Sometimes our house is nothing but chaos.

But Mum is definitely the calming influence.
-Out of the kitchen.
-Why do I get to surrender?
Today the boys are away,
so Mum and us girls are going to have a surprise day out.
So, the big question is...
Today's food is all about what us girls like to eat.
Mum's a total green goddess.
She's really into healthy food and keeping fit.
A bit like me, really.
So I'm making a super-healthy beach picnic.
Rainbow veg with a spiced bean dip.
Lean, mean chicken.
And just for a little treat, my airy raspberry macarons.
I'm going to start with my rainbow veg and spiced bean dip.
She's going to love this dish.
It's fantastic for sharing.
You just choose what you like best and dip.
So good! First, chop up vegetables you like.
I've got some...
..mini peppers, which you can just bite into.
..and of course...
'And last but not least -
'a Mexican turnip.'
It's delicious, kind of like cucumber but not.
'Now for the dip.' Butter beans, some crushed garlic, only one clove.
'Next, my lemon juice trick.'
Hold your hand out like this, squeeze the lemon.
All that's left in your hand are all the pips.
'Season with salt, pepper and cumin
'and add a dollop of tahini paste.'
It's made out of sesame seeds.
I'm going to add roughly four tablespoons of olive oil.
One, two, three, four.
Smells so good!
'Scoop into a picnic tub.'
Dip my cucumber in it.
Mm. Mum is going to love that.

This is quite nice. Peace and quiet.
I do like paddle boarding.
It's so quiet out there.
Quite serene. That's my idea of just a nice, peaceful moment,
away from the chaos.
Chaos? What chaos?
I just made my bed!
'Mum's always got her hands full looking after us crazy kids.
'But for her surprise day out, Holly's come up with a great idea.'
So, guys, why don't we...
see if we can do yoga whilst paddle boarding?
Wouldn't we just fall off?
Well, YOU would!
Sounds like the perfect combo of chilling out for Mum
and action for me.
So, to keep energy levels up, I'm making my lean machine chicken.
For this marinade, everything goes in at once.
Garlic, toasted pine nuts,
sun blush tomatoes, red chillies,
Parmesan and olive oil.
Now to marinade my chicken.
Here's my chicken. I've cut it into cubes.
Mix it all up so everything's coated.
'I'm going to leave it in the fridge to marinate,
'give my hands a good wash, then skewer the cubes
'ready for the beach barbecue. So easy!'
'I'm mega chilled today...
That's not fair. You took my trainers and never gave them back.
I did. They're in your wardrobe.
You just put them there...
'Megan and Holly, on the other hand...'
KNOCK AT DOOR
-I asked her for one jumper and she said no.
Holly, I think out of the two things, you lend her one of them.
Jumper, please. Thank you.
OK. I'm going to go, but please don't let me hear any more arguing.
Mum's really going to need this chill-out treat and I've got
the perfect dessert for our beach picnic.
In the hot Californian sun, I love eating yummy light desserts.
So, when the temperature rises,
my super airy macarons really hit the mark.
'First, I need some egg whites.'
Perfect. 'Next, add cream of tartar and whisk.'
But don't do it too fast because you don't want it to over-whip.
'Then add sugar.'
Look, you can see them coming together.
It has got stiff peaks. As you can see, it's not falling back in.
You also know it's done if you hold it upside down over your head.
If nothing comes out, it's done.
I'm scared it's going to come.
This is what would happen if you under-whisked.
Phew. 'Got away with that one.
'Sieve icing sugar and almond flour...'
So there's no lumps.
'Gently fold in the sugar and almond flour.'
So, this is the crucial bit because all the air will come out of
the egg whites. So this is what it should look like.
'Now to put my mixture in the piping bag.'
That's all in there.
Pipe your macarons onto grease-proof paper.
So, I'm going to leave these
macarons for ten minutes until they get nice and crunchy,
and then I'm going to bake them in a medium oven.
Isn't it macaroons?
But these aren't the French ones. It's macarons.
Since when have you ever heard anyone say "macarons"?
-Well, now you have.
What are you arguing about?
-Macaroons or macaron?
It depends what you're making!
They are two different things.
Well, then that's the argument done.
No, but she doesn't get that.
-She thinks there's only one thing.
-Can I just say, you're both right?
-There's a macaron and a macaroon.
-Thank you! That's what I said!
I need some peace and quiet.
I licked it!
-I'm going to go and find some peace.
Megan is so annoying.
'But at least my macaroons...
'Oh! ..macarons are dried out enough to go into the oven.'
Super-sunny LA, the perfect place to be outdoors and active.
Yoga paddle boarding is one of the latest crazes,
and we're going to take Mum to try it out.
So, we'd better brush up on our yoga skills.
-Here it is. Shall we try?
-I can't even do that on land!
Let's try it off the water.
-Let me see. Oh, we can do that!
-Let go of my hands.
'These might not strictly be the right moves,
'but at least we're limbering up before the real thing.'
Just time to bust a few more shapes before I check on my macarons.
These macarons smell amazing.
These are done.
'Once they are cool,
'pair up your macarons and make lots of little sandwiches.
'You can choose any filling you like, but I love raspberry jam.'
This one had a little break in it.
Maybe I should taste it, just to check.

The instructor told us there's loads of stingrays in there.
That's why I'm not getting in.
'Yoga paddle boarding is all about keeping your balance.'
This is so cool!
'So, before we start yoga-ing,
'we've got to get used to being on the board.'
Feel the burn!
'That was fun. Now, for our first yoga pose.'
Extend your arms long.
'Bring it on. That was child's play. Get it?'
Lifting your back knee.
'Move number two is a hand and knee balance pose.'
'Taking one hand off the board is a little more tricky.'

I absolutely love barbecuing.
I love it, love it, love it. That marinade smells incredible.

'Yoga on moving water is a lot harder than it looks,
'but it's a great way to give your body an all-over muscle workout.

Now I'm quite chilly, so I'm going to go and get a towel.

The smell of this chicken is incredible.

I lived in France for three years.

Listen, this was my peaceful day and you're all ruining it.
-We're supposed to be Zen and calm for yoga!
-But we're not being Zen and calm, we're all shouting.
'Dad and I may wind each other up,
'but we always make friends to talk about food.'
Food, delicious. Jicama, we don't see much of that in the UK, do we?
I love it. So refreshing.

Before dad Gordon turns up to help cook a beach barbecue, the four Ramsay girls try out the latest LA fad, yoga paddleboarding. Fingers crossed it will be the break from the chaos that mum deserves - ommmmm!
