-until Christmas.

-We've still got a while

-until the big day...

-..but it's time to prepare

-the Christmas cake.

-Dan joins us in the kitchen.

-Welcome to the programme.

-I'll show you how to make

-individual Christmas cakes.

-Prepare them now

-or make them at the last minute.

-Why is it so important

-to make the Christmas cake now?

-The aim is for the cakes to soak up

-all the flavours.

-You want it to mature in taste.

-Spoon in 150g

-of dark muscovado sugar.

-You need 150g of unsalted butter.

-Mix them together.

-Beat four whole eggs

-and add to the mixture.

-I've doubled the recipe.

-I'll make eight

-Christmas cakes here.

-You can give these cakes as gifts.

-Sieve in 150g of self-raising flour.

-Fold the mixture together.

-You need some elbow grease

-to mix it.

-You can also use the

-food processor for this.

-You need 100g of currants

-and 100g of sultanas.

-Take 50g of glace cherries.

-Use the zest and juice

-of one orange.

-Warm the orange juice in some brandy

-for about a minute.

-You don't want to over-boil it.

-Add a teaspoon of mixed spice.

-Fold the mixture again.

-Drizzle in a tablespoon of treacle.

-Add a tablespoon of golden syrup.

-It binds everything together.

-You want everything to mix well.

-The ingredients will absorb

-the flavours.

-Add some greaseproof paper

-in a ring.

-The base is wrapped in cling film.

-It prevents any of the mixture

-from leaking out.

-You want to pour the mixture

-into the ring.

-The mixture will rise in the ring.

-Cut off the top of the cakes

-ready to decorate them.

-You need 150g of marzipan.

-You can use chocolate fondant

-instead of marzipan.

-To decorate, you need

-two tablespoons of apricot jam.

-Use the same size ring

-to cut out the marzipan.

-Add a layer of apricot jam.

-Brush the marzipan with the jam

-to help it stick to the cake.

-You can tie a ribbon around

-the cakes or some spray.

-There's also some white chocolate

-on the top of the cakes.

-one-day folk festivals...

-..that is held in Wales.

-There's folk dancing, recitals

-and singing all day and night.

-The highlight of the year

-for the Cerdd Dant Society...

-..is the Cerdd Dant Festival

-that is held every November.

-Heledd Cynwal and Iwan Griffiths

-will partake...

-..in the presenting

-of the festival.

-We expect several hundred people

-on Saturday.

-We will be in our thousands

-when we welcome all the choirs.

-Thousands will be competing.

-The closing date for competing

-so it's mainly word of mouth.

-If there isn't a group in your area,

-why not form one yourself?

-It's good to get together

-and socialize.

-This is a recipe for a raspberry

-and white chocolate cheesecake.

-This is an unbaked cheesecake.

-It will set in the fridge.

-Start with some unflavoured

-soft cheese.

-Whip it to loosen it.

-Add some icing sugar.

-It helps to sweeten the soft cheese.

-It looks like a lot...

-..but we're adding some

-sour raspberries later.

-Next, we add some raspberry coulis.

-You can buy it or make it yourself.

-It's easy to make by boiling

-some raspberries and icing sugar...

-..and sieving it.

-This is one of

-my favourite flavours.

-I haven't added any cream yet.

-You don't want too much cream...

-..as it stops the mixture

-from setting.

-A lot of people only eat

-a Christmas cake once...

-..so this is a good alternative.

-The base is made

-from Digestive biscuits.

-I break them up with my hand...

-..to give more texture.

-Add some white chocolate

-to the base.

-I like chunks of white chocolate.

-It's very rustic.

-You can chop up the white chocolate

-or just break it.

-I like using salted butter...

-..to mix into the base.

-It will help the mixture to set.

-Press the base with

-the back of the spoon...

-..to see if it will set.

-You can make individual cheesecakes

-or a large one.

-Press the base down.

-The filling goes on top.

-You can use a piping bag.

-Another option is a spoon.

-This is piped into the bowl or ring.

-It's fun to squeeze this in.

-Take the back of a warm spoon

-to get it level.

-You don't want any air pockets

-in your cheesecake.

-This is placed in the fridge to set.

-It only takes about 30 minutes

-to set.

-Warm the edge of the ring...

-..to help to release the cheesecake.

-This is served with the coulis.

-It's a great way to decorate it.

-You can also have a disc

-of white chocolate...

-..to go on top.

-There's also some raspberries.
