new series on the Travel Show in | :07:41. | :07:43.
which we roamed the globe hearing the stories behind some of the | :07:44. | :07:48.
world's most iconic dishes. This week, it comes from Dallas, Texas, | :07:49. | :07:53.
where Justin has been testing his patience, all in the name of | :07:54. | :07:57.
creating the perfect barbecue. There is no shortcut to great harbour | :07:58. | :08:02.
view. It takes a long time, and it takes a long time for a reason. | :08:03. | :08:13.
Welcome to the best barbecue joint in Texas. What we have here is a | :08:14. | :08:19.
brisket, which is kind of the King of barbecue meats in Texas. We are | :08:20. | :08:24.
going to get this trimmed up and get it season and get it on the grill. A | :08:25. | :08:30.
lot of people ask if the secret to good barbecue is in the rub or in | :08:31. | :08:35.
the source, but really that is a small part. Most of the magic | :08:36. | :08:40.
happens in the smokehouse. It is the wood and the time and attention we | :08:41. | :08:43.
give them eat when they are on their that really give it the quality. -- | :08:44. | :08:50.
there. We have these season, and we will put them in the smokehouse, in | :08:51. | :08:56.
the pit. Brisket will cook for anywhere between 16 and 18 hours, | :08:57. | :09:00.
and the ribs will finish in about six. We are cooking them at a low | :09:01. | :09:09.
temperature, 200 or 250, and doing that will allow the fat and | :09:10. | :09:12.
connective tissue to melt away and make them very tender. This is | :09:13. | :09:21.
really where the magic happens. These pits run 24 hours a day. We | :09:22. | :09:26.
are here all the time putting board on the fire every couple of hours. | :09:27. | :09:35.
The fire is indirect, it is not grilling, where you are cooking over | :09:36. | :09:38.
the flames, it is in a separate part of the pit. It is just a slow, | :09:39. | :09:51.
gradual way to cook. If there was a national food of Texas it would | :09:52. | :09:55.
definitely be barbecue. It started off in the early days with cowboys | :09:56. | :09:59.
slaughtering cattle on the cattle drives and cooking them over open | :10:00. | :10:04.
flames. This was originally a way to preserve the food through the smoke | :10:05. | :10:08.
and everything, and it turned into a cult following that has grown over | :10:09. | :10:10.
time. There you have it. Still to come on the Travel Show: I | :10:11. | :10:33.
venture underground in Hungary exploring the geology that make it | :10:34. | :10:37.
the country of spas. And Simon Calder is here to tackle your | :10:38. | :10:40.
questions about getting the best out of travel. This week, advice on some | :10:41. | :10:49.
of the best beach locations in Cuba. The Travel Show, your essential | :10:50. | :10:51.
guide wherever you are heading. Welcome to the slice of the show | :10:52. | :11:08.
that tackles your questions account getting the best out of travel. We | :11:09. | :11:13.
are off to Havana's hinterland shortly, but first, with Europe's | :11:14. | :11:17.
big football tournament about the kick-off and he gets incredibly | :11:18. | :11:20.
scarce, a lot of people are wondering about the best way to | :11:21. | :11:24.
enjoy the atmosphere during the Euro 2016 finals. My advice, just head | :11:25. | :11:32.
for the clown zones. -- fan zones. Well signposted in big cities with | :11:33. | :11:37.
large screens and live entertainment. For neutrals, | :11:38. | :11:44.
probably the most convivial choice is the left bank of the San in | :11:45. | :11:46.
Paris. How infuriating! But I'm not | :11:47. | :12:14.
surprised at that extraordinary single supplement. The economics of | :12:15. | :12:19.
the typical cruise ship are based on 100% occupancy, with every cabin | :12:20. | :12:24.
full with the appropriate number of people. So, you might imagine that a | :12:25. | :12:29.
double cabin to yourself should cost twice as much. But the cruise line | :12:30. | :12:33.
also expects to earn money from on-board spend, in the bars, shops | :12:34. | :12:38.
and on excursions. To make up for what they see is lost income, they | :12:39. | :12:42.
will add an extra supplement. If you don't like the price, some firms | :12:43. | :12:49.
offer better deals for low demand savings. | :12:50. | :13:01.
First, hop on the cheap and cheerful ferry that sales across to | :13:02. | :13:07.
Casablanca on the east side of Havana's magnificent harbour. | :13:08. | :13:12.
Besides outstanding views of the capital, you can walk up to the | :13:13. | :13:18.
mightiest fought in the Caribbean. Then, pick up a rental car for a | :13:19. | :13:28.
road trip. First pot, the Zapata swamp, for the diversity of | :13:29. | :13:34.
wildlife, and a glimpse at how Cuba's original inhabitants lived. | :13:35. | :13:40.
Second, an interesting combination of Beach resort and historical site, | :13:41. | :13:43.
at the head of what is known as the Bay of Pigs, the scene of the failed | :13:44. | :13:49.
1961 invasion shortly after the revolution. | :13:50. | :13:57.
These two are celebrating their 50th anniversary in style. From nigra | :13:58. | :14:05.
falls to New York. What is the best scenic route? Upstate New York is a | :14:06. | :14:17.
joy to drive through. There are city highlights as well on the journey to | :14:18. | :14:22.
Manhattan. The city of Bufallo can bring some outstanding 20th-century | :14:23. | :14:35.
architecture. And definitely the Cascadilla Gorge is worth a look. | :14:36. | :14:46.
One final stop, Pughkeepsie, home to Franklin the Roosevelt. I am always | :14:47. | :14:54.
happy to listen to viewers. Just get in touch and I will do my best to | :14:55. | :14:59.
answer your questions. Goodbye for now. See you next time. To end this | :15:00. | :15:08.
week, I am in Budapest, Hungary's capital, often referred to as the | :15:09. | :15:14.
city of spas and caves. There are 200 a systems here and in other | :15:15. | :15:20.
parts of the country. Many were only discovered at the beginning of the | :15:21. | :15:29.
20th century. -- caves. When you are strolling around the old cobbled | :15:30. | :15:31.
streets it is hard to imagine that another world lies under your feet. | :15:32. | :15:39.
HAPPY MUSIC. But Budapest is one of the few capitals in the world that | :15:40. | :15:43.
has natural caves beneath the city streets and heading underground can | :15:44. | :15:47.
give you a whole new perspective on the place. There are around 200 | :15:48. | :15:55.
caves under the capital, but only a select few, like this one, are | :15:56. | :16:00.
available for travellers to come into. The cave is here. Mike Gapes | :16:01. | :16:09.
today is Peter, a professional caver. -- my guide to date. They | :16:10. | :16:18.
aren't far away from here. He is part of the rescue service so I am | :16:19. | :16:25.
in safe hands. That is great. I don't think I have claustrophobia | :16:26. | :16:27.
but I will find out pretty quickly is the pillow if you have it we will | :16:28. | :16:30.
find it. -- quickly. These caves were discovered back in | :16:31. | :16:44.
1904 and it is one of the most popular with, tourists. -- tourists. | :16:45. | :16:55.
That is because it is close to the city centre. This is the biggest | :16:56. | :17:02.
cave system in Hungary. This is not meant for tall people. You can see | :17:03. | :17:07.
that. Yeah. LAUGHTER. Why are there so many | :17:08. | :17:12.
caves underneath Budapest? This is a limestone hill. That means it is | :17:13. | :17:23.
easy to form caves within it. At the moment this is more than 30 | :17:24. | :17:29.
kilometres. Exploration happens every day and every week. This cave | :17:30. | :17:36.
is one of the longest, but only 500 metres of it can actually be | :17:37. | :17:42.
accessed by tourists. The rest is for professionals only. It is too | :17:43. | :17:46.
dangerous. You certainly would not want to get lost up here. Wow. That | :17:47. | :17:57.
is a long way down. To get a sense of the walkways below I need to | :17:58. | :18:02.
climb deeper into the cave, in fact, ten metres down on a ladder. Here | :18:03. | :18:10.
goes. You are in the worst position if I fall. If you fall I will catch | :18:11. | :18:14.
you. LAUGHTER. It is certainly | :18:15. | :18:23.
beautiful. Very quiet. Eerie at the same time. And the great thing about | :18:24. | :18:29.
exploring the caves here is you don't need to have reviews | :18:30. | :18:33.
experience. Tours can be booked with English-speaking guides for groups | :18:34. | :18:40.
of more than four. It includes all the safety equipment, the EU will | :18:41. | :18:43.
need to be relatively fit to keep up. -- though you. This structure | :18:44. | :18:49.
can come out from this way. Eight structure? Yeah. -- a structure. | :18:50. | :19:00.
What do you love about caving? I can relax in here. Relax? It is very | :19:01. | :19:05.
relaxing. For me it is better one week on the seashore doing nothing. | :19:06. | :19:12.
You love it here? Yeah. I started when I was four years old. And, in | :19:13. | :19:21.
that time, I loved this sport. Also rescuing. I do that because I love | :19:22. | :19:32.
my family. Exploring caves is not for the fainthearted. You need to | :19:33. | :19:39.
keep your wits about you and follow your guide's instructions. Because | :19:40. | :19:48.
of Hungary's geology you will find these caves all over the country. | :19:49. | :19:52.
This one is three hours from Budapest. It is a beautiful small | :19:53. | :19:59.
town close to a lake. I am told the caves here are special. This cave | :20:00. | :20:03.
system was discovered by accident in 1903. A local stonemason was digging | :20:04. | :20:08.
a well and he did not find water but he found this place. These caves are | :20:09. | :20:14.
15 metres below the ground so the temperature stays a balmy 15 degrees | :20:15. | :20:21.
Celsius. There is a rather unique way of seeing these ones. CALM | :20:22. | :20:33.
MUSIC. The boat ride lasts for about 80 minutes. I am told the water is | :20:34. | :20:43.
you are and I am not allowed to give my finger in because it could | :20:44. | :20:53.
contaminate the water. -- pure. -- dip my finger. | :20:54. | :21:02.
LAUGHTER. Wow. Oh... This is absolutely just... Once my boat trip | :21:03. | :21:10.
is over I had on foot to explore the rest of this cave system. -- head. | :21:11. | :21:20.
It was first opened to the public in 1912. The boat has been available | :21:21. | :21:28.
since 1938. We have had more than 150,000 visitors in just the last | :21:29. | :21:34.
year. I think this is the most popular place. What is rather | :21:35. | :21:41.
fascinating is that although many of these caves are millions of years | :21:42. | :21:45.
old most of them were discovered only recently and some have not even | :21:46. | :21:51.
been fully explored. Though I have enjoyed my time down here I will | :21:52. | :21:57.
leave that job the professionals. -- job to the. | :21:58. | :22:04.
Now I have finished my caving adventure in Hungary and that is all | :22:05. | :22:10.
we have time for on this week's show. Coming up next week... Henry | :22:11. | :22:17.
tries a new experience in Cambodia were tourists are lending a helping | :22:18. | :22:26.
hand to curb poaching. This is getting bumpier and bumpier. It is | :22:27. | :22:31.
like a bucking bronco. And don't forget you can catch up with us on | :22:32. | :22:36.
social media. Try to catch up with us next tour. But for now, from me, | :22:37. | :22:42.
and the rest of the team in Hungary, goodbye. THEME SONG PLAYS. | :22:43. | :23:04.
With plenty of dry, occasionally sunny weather this | :23:05. | :23:06.
First you have to banish memories of how warm it was last weekend. | :23:07. | :23:11.
Here is a comparison, last Sunday with this Sunday. | :23:12. | :23:15. |
