-You've had the challenge of

-preparing the Prynhawn Da turkey.

-The turkey made the bang

-that you heard earlier.

-I think the stuffing makes

-a real difference to a turkey.

-I've got one of my

-favourite recipes.

-It's for a lemon

-and herb stuffing...

-..but it's an adaptation

-of that recipe.

-The pan contains pancetta.

-It releases a lot of oil

-so you don't need any extra oil.

-Add some finely chopped onions.

-I made a stuffing with sausage meat

-and chestnuts.

-Turkeys don't have a lot of flavour.

-Its flavour depends on its quality.

-The turkey I have in the studio

-was reared in Pembrokeshire.

-We've got some breadcrumbs...

-..some thyme, sage and parsley.

-These are all fresh herbs.

-I grow thyme and sage myself.

-Use half the quantity of herbs

-if you're using dried herbs.

-I've also got clementine,

-orange and lemon zest.

-Add a touch of fresh grated nutmeg.

-There's also the chestnuts.

-These have been baked.

-You can buy them already peeled.

-I always have to peel the chestnuts

-at Christmas.

-It's not an easy job!

-No, and I've given up

-trying to peel them!

-The onions have started to soften.

-I'm going to add some finely chopped

-turkey liver.

-You can get all the giblets

-and innards of the turkey...

-..when you buy a fresh one.

-Add the onion mixture

-to the breadcrumbs.

-I'd usually allow it to cool...

-..as it's easier to mix.

-You can make this beforehand

-and freeze it.

-Add a large beaten egg

-to help it bind.

-Let's turn to the turkey.

-I want to show you where to stuff

-the turkey.

-Season it with salt.

-Add some sage, chopped orange...

-..and also some bay leaves.

-There's also some parsley stalks.

-These will add flavour to the

-turkey...

-..and also help with moist meat/

-..and also help with moist meat.

-Release the skin around the breast.

-This is where you would

-put the stuffing.

-It goes between the meat

-and the skin.

-It helps for the meat

-to retain its moisture.

-This is baked at gas mark 5...

-..for 20 minutes per kilo

-and an extra 90 minutes.

-Place the turkey on a rack

-and on a baking tray.

-You could line the tray with onions.

-This turkey should feed

-about 12 people.

-Cover the turkey with butter.

-Pour a touch of water into the pan.

-The water helps to create steam.

-It's time to return to Nerys

-for some more festive cuisine.

-A cranberry and clementine sauce

-is on the menu.

-We start with some spices.

-There's cianmon, cloves

-and star anise.

-I've placed them in a saucepan

-with 100 ml of water.

-Allow them to simmer.

-Add 300g of fresh

-or frozen cranberries.

-This is a simple recipe

-that can be prepared beforehand.

-It's tastier

-when you make it yourself.

-Cranberries can be sour

-so I add 100g of Demerara sugar.

-You can store it

-in a sealed jam jar.

-It's different to jam

-because there's less sugar in it.

-I finished a cranberry sauce

-I made last year the other week.

-You can also add apples, onions

-or shallots.

-I add clementines

-and the zest of the fruit.

-They are quite juicy

-at this time of year.

-This would add a lovely flavour,

-Bring it to the boil.

-You can also pour in some alcohol.

-I've got a special orange liqueur

-that was made in Llandysul.

-Pour a drop into the sauce.

-I add the liqueur at the end

-of the cooking process.

-You don't have to add alcohol

-but it does add to the taste.

-You can liquidize the cranberries

-for children.

-The cranberries will start to pop

-in the pan as they are cooked.

-I'm also preparing

-some pigs in blankets.

-I use a quality sausage.

-Pinch the middle of the sausages.

-These split the sausages in two

-to make them smaller.

-There's 90% of meat

-in these sausages.

-Wrap them in some streaky bacon

-or pancetta.

-I've got a cocktail stick and

-a bay leaf to wrap around it.
