-No, but my mother has done it.

-What are you having as a starter?

-I don't know what we're having!

-We may be having salmon.

-Catrin prepares two starters

-and the first one is for a tart.

-A smoked salmon and dill tart

-is also on the menu.

-This is quite a classic recipe.

-We start with the pastry.

-There's parmesan cheese

-in the pastry.

-It's important to use plain flour

-for your pastry...

-..as opposed to self-raising flour

-or strong flour.

-You need 110g of plain flour.

-The 50g of butter needs to be

-at room temperature.

-Don't overwork the pastry.

-Add air to the mixture.

-Next, we need to add

-the parmesan cheese.

-There's 50g of grated parmesan.

-I've also got some dried mustard.

-You can buy the cheese

-grated or not.

-We need to bind this

-with a touch of water.

-Every flour responds differently

-to water.

-Start with a few tablespoons

-of water.

-This helps the mixture

-to come together.

-The pastry is left to chill in

-the fridge for about 30 minutes.

-We don't want a wet mixture.

-If it's too wet,

-it will be difficult to roll...

-..and it will result in a tough

-pastry after it's cooked.

-I've got some pastry that has been

-chilled and then cooked.

-It was baked at gas mark 5.

-We've also got some smoked salmon.

-We tend to get our fish

-from the local fishmongers.

-But I tend to only eat fish

-from a tin!

-You need some eggs

-and creme fraiche.

-There's some dill too.

-Half of the salmon

-is used to line the pastry.

-The creme fraiche will cut

-through the richness of the salmon.

-This is a light dish.

-It's ideal to have with a salad too.

-This is baked at 180 degrees

-Celsius...

-..for about 35 to 40 minutes.

-You could prepare this

-a few days beforehand.

-I agree that he won't be released

-for at least 15 to 20 years.

-for prisoners in this country.

-Some criminals are able to come home

-Around 100 criminals

-who are serving life sentences...

-from jail at Christmas...

-reintegrate into society.

-They've been sentenced to jail.

-These are parents to families too.

-It's different for prisoners.

-This is a starter for vegetarians.

-This is a recipe for bruschetta

-with goat's cheese and beetroot.

-This is very simple.

-I'm going to make a chutney.

-I haven't made chutney.

-He eats salmon from a tin!

-Start with 8oz of grated onions.

-There's also 8oz of grated

-cooking apples.

-The apples are more sour.

-There's going to be

-a lot of sugar...

-..so these apples are best.

-You could prepare your own beetroot.

-Some of them are already cooked.

-Add a pound and a half to the

-mixture.

-Next, we've got some spiced pickling

-vinegar.

-Add some dried ginger,

-mixed spice and some salt.

-This is brought to the boil and then

-left to simmer.

-This is a great to be served with

-cheese or meat.

-This would make a great gift

-for Christmas.

-Make sure you've sterilized the jar

-before adding the chutney.

-The chutney would not last as long.

-Sterilize it by washing it

-in hot water...

-..and left to air dry

-in a warm oven.

-The chutney is added to

-the warm jar.

-It can be stored for many months

-in the jar.

-Add 8oz of sugar to the pan.

-Beetroot is quite sweet but there's

-also sharp vinegar too.

-After 20 minutes...

-..add the remainder of the

-beetroot...

-..to add more texture.

-This is very easy to make.

-Make sure you use fresh vegetables.

-Next, we have the bruschetta.

-You will have made the chutney

-beforehand...

-..you can slice some bread.
