-Hi, I'm Matilda.

-Hi, I'm Matilda.

0:00:020:00:03

-ALL:

-I'm Matilda!

0:00:030:00:04

I'M Matilda!

0:00:040:00:06

Cooking is what I love best.

0:00:060:00:08

Oh, ho-ho!

0:00:100:00:11

She cooked, she scored.

0:00:110:00:14

'Hi, I'm Matilda.'

0:00:140:00:16

Goodbye, Jack.

0:00:160:00:18

I'm in charge of the kitchen in this house.

0:00:180:00:20

No, no, Tilly!

0:00:200:00:23

SQUEALING

0:00:230:00:24

Get out of my kitchen!

0:00:240:00:27

This is a story of me, my crazy summer...

0:00:270:00:31

Woo! Yay!

0:00:310:00:32

I'm on the red carpet and I'm about to meet the star of the movie.

0:00:320:00:35

..and my even crazier family.

0:00:370:00:39

-ALL:

-What?!

0:00:390:00:41

Tilly rules, OK?

0:00:410:00:43

HORN HONKS

0:00:430:00:44

I need some peace and quiet.

0:00:450:00:47

MUFFLED CHATTER

0:00:470:00:48

Eurgh!

0:00:480:00:50

I'm in LA and having a summer to remember.

0:00:530:00:56

I scored a goal!

0:00:560:00:57

Great cooking...

0:00:590:01:00

That is actually very good.

0:01:000:01:02

..writing my food blog...

0:01:020:01:04

-Aaaah!

-..and mad messing about.

0:01:040:01:07

Eurgh! She's going to lick me!

0:01:080:01:10

Sometimes our house is nothing but chaos.

0:01:100:01:13

Jack, no! Jack!

0:01:130:01:15

Jack! Out!

0:01:150:01:16

Do not go in the fridge.

0:01:160:01:18

But Mum is definitely the calming influence.

0:01:180:01:21

-Out of the kitchen.

-Why do I get to surrender?

-Tilly. Tilly.

0:01:210:01:24

Today the boys are away,

0:01:260:01:27

so Mum and us girls are going to have a surprise day out.

0:01:270:01:30

So, the big question is...

0:01:310:01:32

Today's food is all about what us girls like to eat.

0:01:380:01:40

Mum's a total green goddess.

0:01:420:01:44

She's really into healthy food and keeping fit.

0:01:440:01:47

A bit like me, really.

0:01:470:01:48

So I'm making a super-healthy beach picnic.

0:01:500:01:53

Rainbow veg with a spiced bean dip.

0:01:540:01:57

Lean, mean chicken.

0:01:570:01:59

And just for a little treat, my airy raspberry macarons.

0:01:590:02:04

I'm going to start with my rainbow veg and spiced bean dip.

0:02:040:02:08

She's going to love this dish.

0:02:080:02:09

It's fantastic for sharing.

0:02:090:02:11

You just choose what you like best and dip.

0:02:110:02:13

So good! First, chop up vegetables you like.

0:02:130:02:17

I've got some...

0:02:170:02:19

..mini peppers, which you can just bite into.

0:02:210:02:24

I've got...

0:02:240:02:25

..and of course...

0:02:290:02:31

'And last but not least -

0:02:330:02:36

'a Mexican turnip.'

0:02:360:02:38

It's delicious, kind of like cucumber but not.

0:02:380:02:42

It's...crunchy.

0:02:420:02:43

'Now for the dip.' Butter beans, some crushed garlic, only one clove.

0:02:440:02:49

'Next, my lemon juice trick.'

0:02:490:02:51

Hold your hand out like this, squeeze the lemon.

0:02:510:02:54

All that's left in your hand are all the pips.

0:02:540:02:57

'Season with salt, pepper and cumin

0:02:580:03:01

'and add a dollop of tahini paste.'

0:03:010:03:04

It's made out of sesame seeds.

0:03:040:03:05

I'm going to add roughly four tablespoons of olive oil.

0:03:070:03:10

One, two, three, four.

0:03:100:03:13

Smells so good!

0:03:150:03:17

Perfect.

0:03:170:03:19

'Scoop into a picnic tub.'

0:03:190:03:20

Dip my cucumber in it.

0:03:200:03:22

Mm. Mum is going to love that.

0:03:240:03:27

Must get a picture for my blog.

0:03:270:03:29

Check out some of my best recipes

0:03:310:03:33

and blog on the CBBC website.

0:03:330:03:35

Whilst us girls have got the house to ourselves,

0:03:390:03:41

I'm chilling and blogging.

0:03:410:03:43

And Holly and Megan are giving Mum a bit of TLC.

0:03:440:03:48

So, Mummy, what's your perfect day?

0:03:480:03:49

This is quite nice. Peace and quiet.

0:03:510:03:53

I do like paddle boarding.

0:03:530:03:55

It's so quiet out there.

0:03:550:03:58

Quite serene. That's my idea of just a nice, peaceful moment,

0:03:580:04:01

away from the chaos.

0:04:010:04:03

Chaos? What chaos?

0:04:050:04:07

-Snuggles!

-Oh, dear.

0:04:070:04:08

I just made my bed!

0:04:080:04:12

'Mum's always got her hands full looking after us crazy kids.

0:04:120:04:16

'But for her surprise day out, Holly's come up with a great idea.'

0:04:170:04:21

So, guys, why don't we...

0:04:210:04:23

see if we can do yoga whilst paddle boarding?

0:04:230:04:27

Wouldn't we just fall off?

0:04:270:04:29

Well, YOU would!

0:04:290:04:32

Sounds like the perfect combo of chilling out for Mum

0:04:320:04:35

and action for me.

0:04:350:04:37

So, to keep energy levels up, I'm making my lean machine chicken.

0:04:370:04:40

Super-tasty!

0:04:410:04:42

For this marinade, everything goes in at once.

0:04:440:04:47

Garlic, toasted pine nuts,

0:04:470:04:49

sun blush tomatoes, red chillies,

0:04:490:04:52

Parmesan and olive oil.

0:04:520:04:55

Now to marinade my chicken.

0:04:550:04:56

Here's my chicken. I've cut it into cubes.

0:04:580:05:01

Mix it all up so everything's coated.

0:05:030:05:06

'I'm going to leave it in the fridge to marinate,

0:05:060:05:08

'give my hands a good wash, then skewer the cubes

0:05:080:05:10

'ready for the beach barbecue. So easy!'

0:05:100:05:13

Om...

0:05:130:05:15

'I'm mega chilled today...

0:05:150:05:16

'..almost.'

0:05:180:05:19

That's not fair. You took my trainers and never gave them back.

0:05:190:05:22

I did. They're in your wardrobe.

0:05:220:05:23

You just put them there...

0:05:230:05:25

'Megan and Holly, on the other hand...'

0:05:250:05:27

KNOCK AT DOOR

0:05:270:05:28

-Clothes again?

-I asked her for one jumper and she said no.

0:05:290:05:33

Holly, I think out of the two things, you lend her one of them.

0:05:330:05:36

Jumper, please. Thank you.

0:05:360:05:38

OK. I'm going to go, but please don't let me hear any more arguing.

0:05:380:05:42

Mum's really going to need this chill-out treat and I've got

0:05:420:05:46

the perfect dessert for our beach picnic.

0:05:460:05:48

In the hot Californian sun, I love eating yummy light desserts.

0:05:480:05:52

So, when the temperature rises,

0:05:540:05:56

my super airy macarons really hit the mark.

0:05:560:05:59

'First, I need some egg whites.'

0:06:010:06:04

Perfect. 'Next, add cream of tartar and whisk.'

0:06:050:06:09

But don't do it too fast because you don't want it to over-whip.

0:06:110:06:14

'Then add sugar.'

0:06:150:06:16

Look, you can see them coming together.

0:06:170:06:19

It has got stiff peaks. As you can see, it's not falling back in.

0:06:210:06:25

You also know it's done if you hold it upside down over your head.

0:06:250:06:29

If nothing comes out, it's done.

0:06:290:06:32

I'm scared it's going to come.

0:06:350:06:37

DRUM ROLL

0:06:370:06:38

Ohhhhh!

0:06:390:06:41

Oh.

0:06:410:06:42

This is what would happen if you under-whisked.

0:06:430:06:46

Phew. 'Got away with that one.

0:06:470:06:49

'Sieve icing sugar and almond flour...'

0:06:490:06:51

So there's no lumps.

0:06:510:06:53

'Gently fold in the sugar and almond flour.'

0:06:530:06:56

So, this is the crucial bit because all the air will come out of

0:06:560:06:59

the egg whites. So this is what it should look like.

0:06:590:07:03

'Now to put my mixture in the piping bag.'

0:07:040:07:07

That's all in there.

0:07:070:07:08

Pipe your macarons onto grease-proof paper.

0:07:110:07:14

So, I'm going to leave these

0:07:140:07:15

macarons for ten minutes until they get nice and crunchy,

0:07:150:07:19

and then I'm going to bake them in a medium oven.

0:07:190:07:21

Isn't it macaroons?

0:07:210:07:23

-No!

-It's macaroon.

0:07:230:07:25

But these aren't the French ones. It's macarons.

0:07:250:07:28

Since when have you ever heard anyone say "macarons"?

0:07:280:07:31

-Well, now you have.

-Mummy...

0:07:310:07:33

What are you arguing about?

0:07:330:07:34

-Macaroons or macaron?

-Macaroon.

0:07:340:07:35

It depends what you're making!

0:07:350:07:37

They are two different things.

0:07:370:07:39

Macaroon, macaron.

0:07:390:07:40

Well, then that's the argument done.

0:07:400:07:42

No, but she doesn't get that.

0:07:420:07:43

-She thinks there's only one thing.

-Can I just say, you're both right?

0:07:430:07:46

-There's a macaron and a macaroon.

-Thank you! That's what I said!

0:07:460:07:49

MUMBLING

0:07:490:07:51

I need some peace and quiet.

0:07:510:07:52

MUFFLED CHATTER

0:07:520:07:54

Eurgh!

0:07:540:07:55

I licked it!

0:07:550:07:57

THEY SHOUT

0:07:580:08:00

-I'm going to go and find some peace.

-You...

0:08:000:08:03

SHRIEKING

0:08:030:08:04

My kitchen!

0:08:040:08:06

Megan is so annoying.

0:08:060:08:09

'But at least my macaroons...

0:08:090:08:11

'Oh! ..macarons are dried out enough to go into the oven.'

0:08:110:08:15

Super-sunny LA, the perfect place to be outdoors and active.

0:08:190:08:22

Yoga paddle boarding is one of the latest crazes,

0:08:220:08:26

and we're going to take Mum to try it out.

0:08:260:08:28

So, we'd better brush up on our yoga skills.

0:08:290:08:32

-Here it is. Shall we try?

-I can't even do that on land!

0:08:320:08:35

Let's try it off the water.

0:08:350:08:36

-No way!

-Let me see. Oh, we can do that!

0:08:380:08:40

-Let go of my hands.

-Aaaaaah!

0:08:400:08:43

'These might not strictly be the right moves,

0:08:430:08:46

'but at least we're limbering up before the real thing.'

0:08:460:08:48

Just time to bust a few more shapes before I check on my macarons.

0:08:530:08:57

Gotta shoot.

0:08:580:09:00

These macarons smell amazing.

0:09:010:09:03

These are done.

0:09:040:09:06

Crispy.

0:09:070:09:08

Perfect.

0:09:100:09:11

'Once they are cool,

0:09:130:09:15

'pair up your macarons and make lots of little sandwiches.

0:09:150:09:19

'You can choose any filling you like, but I love raspberry jam.'

0:09:190:09:23

This one had a little break in it.

0:09:260:09:28

Maybe I should taste it, just to check.

0:09:280:09:30

Mmmm!

0:09:340:09:36

Food blog time.

0:09:360:09:38

I'm going to set them out in a cool way.

0:09:380:09:40

Selfie with a T.

0:09:420:09:45

Let me know how your macarons turn out.

0:09:490:09:52

< Macaroons!

0:09:520:09:54

Picnic done...

0:09:540:09:56

the Ramsay girls are taking Mum downtown to the beach.

0:09:560:09:59

Fingers crossed she likes her surprise!

0:10:020:10:05

Yoga on a paddle board?

0:10:060:10:08

Seriously? Whose idea was this?

0:10:080:10:10

-Hi!

-How are you, guys?

0:10:100:10:13

'Our instructor for the day is Courtney.'

0:10:130:10:15

Now, can everybody swim at least?

0:10:150:10:17

-Yes.

-Yes.

-How many have paddled more than ten times?

0:10:170:10:20

MUM LAUGHS

0:10:200:10:22

You've got your work cut out for you.

0:10:220:10:25

Mum, Megan and I are afloat, but where's Holly?

0:10:280:10:31

The instructor told us there's loads of stingrays in there.

0:10:330:10:35

That's why I'm not getting in.

0:10:350:10:37

Scaredy-cat.

0:10:370:10:38

'Yoga paddle boarding is all about keeping your balance.'

0:10:400:10:43

This is so cool!

0:10:430:10:45

'So, before we start yoga-ing,

0:10:450:10:47

'we've got to get used to being on the board.'

0:10:470:10:50

Feel the burn!

0:10:510:10:52

'That was fun. Now, for our first yoga pose.'

0:10:550:10:58

Extend your arms long.

0:10:580:11:00

Child's pose.

0:11:000:11:02

'Bring it on. That was child's play. Get it?'

0:11:030:11:07

Lifting your back knee.

0:11:070:11:09

'Move number two is a hand and knee balance pose.'

0:11:090:11:12

'Taking one hand off the board is a little more tricky.'

0:11:140:11:17

And lift your hips back to find a downward dog.

0:11:180:11:22

Rumpole and Bruno would love this one.

0:11:220:11:24

While we've been wobbling on the water working up an appetite...

0:11:260:11:29

Here you go, Dad.

0:11:290:11:31

Thanks, darling.

0:11:310:11:32

'Dad's turned up to help Holly get Mum's picnic tea ready.'

0:11:320:11:36

I absolutely love barbecuing.

0:11:380:11:40

I love it, love it, love it. That marinade smells incredible.

0:11:400:11:44

'Meanwhile, out on the water...'

0:11:470:11:49

Inhaling your right leg high up into the sky...

0:11:490:11:51

'Yoga on moving water is a lot harder than it looks,

0:11:530:11:56

'but it's a great way to give your body an all-over muscle workout.

0:11:560:12:00

'Now for the standing poses.'

0:12:000:12:02

Inhale up to warrior 1.

0:12:020:12:05

'I'm in!

0:12:050:12:07

'Is Mum going to get her hair wet?

0:12:070:12:09

'Not this time.

0:12:110:12:12

'Megan's in!

0:12:130:12:15

'Mum's getting into this.

0:12:150:12:17

'She's determined to clinch warrior 1.'

0:12:170:12:20

Thank you for not letting me fall in yet.

0:12:200:12:23

'And she's up. Yo, warrior 1.

0:12:230:12:26

'Good shapes, Mum!

0:12:260:12:27

'Now it's the big one, the headstand challenge.'

0:12:290:12:32

SQUEALING

0:12:350:12:38

CHEERING

0:12:380:12:40

'I've done it!'

0:12:400:12:42

Woooooo!

0:12:420:12:43

'Well, I did do it.'

0:12:450:12:48

'That was so much fun.

0:12:530:12:55

'And Mum didn't even get her hair wet.'

0:12:550:12:58

Now I'm quite chilly, so I'm going to go and get a towel.

0:12:580:13:00

-OK, ladies.

-'Chilled out and ready for a beach barbecue.'

0:13:000:13:05

'And of course, Dad's getting all cheffy.'

0:13:080:13:11

You cannot resist, can you?

0:13:110:13:13

I like Dad's ideas.

0:13:130:13:15

Even on a beach,

0:13:150:13:17

we can increase the presentation.

0:13:170:13:19

The smell of this chicken is incredible.

0:13:190:13:22

Daddy, I have to give it to you, that is actually really yummy.

0:13:220:13:25

-Isn't it?

-Excuse me, I made it!

0:13:250:13:27

Excuse me, I cooked it!

0:13:270:13:28

Anyone can burn it, it's easy.

0:13:280:13:30

Thank you. It's like my dream lunch.

0:13:300:13:33

Perfect. A little bit of jicama.

0:13:330:13:36

Mmmm. That's good. What's for dessert, madam?

0:13:370:13:41

Well, it's my macarons, but...

0:13:410:13:43

-Macaroons.

-No.

-You are maca-wrong.

0:13:430:13:46

-What's it called?

-Macaroon.

0:13:470:13:49

-En francais, macaron.

-What is it called, Megan?

0:13:490:13:51

-Macaroon.

-Excuse me, your father is fluent in French!

0:13:510:13:53

I lived in France for three years.

0:13:530:13:55

-That's what I said. Macaroon.

-It's a macaron!

-You are maca-wrong.

-You ARE maca-wrong.

-You're maca-wrong!

0:13:580:14:01

Listen, this was my peaceful day and you're all ruining it.

0:14:010:14:05

-OK.

-We're supposed to be Zen and calm for yoga!

0:14:050:14:07

-Thank you.

-But we're not being Zen and calm, we're all shouting.

0:14:070:14:11

'Dad and I may wind each other up,

0:14:130:14:15

'but we always make friends to talk about food.'

0:14:150:14:18

Food, delicious. Jicama, we don't see much of that in the UK, do we?

0:14:190:14:22

I love it. So refreshing.

0:14:220:14:23

-And really healthy as well.

-And this is the chicken.

0:14:230:14:26

Wow. Amazing.

0:14:260:14:28

-These are my macarons.

-Macaroons.

0:14:280:14:30

-Let's leave it here.

-Let's leave it here. OK.

0:14:300:14:32

First of all, can I just say how consistent they are with the piping?

0:14:320:14:35

-Beautifully done.

-Dad, at the start of the day, I was kind of thinking,

0:14:350:14:40

what's best - a calm day or an action-packed adventure day?

0:14:400:14:43

I think Mum wanted a sort of Zen-ed out calm morning,

0:14:430:14:48

but you turned it on its head, literally.

0:14:480:14:50

Yoga on a paddle board.

0:14:500:14:52

Yaaaah!

0:14:520:14:53

-Fun.

-I mean, real good fun.

0:14:530:14:55

-GIRLS:

-Om...

0:14:580:15:00

-MUM:

-Who is that omming at this time of night?

0:15:000:15:02

Om!

0:15:020:15:04

Loving your Zen, girls,

0:15:040:15:05

but any more omming and I'm going to get all warrior 1 on you.

0:15:050:15:08

Ommmm-Mummy!

0:15:080:15:09

Only joking!

0:15:090:15:11

-LAUGHTER

-The Zen chef says, "Get to sleep!"

0:15:110:15:14

Matilda and the Ramsay Bunch try to answer an important family question: Is it better to have a relaxing day or an action-packed adventure? Tilly and sisters Megan and Holly are planning a special Ramsay girls' day out for mum Tana. But is it going to be a chilled-out zen-fest or an action-packed fun fiesta?

Tilly is getting to work on a super-healthy beach picnic for her green goddess mum - crunchy rainbow veg with a scrummy spiced bean dip, lean mean chicken and airy raspberry macarons. Or should that be macaroons?!

Before dad Gordon turns up to help cook a beach barbecue, the four Ramsay girls try out the latest LA fad, yoga paddleboarding. Fingers crossed it will be the break from the chaos that mum deserves - ommmmm!
