-Many people will not have turkey on

-their tables this time next week.

-This is a tender fillet of beef.

-How much did that cost?

-It's about a kilo in weight

-and cost around 40.

-I would also serve this beef

-with a bird.

-I've covered the meat

-with black pepper and sealed it.

-I've also left it to chill.

-I've got this Parma ham here.

-They come in plastic sheets

-that you peel off.

-You don't want streaky bacon as you

-don't want too much fat.

-I'll show you how to make

-a Welsh beef Wellington.

-Wellington in the beef Wellington

-refers to the puff pastry...

-..and was a favourite

-by the Duke of Wellington.

-Beef won't need as much time

-in the oven as a turkey.

-I've browned the fillet already

-and baked it for ten minutes.

-I've finely sliced some mushrooms.

-Cook the fillet in some butter.

-You can opt for pate instead

-of mushrooms too.

-We need a puff pastry topping now.

-I've rolled out some ready-made

-puff pastry.

-Glaze it with a beaten egg.

-It's easier to handle

-when its chilled.

-Roll the pastry around the meat.

-You need to roll it like a parcel.

-We have tips on how to wrap

-Christmas gifts later.

-Create some diamond shapes

-on the top of the pastry.

-Bake this for 30 minutes.

-I like my beef

-to be pink and tender.

-to be well done?

-You can alter the baking times

-Leave it stand for ten minutes

-but you can sample it now.

-wrapping Christmas presents...

-This is a cheap way

-of wrapping a bottle of wine.

-Wrap the bottle

-in colourful newspaper...

-..and cut the end into strips.

-Tie a red ribbon...

-..around the neck of the bottle.

-Use a paper knife

-to curl the strips one at a time.

-And that's the bottle

-If you're giving jam or sweets,

-you'll need a simple gift bag.

-and place a doily over the top.

-Feed a ribbon through the holes

-We liked six of the final ten.

-As you compose a song or a carol...

-I'm using more puff pastry.

-I'll show you how to make

-a pork garland sausage roll slice.

-There's typical sausage meat.

-I got it from my butcher.

-You can serve this over Christmas.

-It's great for a party.

-I've got about 450g of pork mince.

-There's also some dried cranberries.

-It's also been seasoned with salt

-and pepper.

-I've also added some dry stuffing.

-It also absorbs some of the fat

-that comes out of the pastry.

-Brush the pastry with an egg wash.

-Fold over the pastry.

-Everyone is wearing

-It's too hot to wear

-..so I've gone for some glitter!

-Next, I want to form a long

-Do this on your baking tray.
